Christmas morning I awoke with an urge to bake. There was so much food leftover from the Christmas Eve festivities, but I had some extra ripe bananas begging to be used. I combined several recipes from the Internet to make these…
Y’all, these were seriously the best muffins I have ever made – the perfect blend of flavors.
½ Turbinado sugar
1 egg white
1 tsp vanilla
1 ½ cups oat flour (I pulsed 2 cups old fashioned oats in my food processor)
1 tsp baking powder
½ tsp baking soda
½ cup chocolate chips
½ cup chopped pecans
Cream first 5 ingredients until creamy. Stir together oat flour, baking powder, & baking soda. Slowly add dry ingredients to banana mixture stirring to combine. Stir in chocolate chips and pecans. Bake at 350 degrees 18 – 20 minutes. Yield: 15 muffins. So good!
Before going over to spend the day with my family, Chris and I exchanged presents. I scored with some fun kitchen accessories.
We also got each other shoes…mine were a bit more pricey 🙂
But then, the big surprise was an early birthday gift from my family since I won’t be here on my actual b-day…are you prepared for the blinding array of deliciousness pictured below?
Note to self: When your family asks what you want for your birthday, maybe you shouldn’t tell all of them to get you the same thing. Ha – I think they purchased Naturally Nutty ‘s entire stock, and I could not be more grateful. Love my fam! I had never tried the Chocolate Butter Toffee Peanut Butter, and let me tell you it is heaven on a spoon…OK, OK, truth be told, heaven on my finger 🙂 You guys know I love my crunchy Barney Butter, but I think Naturally Nutty makes some the best flavored nut butters out there!
