No Soup For You…

I woke up this morning freezing.  Cold temps at nighttime are a must as they make for some good cuddling under the down comforter, but when it comes time to get out of bed…walking across those hardwood floors with bare feet is torture.  Brrrrr!  Still cold after my morning cup of coffee, I searched until I found this little gem in our cabinet…

I threw the entire box in a pot and heated it on the stove-top with some pumpkin pie spice.   What to have on the side?  Well, I couldn’t very well eat soup without crackers!  I topped half of my Kashi TLC’s with melted string cheese (great idea Sammie!) and the other half with…almond butter. :)  This is the first meal of the Breakfast Experiment that I have not figured out calories, etc. prior to preparing. Ideally, I like my AM meal to consist of 400-500 calories, but this morning, I didn’t care – simply went with what I wanted.  Hooray, Heather eats intuitively.  I of course did the stats after inhaling this delicious meal.  Calories: 486 calories (good job!), 21 grams of fat (37%), 61 grams of carbs (49%), and 17 grams protein (14%).  It was a little low in protein, but the fat is what seems to keep me going until lunch.  Don’t fear the fat people!

I so enjoyed my orange breakfast, that I kept the Vitamin A/C theme going throughout the day:

roasted veggies with hummus and butternut squash fries.  There is melted cheese hidden under the veggies.  Yum...cheese.

When leaving for work this afternoon, I decided I needed a little pick-me-up.  In an attempt to ween myself off dairy, I’m trying to find alternatives to my half and half obsession.  Enter Eating Bender’s Coffee Cocoa.  I used Jenn’s formula but opted for Hazelnut Silk Creamer (thanks for the recommendation AutumnTao!).  I mean, can you really go wrong with coffee, hazelnut and chocolate?  No! I thoroughly enjoyed my mug of liquid Nutella but totally shot the non-dairy goal to pieces with some whipped cream…Oops.  Oh, and I guess the hot chocolate mix contained powdered milk of some sort.  Double oops.  Once again, I proved that I’d make a horrible vegan. :)

Some exciting news to share…the Yoga Fairy paid me a visit.  Details tomorrow.

    Soup for breakfast? Great idea for the chilly winter, I support it! Especially when it comes paired with cheesy and peanut buttery crackers.

    I’m loving all of the hummus and veggies going on in this post. And the TEMPEH which I tried my first bite of EVER today and LOVED.

    That coffee cocoa looks perfect. I need to try out some of this soy creamer stuff. I’ve been drinking my coffee black a lot lately and although I actually enjoy it this way, I enjoy it MUCH more when it’s nice and sweet :)

    Soup and crackers for breakfast?!?! You can totally pull that off. I have that soup in my cupboard, so I’m glad to hear good things about it.

    I LOVE the broccoli/hummus/bbq/cheese/butternut fries bowl. It’s like a ultra healthy version of those nasty KFC bowls with the gravy and cheese on top!

    Great day of eats, BUT NO ALMOND BUTTER!!!! What gives?!

    I love that you can eat soup for breakfast. I have a hard time thinking anything sounds soon after I wake up that isn’t cereal or other “standrd” breakfast items. Hurray for you! I’m excited to hear details about the yoga fairy!

    Liquid Nutella?! Umm, that has got to be the best-sounding thing I’ve ever heard of!

    P.S. Thank goodness for Soyatoo vegan whipped cream, because before it was invented, we vegans were missing out on the greatness that is whipped cream in a can!

    I love your breakfast!! That soup is fantastic. The fact that you had soup for breakfast is proof that you are one cool chick – I love how you mix it up! Some day I’m going to try dinner for breakfast and breakfast for dinner.

    Hey Leigh…thanks for lurking. :)

    For cooking beets, pull off the greens, and trim the root leaving about an inch. Then wash the beets gently, leaving skin intact. In a large pot, bring enough water to cover the beets to a boil with a pinch of salt. Boil the beets covered anywhere from 30 minutes to an hour as they all vary in size. You will be able to pierce the beet with a knife when it’s done. I recommend wearing dish washing gloves when removing the skins (unless you want pink hands). The skins should slip right off. The beets will keep in the fridge if you don’t want to eat them right away. Enjoy! Homemade beets are so much better than canned.

    Hey Lee! I do like vanilla Silk, but I have to watch my soy intake as my stomach doesn’t always agree with it. I was a vegetarian for 5 years, and ate soy all the time. I think I simply built up an intolerance for it, and so I started eating meat again. That was 3 years ago, and I find I can eat it more often now. So, I’m slowly bringing it back. I was buying almond milk for a while, but I’m loving the vanilla hemp milk these days by Living Harvest. Yum!

    I just wanted to update you on my YOGA! I took a 75 minute Vinyasa class at the studio where I got my 5 class pass. It was PERFECT and just what I was craving!!! They played amazing music (i.e. Coldplay) and everyone there was so cool … they all know each other as the “Vinyasa crew” and I was introduced to everyone! It was HARD and I was sweating and it was awesome to feel so strong!!!

    The teacher was amazing and talked about how it’s awesome to feel physical strength and flexibility from yoga, but the mental strength and flexibility that you gain is even better. Learning to breathe through the struggles is what is important!!

    Now I just need to figure out how to fund this expensive yoga addiction :)

    Amanda, thanks for you comment…such exciting news! I’m like you – I love a Vinyasa class with good music. Coldplay, that would be perfect, and the words your teacher spoke are so true. I hope you find the funds so that you can become part of the “crew”. These yoga addictions do get expensive! I’ve even looked into doing a trade for classes. I know one studio I attend lets you work the desk or distribute their promotional materials around town in exchange for classes. Unfortunately, my studio had already filled all the spots. I really hope you get back to this awesome class! Best of luck. Please keep me posted.

    mmm love that soup so freaking good! All of your eats look awesome- glad your doing some intuitive eating! I need to work on mine.

    Hey- I had question for you-Josh has been having issues with his neck and lower back, he has always lived with a minor scoliosis. Is there a specific kind of massage or therapy you think he should look into getting?

    Hi Erica. I definitely think Josh could benefit from some massage therapy. A curve in the spine can really effect the muscles in unpleasant ways as it retrains them to work differently then they should. I would encourage him to work with a chiropractor and a GOOD deep tissue massage therapist. There is only so much you can do as he will always have scoliosis, but loosening the tight muscles and getting regular adjustments could make a world of difference. I’ve seen it happen. It may require a lot of appointments at first, but I promise Josh would feel better! I hope this helps.
