The most filling breakfast ever:
Heart Healthy Oats
I used to do the stove-top oats thing with pumpkin, cottage cheese, and various toppings. I used a 1/3 cup oats, and although all my creations tasted good, I was ALWAYS left feeling hungry about 2 hours later. I’ve noticed several bloggers using Quaker Oats’ recommended Heart Healthy 3/4 cup serving (Jenna, Polly, and Maggie). So, although my oatmeal custard worked well, I wanted to try this version of oatmeal. I followed Maggie’s recipe using chocolate soy milk and instead of honey, I used 2 whopping spoonfuls of nut butter. So good – my own bowl of chocolate peanut butter cup heaven! Y’all, I seriously did not want to even look at food until 2 PM, 7 hours after eating this bowl. The stats: 438 calories, 21 grams of fat (40%), 54 grams of carbs (46%), and 16 grams of protein (14%). I will eat this often as I do not like being hungry all morning after eating what feels like a substantial breakfast. Moral of the story: keep the bowl simple. Simply use more oats and add a good bit of fat. I promise no hunger pains for hours!
Another fun fact I discovered today…I think my soy intolerance is gone. I was a vegetarian for 5 years, but started eating meat again when I developed an intolerance for soy. Fermented products like tempeh and miso never seemed to bother me, but otherwise I stayed away from Mr. Soybean. That was 3 years ago, and lately, I’ve been incorporating soy back into my life in small amounts with no stomach distress. So, tonight, I finally made Gliding Calm tofu! Thank you Gliding Calm as this recipe was so easy and tasted amazing!
Roasted veggies with tofu and Trader Joe's BBQ sauce
A number of bloggers have discussed significant others and healthy eating. My husband eats well, but prefers his meat. Both of our plates usually start out with a large portion of vegetables, and although I do eat meat, I’ve been eating less and less these days. Therefore, my plate o’ veggies gets topped with eggs or white meat (and tofu now), while Chris usually tops his with a burger or salmon. I like to think we eat the same meals with different toppings.

Now for my exciting news…My sweet in-laws…uh, I mean the Yoga Fairy has paid me a visit. I am to join the yoga studio of my choice AND keep my gym membership. I AM SO GRATEFUL & EXCITED. Thank you Yoga Fairy! I’ve already signed up for a yoga clinic at Hot Yoga Nashville for the month of March. We will meet M-F from 6 AM – 7 Am every morning and then for 2 hours every Saturday. I cannot wait as I know I will see so many changes in my body throughout the month. (Look out Dragonfly, huh Polly?!?) As far as February goes, I’m holding off until my hamstring feels better. I did not work out at all today but opted for a 2.5 hour nap instead.
Tomorrow, I’m going to do an upper body workout, and get one more leg massage on Monday. So, hopefully this hammie will be up for some yoga next week.
In honor of Erin & Andrea over at Care to Eat (love them!), I’m going vegan tomorrow…not just for breakfast either. I’m talking 24 hours. If these girls can do it for month, I can do it for one day. My fridge is Fageless. I ate enough cottage cheese today to last me a month. I’ve got my raw bacon in the dehydrator and some vegan cheddar cheese just waiting to be melted. Wish me luck!

Oh God – I inspired somebody to do something good, as opposed to like, taking multiple tequila shots? I’m getting old
the vegan mozz. tastes like nothing, so I’ll take the cheddar any day. Can’t wait to see how your day goes tomorrow!
YOU CAN DO IT! Vegan cheddar cheese tastes a little like fake, liquid, nacho cheese, but I kind of like that
Awesome! I’m so glad you liked the oats, and GOOD LUCK with your vegan day. I went vegetarian a little over a month ago (I have a history of being an on/off veggie though) and I think it’s going to stick this time. I would love to go vegan eventually but at the moment I’m too much in love with yogurt. Bobby likes his meats, but he very rarely eats red meat and he actually loves fake meats a lot more than I do. And hooray for the yoga fairy! I want one
I love filling oats, especially on school days when it’s harded to get good snacks. That bowl looks so perfect and simple, yum!
Delicious tofu, I need to make that recipe soon.
Good Luck tomorrow on your vegan day! I know you can do it =)
Heather-
That is great news about the yoga gift! I used to have that same problem with meals not keeping me full and have used your same suggestion about adding fats and it really works. I use PB also, but for lunch/dinner meals I use a lot of avocado, or homemade olive oil/vinegar dressings and it also does the trick. Hope your leg gets feeling better!
Yay you!
Way to take that serving size and blow it up!!! And I was SOOOOOOOO relieved to see ta big hefty serving of nut butter. Order has been restored.
What would we do without our condiments?! I swear your BBQ sauce is starting to catch up to your ketchup! (I always tell Gracie to “catch up” in the store and she’s now started saying, “Mustard!” in reply.)
Good luck on the vegan day, on Superbowl Sunday no less! That takes chutzpah girl!
I love your IL’s. Want to trade???
yum, i might need to make that bowl of oats tomorrow! i just ate some oats dry. is that weird? i wonder if you still get the heart healthy benefits. anyways, good luck with the vegan sunday!! i’m a little freaked out by the raw bacon…
horray for the yoga fairy
such a wonderful gift!
WOO HOO for the yoga fairy …. I guess I need to drop some massive hints to my loved ones. Too bad the bday isn’t til April haha
That is so nice of your in-laws to do that for you! I’m happy for you that you get to enjoy both things now!
I really need to dive into the oatmeal world. Every bowl looks so good!
Good luck with your 24 hour veganism! I told my parents once I was going to be a vegetarian. Then they ordered pizza that night and I was back to a pepperoni loving adolescent.
I know you have way more willpower than my 13 year old self did!
oh wow what sweet yoga fairies you have there!
thats such an awesome gift for you!!!
and wow, cool about the vegan day. good luck!!
soooo sweet of the Yoga Fairy! I am so happy for you, getting the best of both worlds!!! I am off to a Vinyasa Flow class this morning (my 1st, after practicing “Hot Yoga” for a while!) Love your eats. I have yet to try the Gliding Calm tofu rub, but I love me some tempeh & glad you’ve still been able to have it! That’s how it works in my family- I’m the only veg, but we basically eat the same thing, besides the “meat!” Enjoy your Sunday!
HOLY YUM!!
Good luck with your veg day!!
Congrats on signing up for yoga! I’m so excited for you..Slightly jealous, but excited =)
I’m munchin’ on my heart healthy portion of oats right now, with Barney Butter of course…yum!
Hoooray for the yoga fairy!!!!!
Good Luck with vegan day!
i need to do that with my oats..i normally use only a 1/3 c and add nuts and dried fruit and bananas…but i’m always hungry about 3 hrs later…i haven’t done it yet because eating a big breakfast has always made me nervous for some reason…but i shall try! you have inspired!
and yay for no more soy intolerance! wonderful to hear! cause gliding calm tofu rocks!
I love that “brick” bowl of oatmeal. Sometimes the simplest bowls of oatmeal truly are the best, and the most delicious! I never feel quite full after a bowl of oats so I guess going BIG is the way to do it!
That’s SO awesome and sweet of your in-laws to offer you the yoga studio membership! YAY to being able to keep both. Now you definitely have the best of both worlds. Sweeeet.
And BEST of luck on the vegan day. I want to try that someday. First I think I’m going to have to do something easier like a vegetarian week. I imagine I would have no problems with that since I don’t eat much meat anyway but actually not allowing myself the option of meat might be harder than I think… I think it’d be worth a try anyway though. THEN maybe I’ll try the vegan thing… maybe. But I sure do love my dairy.
that’s awesome that the yoga fairy hooked you up!
and HOORAY for gc’s incredible tofu- it’s one of my favorite.
i can’t wait to see that raw bacon and hear all about vegan day!
happy sunday <3
I totally did the same oat experiment this morning, and wow, it works! So exciting about yoga, and good luck with your vegan day!
Wow, that looks like such a great breakfast – amazing!
That’s cute!
I’m excited to see what you eat for vegan day! It’s great that you have access to a dehydrator to make all those crazy dehydrated items. I want one!
Rob is the same way with dinner. He just drops a slab of meat on top of whatever I serve him. He also makes his own dinners a couple nights a week. I like how you call it “toppings” in your household.
I covet the oatmeal brick! Will have to try.
Love the oats! I need to start adding but butter to mine! I can’t believe it held you over for 7 hours! That’s awesome! Congrats and being able to keep your gym membership and join the yoga studio! Very exciting! Good luck with the veganism!
sounds like a delicious brick in your belly!! haha
speaking of restaurants in nashville, i remember i went down there for a week on a house-building mission trip for my church and we went to this one restaurant “wild horse saloon”. it was INCREDIBLE. maybe you know of the place?
good luck with your “vegan day” as well! i’m going to guess that your next post will be filled with fun & creative food combinations!
Congrats on the yoga fairy!!! How exciting!
Those oats look delish, and I’m a huge fan of any breakfast that will stick with me for 7 hours!!! I’ve only done rolled oats on the stovetop, never steel cut, but I’m thinking its time to give them a try.
Can’t wait to hear about your “vegan day”!
This looks and sounds really good. I am definitely going to add chocolate soy milk to my grocery list… Thanks for sharing! =)
wow im’ going to start adding one more scoop of my almond butter and see how that fills me up. usually after 3 hrs im ready for a snack and i want my oats to last me longer than that. thanks for the tip! and WOW that yoga fairy is AMAZING! that is so exciting heather! i hope you have such a wonderful time at the yoga studio and can’t wait to hear abotu all your progress and the classes you take!
The oats look delicious. I usually 1/2 cup and with milk, baana and nut butter it keeps me full for 4+ hours. But I am a shorty.
I am so happy the yoga fairy came to you! What a deserving person.
Good luck on vegan day!
