The goal this morning was to be at the gym by 6 AM for some treadmill walking or mindless bike spinning.  I find even when I don’t have morning clients, I love to exercise early.  If the workout gets done first thing, I am so productive throughout the rest of my day.  So, that being said, I rolled out of bed around 6:45 AM and made a huge pot of coffee.  The debate then began: breakfast or gym?  Hunger won, and I put some butternut squash fries in the oven while catching up on email.

Can you believe this whole plate clocked in at under 500 calories?!?  Seemed like a glorious amount of food to me.  I used egg whites, spinach, and the last of my Vegan Gourmet Cheddar cheese for the omelet and baked an entire squash. The stats: 467 calories, 11 grams of fat (21%), 72 grams of carbs (57%), and 29 grams of protein (23%).  This brekkie was a bit higher in carbs, and contained NO almond butter.  I know, what was I thinking?  My plate was beyond delicious, but I’m embarrassed to say I still felt hungry after eating all this food.  So, I poured myself a 2nd mug of coffee.  Not good since my mugs are 16 ounces.  I should have just gone for a spoonful of the good stuff, aka almond butter.

Out of all the breakfasts I’ve had over the past few weeks, nothing has left me more satisfied than a 3/4 cup serving of oat bran with at least 2 TBSP of almond butter…nothing.  Oat bran, we’ll be meeting again soon.

Stove-top chocolate Jello-O pudding with cool whip was one of my all-time favorites desserts as a kid.  This is my grown-up healthy version, and it did not disappoint! I followed Chocolate Covered Vegan’s recipe for chocolate mousse here, but added 1/2 cup cooked barley and 2 packets of Stevia. Instead of cool whip, I added a dollop of peanut butter.  This was so satisfying after my salad at lunch, but next time, I will add more cocoa.  I eyeballed it and think I only used about half a TBSP.  Still yum, just needed more chocolate lovin!  Once again, thank you Katie!

Now, for the most exciting part of my day…yes, even more exciting than chocolate mousse if that is possible…

Sweet and thoughtful Polly, whom y’all know I love, sent me what has to be one of the greatest inventions ever – a nut butter mixer!  Polly, I have never seen one of these, and I am so excited to use it as I’m always splashing almond butter oil all over my kitchen counter whenever I open a new jar.  Brilliant.  Absolutely brilliant, and you know it will get a lot of use in our house!  Polly, thank you so much for thinking of me, and I love your handwriting. :)

Just so you know, I did get in an hour of stationary bike riding and some push-ups today.  Also held plank for 2.5 minutes – a new record.  Yay – go core!  I can feel my hamstring healing – please keep sending good thoughts its way!

YUmm! I love bnut squash fries! AND, that pudding looks a-ma-zing. (that may be my CFW sweet tooth kickin in!)

I love the fact that you commented on Polly’s handwriting. I used to (still do, actually) practice my handwriting for hoooourrs. I love fonts and handwriting! :) I’m a dork!

Way to go on the bike and 2.5 minutes of PLANK?!? That’s amazing!!! I struggle with 45 seconds! ha! Guess I better start workin on that core a little more. Did you do a lot of core work when you were running a lot?

Hey Kaneil,
Your comment made me laugh because I am obsessed with handwriting styles as well. Chris calls mine “Heather Font”. I used to try and imitate one of my college friend’s handwriting, and I finally got it. If I’m in a hurry, it gets all sloppy, but I love taking my time writing out pretty cards and letters. Glad to know I’m not alone – you’re so not a dork!

I did do a little core work when I was running, but not much. I used to do Pilates mat workouts at home – just 20 minutes or so a couple times a week. With all the running I did, I didn’t have much time for anything else. My core is a lot stronger now thanks to yoga and core specific work. I wish more runners would focus a little more on core work as I know it’s helped the running I still do.

Try the pudding – it’s CFW friendly, right?

I love Polly’s present to you! Obviously perfect for you (but it should be called almond butter mixer!). I usually just tip my jar over and leave it that way.

Wow that breakfast looks so good and filling, esp. with the low calorie count! I love the PB mixer, what a great idea! I’m impressed by your 2.5 min. plank hold. I am lucky to make 1.5 minutes! Abs of steel! I agree with you on working out in the morning. I am so much more productive if I just get it out of the way first thing. I always put off showering until my workout is over, so the hubby is glad when I go in the morning too!

I love Crunchy Barney Butter, but I’m all out and have vowed to quit ordering nut butters online. These days I’m eating Trader Joe’s roasted unsalted crunchy almond butter. SO GOOD! :)

Wow does that pudding look sinfully good! It is SO CREAMY!

That gift from Polly is so useful! I totally splash nut butter. I bet it would work well with Greek yogurt, too. I always manage to get the liquid residue all over my counter when I stir it up!

I am becoming increasingly convinced that I must try oat bran! You make it look so warm and inviting–can’t resist the creaminess factor!! Do you make it the same way you make oats?

Hi Lara, Yes, please try oat bran…so good! I prepare mine on the stove-top. 3/4 cup dry oat bran, 1.5 cups water, and a pinch of salt. Bring to boil, and then let simmer for one minute. All done! I usually remove it from heat and cover for few minutes to let it thicken. Very warm and inviting! Let me know if you try it!

The pudding looks amazing – I LOVE foods with that type of consistency! Polly’s handwriting is so cool, I always wanted cool or really nice handwriting but never had it. I used to be obsessed with the handwritings in the Baby Sitter’s Club books and try to mimic them all. I never heard of a nut butter mixer either! Great idea!

Dori – I was obsessed with the Baby Sitter’s Club series. I read them and then re-read them. Too funny as I haven’t thought about those books in years. I used to practice my handwriting all the time as well. I will spend hours addressing envelopes and writing letters so that I can use my “Heather Font”. :)
