I kicked it old school style with some Billy Blanks action this morning. 20 minutes of Crunch Fitness upper body with 10 lb dumbbells (skipped the lower body workout
) and 30 minutes easy spinning on the bike. Afterwards, I was starving and prepared the most random breakfast to date:
Salmon Omelet with Spinach Almond Butter Wrap
My main course consisted of egg whites, leftover steamed veggies, crumbled wild Alaskan salmon burger, Laughing Cow Light cheese and lots of dill. For dessert I rolled up some spinach in a warm almond butter wrap (Polly style!) Oh my gosh, I was completely stuffed after this breakfast. The stats: 499 calories, 23 grams of fat (23%), 30 grams of carbs (23%), and 49 whopping grams of protein (37%). The omelet was an amazing blend of flavors, and then it was time for some sweet lovin on the almond butta! I’ve been admiring Polly’s spinach/almond butter combo for a while now, and had to try it after reading her post yesterday. Now, I’m used to eating my almond butter wraps with melted carob chips, so this was a bit of a shock at first, but by the last bite, I was in loooove. Perfect ending to a perfect meal. Breakfast was at about 8:30 AM, and I was completely satisfied until I got home from work at 2 PM!
Lunch….AMAZING!
Roasted Kale and Banana Barley Pudding
Check it. Makes you want to lick the monitor, doesn't it?
This was my most amazing pudding creation by far! Into the Vita-Mix went 1 scoop Jay Robb vanilla egg white protein powder, 1/2 cup cooked barley, 1/2 frozen banana, 1/3 block silken tofu, and 1 shot of vanilla hemp milk. Topped it off with some pumpkin pie spice and a ginormis spoonful of peanut butter. (I never measure my nut butters. 1 spoonful to me probably = about 2 TBSP. Life is too short to mess around with nut butter amounts. More is always betta!
) Y’all, this bowl took me back to the banana pudding of my childhood. Here in the South, banana pudding is a staple at any picnic or potluck. The blended barley made for a great texture and reminded me of the Vanilla Wafer bits my Mom used to use in her recipe. You must eat this very soon…like tomorrow!
Preview of dinner…
Goddess Garbanzo Salad
Eat, Drink, and Be Vegan provided me with this amazing recipe! It’s meant to be used as a sandwich spread, but tonight it will be our salad topper. I un-veganized it by adding bacon. When in doubt, feed your man bacon, and he’ll love you forever!
Have a good evening my friends. Enjoy The Office. Give it up for Stanley…love him!

Ack! I just tried licking the monitor, and let me tell ya– it doesn’t do the picture justice!
Love Billy Blanks!! Tae Bo
LUSCIOUS PUDDING ALERT!!
Stanley is my FAAAVORITE ‘Office’ character!!
haha Billy Blanks! I used to do Tae Bo all the time…good times, good times
I must try that intriguing spinach/AB combo…I love both individually so why not together?!
Saving this pudding recipe too! If I wasn’t so worried about food all the time I would eat this pudding all the time. I just have this feal that I won’t be healthy if I don’t have veggies in my lunch and dinner.
Life is indeed to short to skimp on nut butters! I wish my breakfast would hold me until 2 pm! I’m starving 2 hours after I eat!
Favorite Office episode, the basketball one (for obvious reasons) from the first season:
Michael: Let’s figure out our starting lineup. Stanley, of course.
Stanley: I’m sorry?
Michael: What do you play? Center?
Stanley: What’s that supposed to mean? Why ‘of course’?
Michael: I don’t remember saying that.
HAHAHAHAH!!!
I’m making “pudding” right now.
AND my plank holds: 1:37 was my very first one at the BEGINNING of my workout. My second one, after my workout, was only :45. I have abs of pudding.
Ok, that salad looks fantastic, and I totally agree with the bacon thing. If I put bacon in something, the fiance eats it. No bacon? He whines and complains.
Your crazy breakfast sounds really delicious!
These blended grains are pretty much the best thing to ever come into my life!!
your breakfast looks awesome!!
You’re doing so well with getting your protein! I totally need to get on that. mmmmmmmmmmm dinner looks amazing! Hope you enjoy every bite.
omg, i’m totally intrigued by your food today. i need you to feed me
cause i need dinner now!!
I love how you’ve been incorporating these blends into your lunches, and veggies into breakfast! I’ll have to try the spinach and nut butter thing (but I’m a PB person, so I’ll probably use that). I still can’t get away from the oat bran for bfast so maybe I’ll do it for lunch.
i find all of your puddings amazing! wish i had the courage to try!`
Spinach plus almond butter?! you crazy, girl. But I won’t actually knock it until I try it!
Stanley is possibly one of the best characters on the Office- love him
I sure wish I had a Vita-Mix! That pudding looks so yummy!
Omg, you are killing me with those pics of blended grain pudding. Yes, I do want to lick my monitor!
Almond butter and spinach wrap… sounds tasty!
Almond butter and spinach? I definitely need to try this!
Love garbanzos! Looks like I need to invest in ED&BV!
Breakfast looks amazing! I haven’t tried the almond butter/spinach thing yet….but i may need to!
I LOVE THE OFFICE! and stanley is one of my favorites
“Did I stutter?”
The picture of the crazy breakfast sandwich is wonderful. Have you been working on your photography.
I heart the office. Wathing right now.
Hey Hangry Pants,
Ha – I finally learned to turn my flash off, and I’m been taking all my pictures outside or by a sunny window. Makes a huge difference! Thanks for noticing.
Dwight birthing a watermelon…gross.
As a Southerner, I really was tempted to lick the monitor. I may have to try this creation. Banana pudding? Most delicious creation ever (behind peanut butter, of course).
Your garbonzo salad looks so good. I really just LOVE your blog! I feel like you have such great things to say and are such a great example! So, Thank you!
xoxo
Marian, Thank you! So encouraging.

Hey Caroline,
I love Molly Shannon AND Selma Blair, but I’ve never watched Kath & Kim. Maybe I’ll tune in next week.
Woo hoo! Good ol’ Billy Blanks. Way to rock that! I am loving seeing more meals of yours than just breakfast too! And you’re brilliant! bacon is definitely the way to a mans heart.. at least my man. And yours.
You are brave with spinach and almond butter! I don’t think I can get past the mental block I have about mixing those two! I have the Billy Blanks Ab Bootcamp video and actually think it is a really good ab workout! I’ve actually never watched The Office, but I love Steve Carell, he cracks me up!
OOH I LOVED THE BILLY BACK IN THE DAY.
alas, I have his stuff still but in tape.
TAPE!
remember the vcr?
Hey Mizfit, if you get a chance, I think you’d really enjoy (appreciate) this post: http://heathereatsalmondbutter.com/2008/12/03/ode-to-my-workout-videos/
Delicious!! I love this:
“Life is too short to mess around with nut butter amounts. More is always betta!”
FOR REAL GIRL! So true =)
That looks like a recipe I’m going to save. Any time the title has “garbanzo” in it – I’m sold.
I love your random brekkie. Looks filling.
The pudding looks so amazing! I know I keep saying that but wow I need it. Also, your pictuure of the wraps looks professional – how do you take such great pics?
Hi Dori,
I started turning my flash OFF and taking all my pictures by a sunny window. It’s made a huge difference – thanks for noticing! Have a good weekend.
LOOK AT THAT WRAP! Seriously! That is my inspiration for breakfasts starting now.
wowowow: spinach + AB + eggs + veggies= POWER BREAKIE!
Your coffee suggestion sounds amazing! I’ll have to try that for sure!
p.s.
every time I look at this post, I get the sudden urge to make a spinach almond butter wrap!
That wrap looks so great!! Of course the pudding does as well! Have a great weekend!
Breakfast looks great to me! A great balance
And this is random but I love the bowl you have your barley in at lunch. I’ve been looking for some neutral-toned dishes and it’s hard to find some that look warm and inviting. Do you remember where you found those?
Hey Lara, the barley bowl is from Target.
Random breakfast? NAY! RandAWESom is more like it. I want, I need.
Thanks for getting back to me…man, what would we do without Target?!
