Rockin the Southern Roots

I kicked it old school style with some Billy Blanks action this morning.  20 minutes of Crunch Fitness upper body with 10 lb dumbbells (skipped the lower body workout :( ) and 30 minutes easy spinning on the bike.  Afterwards, I was starving and prepared the most random breakfast to date:

My main course consisted of egg whites, leftover steamed veggies, crumbled wild Alaskan salmon burger, Laughing Cow Light cheese and lots of dill.  For dessert I rolled up some spinach in a warm almond butter wrap (Polly style!) Oh my gosh, I was completely stuffed after this breakfast.  The stats: 499 calories, 23 grams of fat (23%), 30 grams of carbs (23%), and 49 whopping grams of protein (37%).  The omelet was an amazing blend of flavors, and then it was time for some sweet lovin on the almond butta!  I’ve been admiring Polly’s spinach/almond butter combo for a while now, and had to try it after reading her post yesterday.  Now, I’m used to eating my almond butter wraps with melted carob chips, so this was a bit of a shock at first, but by the last bite, I was in loooove.  Perfect ending to a perfect meal.  Breakfast was at about 8:30 AM, and I was completely satisfied until I got home from work at 2 PM!

This was my most amazing pudding creation by far!  Into the Vita-Mix went 1 scoop Jay Robb vanilla egg white protein powder, 1/2 cup cooked barley, 1/2 frozen banana, 1/3 block silken tofu, and 1 shot of vanilla hemp milk.  Topped it off with some pumpkin pie spice and a ginormis spoonful of peanut butter.  (I never measure my nut butters.  1 spoonful to me probably = about 2 TBSP.  Life is too short to mess around with nut butter amounts.  More is always betta! :) )  Y’all, this bowl took me back to the banana pudding of my childhood.  Here in the South, banana pudding is a staple at any picnic or potluck.  The blended barley made for a great texture and reminded me of the Vanilla Wafer bits my Mom used to use in her recipe.  You must eat this very soon…like tomorrow!

Eat, Drink, and Be Vegan provided me with this amazing recipe!  It’s meant to be used as a sandwich spread, but tonight it will be our salad topper.  I un-veganized it by adding bacon.  When in doubt, feed your man bacon, and he’ll love you forever! :)

I must try that intriguing spinach/AB combo…I love both individually so why not together?!

Saving this pudding recipe too! If I wasn’t so worried about food all the time I would eat this pudding all the time. I just have this feal that I won’t be healthy if I don’t have veggies in my lunch and dinner.

HAHAHAHAH!!!

I’m making “pudding” right now.

AND my plank holds: 1:37 was my very first one at the BEGINNING of my workout. My second one, after my workout, was only :45. I have abs of pudding.

Ok, that salad looks fantastic, and I totally agree with the bacon thing. If I put bacon in something, the fiance eats it. No bacon? He whines and complains.

I love how you’ve been incorporating these blends into your lunches, and veggies into breakfast! I’ll have to try the spinach and nut butter thing (but I’m a PB person, so I’ll probably use that). I still can’t get away from the oat bran for bfast so maybe I’ll do it for lunch.

ah my sorority house mom was from Alabama and made the BEST banana pudding with vanilla wafers, omg we died! Do u watch Kath and Kim?? THey are kind of hooking me since it’s on right before, plus molly shannon is just hilar :D !

You are brave with spinach and almond butter! I don’t think I can get past the mental block I have about mixing those two! I have the Billy Blanks Ab Bootcamp video and actually think it is a really good ab workout! I’ve actually never watched The Office,but I love Steve Carell, he cracks me up!

Breakfast looks great to me! A great balance :) And this is random but I love the bowl you have your barley in at lunch. I’ve been looking for some neutral-toned dishes and it’s hard to find some that look warm and inviting. Do you remember where you found those?
