Pudding Blues

Bonjour!  Welcome to La Creperie du Heather. Breakfast this morning was an amazing protein packed powerhouse of rubbery yuminess!

Inspired by Justine, I attempted a protein crepe this morning.  I mixed 6 egg whites with one scoop of Jay Robb vanilla egg white protein powder and pumpkin pie spice in my Vita-Mix.  I then cooked the crepes in a skillet sprayed with cooking oil.  There was enough batter for 2 large rubber tires…I mean crepes, and I covered both with a Heather-sized spoonful of almond butter.  One then received apple butter while the other got some love from Mr. Carob Chip.  Now, Justine warned her readers that not all protein powders work in this recipe.  I’ve had some bad luck heating whey protein before, and so I went with Mr. Robb’s egg white formula.  The end result was not the light airy crepe I was hoping for, but they were still good…and very filling.  CHECK OUT THESE STATS: 488 calories, 22 grams of fat (38%), 22 grams of carbs (19%), and 51 freaking grams of protein (44%).  Since I’ve been eating grain pudding bowls and oat bran at night, I’m really trying to get in more protein at breakfast.  Mission accomplished today!  I must say that 2 spoonfuls of nut butter instead of 1 makes a HUGE difference in my morning. A) More almond butter will always make me happy, and B) The extra fat really satiates my hunger.

I then did a half marathon…on the recumbent bike. 13.1 miles in 60 minutes with very little resistance.  Wow, what a completely boring workout, but at least I got some movement into my day.  I’ve decided to take another weekend off from any exercise whatsoever as I’m still having hamstring issues.  Nada this weekend…and I’m freaking out a bit.  Oh well, no daily workout just means extra time with my CD and perhaps a nap.  So, it’s all good. :)

When I got home Mr. UPS man paid me a visit:

Today’s recipe: 1/3 block of silken tofu, 1/2 cup cooked barley, 1/2 cup blueberries, 1 scoop Jay Robb vanilla egg white protein powder, and a splash of vanilla hemp milk.  Topped off with some peanut butter…damn, darn this was good!  Head on over to Chocolate Covered Vegan and check out all the wonderful pudding recipes Katie posted earlier today.  You’ll be seeing her carrot cake suggestion around these parts very very soon!

Hope your hamstring feels better soon! I like making egg white crepes (and they might be one of the first things I made after I stop being macrobiotic… if i decide to stop… which I haven’t decided yet, haha). I don’t put any protein powder in them, I just mix up egg whites and nut butter, cook ‘em, and top with some yogurt and berries. I miss yogurt :( One more day!

That crepe looks interesting… It’s something I never would have thought of. I guess if tasty, what the hell right?

I have no clue how you can be sane without working out. I go crazy with one day off!

WOAH! Check out the blueness! Ohmygosh, my favorite color is blue, and one of my favorite foods is pudding (shocking, I know), and one of my favorite people is you, so this post is pretty much awesome!

And I love how you pair veggies with the puddings to get a good mix of sweet and savory together for a perfect meal.

Your crepe is such a great idea! I have a lot of mornings when I need a huge breakfast to get me through a long experiment without time for a break. I’m definitely going to have to try that. The blueberry pudding is also so pretty!

I hear ya on the protein powders- I have a whole can of whey protein, and I don’t really like it. The texture and taste are both sort of… off.

oh crepes…i used to work at coffee shop where we also made crepes. they are so yummy!

seriously woman! That crepe looks amazing- and the texture DOES look a little (in the first pic) like it has tire tread marks on it..hm?? I totally agree on erring on the side of generosity with PB/AB spoons, soo good. I just bought Maranatha AB today, yaya me, i tots thought of u! Hi Brittany,
I liked the Country Bob’s Sauce. It’s similar to A-1 Steak Sauce, and I can’t wait to try it in some recipes…namely burgers. My husband loves his burger to have a little kick, and I think some Country Bob’s mixed in with the meat will be a big hit. I’m also going to try marinating tofu in the sauce before baking it. Yum!

Those crepes look seriously amazing.. you know I love chocolate with breakfast so your combinations are making me crave it! That’s awesome that it had 51 grams of protein!!!

Hi Elizabeth – I did like it. I’m such a condiment girl, and it reminded me of A-1 Steak Sauce which I used to pour on everything back in the day. My husband & I used the Country Bob’s for dinner as well, and I can’t wait to make burgers with it. I have a feeling those 2 bottles will be gone in no time! Chocolate for breakfast is such a great way to start the day! I love the little melted chips in your bowls of oats! Thanks again for the giveaway!

Haha. So funny you tried the crepes. Sorry they didnt turn out quite right :( . They could have been over mixed. I always put the egg whites in a bowl and add the pp a little at a time beating with a fork until no lumps. It should be kind of a thick mixture. I have Jay Robb but its whey not egg white and it works pretty well. You just have to experiment. I like to have them as a small snack before bed. Your blue pudding is so pretty! I just bought tofu foe the first time yesterday and so far its come in handy replacing yogurt in my shakes. Have a great weekend!

CREPES! Amazing. You make such great foods, an of course the picture looks great. I took a picture this morning of my bowl of my Jello chocolate pudding with brownie chunks by an open window with no flash and it looks great!

Thanks for your sweet comments – I feel like crap now but hopefully will feel better by Monday. Also, how do you bike for 60 min without pulling out your hair from boredom!
