Best Bowl of Beta Carotene

After a weekend of NO exercise, I was jonesing for some cardio, weights, stretching…anything that involved movement.  My hamstring is still not a 100%, and so back to the stationary bike for 30 minutes of easy spinning followed by an upper body strength training session.  Plank hold…3 MINUTES. A new plank PR! Afterwards, my core was growling for some food!

Salmon was on the menu for breakfast this morning, but I couldn’t stink up the house as we had a showing at 11 AM (hooray for possible buyer!).  Cold cereal…not feeling it so much.  Since I knew I would rendezvous with Mr. Oat Bran later tonight (sorry CD!), I opted to try Justine’s protein crepes once again.  After my plate o’ rubber last week, Justine advised me to slowly add the protein powder to the egg whites instead of mixing them together in the the Vita-Mix.  Instead of my egg white protein powder, I used Jay Robb’s whey (yes, I know…back on the protein powder bandwagon. :) ), and since I was in a hurry I used 3/4 cup egg whites from a carton. These crepes turned out so much better than my first attempt.  Even though they still tasted like they had a bit of elasticity to them, I did not feel like I was biting into old tires.

The stats: 410 calories, 15 grams of fat (34%), 16 grams of carbs (16%), and 47 grams of protein (49%).  Good thing this breakfast was so filling since I did not get to eat lunch until 3:30 PM!

Lunch wasn’t too exciting…but dessert sure was…

Holy $%#&*^!  Chocolate Covered Vegan, the amazing chef that she is, posted several ideas for puddings last week, and I gladly chose carrot cake!  Into my Vita-Mix went 1 cup cooked barley, 1 large cooked carrot, 1/2 cup vanilla soy milk, 2 oz pineapple chunks, & vanilla.  For the cream cheeze topping, I blended 1/4 block Mori-nu firm tofu with vanilla, Smart Balance Light, and maple syrup.  Other toppings included cinnamon, raisins, and a big dollop of my almond walnut butter.  Best blended grain pudding bowl ever!

Hope everyone had a wonderful weekend!  Who gets your vote for best/worst dressed at the Oscars?  I thought Freida Pinto looked amazing…and Robert Downey Jr. was looking mighty fine as well.

Btw, I did reply about the oat groats on my blog, but just to let you know, oat groats are raw oats. When you make oats, the first thing you do is clean and hull them. Then you end up with the oat groat. That is then chopped up or ground into meal, to make Irish/steel cut oats, or Scottish, respectively. To make rolled oats, they are, like you said, steamed and rolled.

Three minute plank!?!? That’s amazing!! Also amazing, a carrot cake pudding bowl. I’m definitely picking up some grains when I go to the grocery store so I can try some of these pudding bowls out.

Personally, I felt Mickey Rourke was the best dressed.

Matt, as long as you have a food processor or high powdered blender (Vita-Mix, etc.), you should have no problem making your own nut butter. I recommend using roasted nuts because you have to add oil to raw nuts. Salted or unsalted – doesn’t matter. We just buy raw nuts in bulk at Costco, and I roast them myself in a 350 degree oven for 10-12 minutes stirring twice. If using a food processor, you’ll probably have to stop it to scrape the sides down once or twice. Let it run for about 4-5 minutes, or until your nut butter is of a consistency to your liking. Enjoy – it’s easy

Yummy crepes and delicious pudding bowl. I love carrot cake taste of any kind, so that sounds fabulous!

As for best dressed.. I thought Kate and Freida looked gorgeous and so did Marisa Tomei! Worst dressed..definitely Mickey Rourke.. but what did I expect? :)

Wow, 3 minutes is impressive. Carrot cake pudding sounds fabulous! I use a lot of cooked squashes, but forgot about adding other root veggies to things for a change! I have a sweet potato flan recipe that is really good and your post made me think of that!

Hi Gina. Yeah, the one good thing that has come out of my hamstring injury is my increase in upper body strength as all I ever do are Chaturangas and plank holds. :) I think any cooked grain would work…Oat bran or baby coconut meat would be good too. Mmm, I need to try that! The possibilities are truly endless!

I’m glad the crepes turned out better! I used to make those all the time in high school. I haven’t pulled out ye olde crepe maker in a while, actually – yet another foodie item that can be added to my growing to-do list ;)

Wow, I am lovin’ that pudding. I really need to get myself comfortable with trying other grains. I bought this barley couscous a while back, and I am not sure if it is wholegrain. The indredients just say, “100% barley semolina.” Someone told me that there is wholegrain barley and processed barley. Do you have any thoughts on this?

Hi Lara,
I’ve never had barley couscous. I know you can buy 100% whole wheat couscous, but I’m thinking your’s is not wholegrain after reading the following on the Eden Foods Website:

Semolina is refined, or white durum flour. Most pasta and couscous are made from semolina.

Thanks for asking about the house – no feedback yet from yesterday’s showing. So, we’ll see. As far as protein powder goes, I really like Jay Robb’s Whey and Egg White Protein Powders. They do not contain any artificial ingredients, and they’re sweetened with Stevia. I love vanilla, chocolate, and strawberry. Pina Colada and Tropical Dreamsicle not so much. Most health food stores sells small sample packets. That way you can try it before buying and entire canister. It’s definitely my fav!

Woah.. I’ll hold you personally responsible for all my soreness this week!!
I didn’t know what a plank was.. So i googled it and thought “oh, easy, doing push ups without pushin up”…haha

Tuesday i went to do my weight routine at the Y, and did the plank hold, and barely managed to make it 3 minutes, then collapsed.. (you how competitiveness is ;-p) Wednesday i was sooo sore, everything from my knees to armpits. So much for my (easy) yoga stereotypeing!
Today i’m finally recovered, i’m adding the plank to my workout and taking out the crunches and roman chair for the back!

Jacobc, Yeah, that plank hold is NOT easy. I couldn’t go 3 minutes today. I did 2 sets – one for 2 minutes and the last one for 1 minute. It’s so much more effective than crunches. Glad you added it to your workout. Have a good weekend!
