Ouch. Chocolate Will Make It All Better.

Just keep moving…my mantra for the day.  Y’all this yoga workshop is going be quite the challenge.  3 days in, and I am so unbelievably sore that I’m afraid if I sit for long, I won’t get up again.  Thankfully,  I have back-to-back clients this afternoon, and the movement will be so good for me.  Our teacher knew we were all hurting and tired today and moved us slowly through each posture urging us to focus on breath.  She knew just what we needed.  Crow Pose – 15 seconds, maybe 20!!!!  Side Crow – just sat there and laughed.  So not there yet! :)

Came home with a deep hunger in my belly and fixed this:

Just what I wanted!

Usually my breakfast contains 400-500 calories, and I have a pretty good idea of the count before I prepare it.  This morning, I simply did not care and went with what I wanted: 1 piece of  German spelt bread with Smart Balance Light and 1 cooked egg sprinkled with pepper.  On the side, I had a banana with a spoonful of almond walnut butter and cinnamon.  The stats: 597 calories, 24 grams of fat (36%), 75 grams of carbs (49%), and 23 grams of protein (15%).  According to my calculations, my spelt bread contains 273 calories per slice.  I think not, and so I’m going to pretend my breakfast was less than 500 calories.  Sound good?

After seeing Sarah’s zucchini fries over at LoveIN My Tummy last month, I’ve wanted to try some ever since.  So, when Katie posted her Zesty Zucchini Fries this week, I knew the time had come. This scrumptious plate contained 1 zucchini and 2 summer squashes cut into fries and roasted with cooking spray oil and spices in a 425 degree oven for about 30 minutes.  For dipping, I combined canola oil vegan mayo with Dijon mustard.  Katie, what I would do without you in my life?!?

In my hungry state, I knew needed more after my plate of fries.  So, I made another Katie inspired dish (Yes, I am a Chocolate Covered Katie recipe stalker).  After blending 1 cup of cooked quinoa with a little water, vanilla, and cinnamon, I knew that wouldn’t cut it.  So, I dumped the rest of my leftover quinoa (another half cup maybe?) into the Vita-Mix with 1/2 avocado, 1 tsp maple syrup (love licking the spoon!), 1 tsp cocoa powder, and a big splash of cashew milk.  This mix barely made it from the blender to the bowl, and I don’t know how I managed photographs before enjoying the yumminess.  Still sore, but very happy now. :)

Keep working that side crow, it will come! I thought I would NEVER be able to do it, but after practicing it almost every day for a couple of weeks on my dorm room floor (much to the amusement of my roommates) I can hold it for a couple breaths! But only on one side, not the other…

Wow, this workshop sounds intense. I haven’t been doing long classes recently – mostly just 2 20-minute sessions every day. I guess I stopped when I was sick and now I kind of like breaking it up…

I need to start making Katie’s recipes, not only because they are fab, but because I want extra entries to her giveaway! Glad the chocolate helps.

Okay…I’ve never had quinoa but now I REALLY want to if it’ll look like that.

Love all of these yummy fries I see floating around bloggy world! Why can’t I get motivated to make them myself?

I love/hate that sore feeling….it stinks, but then it also feels so good, too. I hope you feel better! :-)

We taught Livy the “MUAHAHAHA” laugh. It’s hilarious. Just think of that when your yoga instructor is laughing at you tomorrow :)

My chocolate pain relief is a lot more chocolate and a lot less quinoa. But I’m glad it helped YOU out!

Chocolate does cure all! Especially that bowl. It’s astounding! I’m very impressed.
And I don’t know what I’d do without Katie either! What on Earth would I be eating??
Squash fries are the best and I love your breakfast. That bread is so delicious and filling.
I hope the soreness calms down. You are definitely jumping back into exercise!!

Your quinoa looks so good! I tried to do yoga the other day and only lasted 20 minutes, but even from that I have been so sore!!!!

Heath bar!!! What a lovely way to take care of yourself, your eats are fabulous and there is nothing wrong with that stats on your breakfast. i mean, look at it this way, even if it is close to 600 calories, u would eat that much (AND MORE) in a day anyways! and u took care of it in a fantastic and beatiful *NOT TO MENTION DELICIOUS* Fashion! couldnt be prouder :-D

I play pretend with my serving sizes and calorie amount too! Hah! I tell myself it was 2 tablespoons of peanut butter, but it’s probably more along the lines of 4. Pretend isn’t all that bad. I know it’s encouraged as a child, so why not do some pretending as grown ups? HAh! Have a wonderful day Heather:)

Breakfast looks so delicious! I usually try to keep my breakfasts around 400 calories too, but I do notice on days I crank it up to 600 I eat better and wiser throughout the day.

Wahoo for getting back into yoga!! I also just recently got the crow pose for more than a few seconds. I also got boat pose which made me break into a HUGE GRIN. I have attempted side crow and my arms just kindof cave in and I get really sweaty. That is when I pretend to show intense interest in my water bottle haha. Your food looks awesome :)

Also, I saw your comment on Lee’s blog that one of your favorite snacks was oatmeal. It was funny because I had submitted a comment about my favorite snacks, but forgot to write oatmeal, so I came back to write another comment suggesting oatmeal, but you had already beat me to it! Anyway, I love having oatmeal for a snack or dessert – it’s the best!

Ouch! That yoga definitely sounds intense. There is no way I could handle it. I honestly am thinking my body was just not meant for yoga – I get so intimidated!

Um, I’m pretty sure that I am a Katie wannabe stalker. There are so many recipes I am dying to make. Hopefully over spring break I will have some time to experiment!
