Like most of you, I hate throwing food out, and always try to incorporate leftovers into my meals, this morning’s breakfast being a prime example. On this plate, we have an egg white omelet filled with leftover homemade pizza and 1/2 half of a HUGE avocado instead of cheese. Wow, pizza omelets are good! For my Little Debbie fix, I had a Wasa Crisp’n Light 7 grain cracker with a spoonful of crunchy peanut butter. (Thanks Brittany!) My body likes it when I shake things up a bit, and this fat-filled breakfast definitely shook. Quite a change from my oat bran, but change is good, right?
As soon as I finished eating breakfast, the Fed-Ex man came a-knockin with a motherload of coconut goodness!
A huge thank you to Chris at Turtle Mountain for sending me such a generous array of samples! The company has been producing its dairy and soy free coconut milk yogurt since June 2008, and recently introduced several new products including a coconut milk beverage and an entire line of coconut milk ice-cream mini treats. Check out the list of ingredients for the vanilla coconut milk ice-cream: Organic coconut milk, organic agave syrup, chickory root extract, carob bean gum, guar gum, vanilla extract, natural flavor, and vanilla bean specks. That’s it! Pretty impressive, no?
Now, some of you may be thinking: …but coconuts are high in saturated fat. Yes, but studies have shown that some saturated fats do not pose health risks and are actually healthy. Not to get all scientific on you, but coconut contains a vegetarian source of saturated fat consisting of medium fat chain fatty acids (MFCAs). In the past, MFCA’s have been recognized for their anti-viral and anti-microbial properties. The body uses them as energy instead of storing them as fat. Cultures around the world that consume coconut on a regular basis have a lower incidene of heart disease than Americans. MCFA’s promote weight maintenance without raising cholesterol levels and have been shown to posses anti-inflammatory properties. My advice: Don’t fear the coconut! Embrace it my friends.
