Exciting New Coconut Milk Product Giveaway

Like most of you, I hate throwing food out, and always try to incorporate leftovers into my meals, this morning’s breakfast being a prime example.  On this plate, we have an egg white omelet filled with leftover homemade pizza and 1/2 half of a HUGE avocado instead of cheese.  Wow, pizza omelets are good!  For my Little Debbie fix, I had a Wasa Crisp’n Light 7 grain cracker with a spoonful of crunchy peanut butter. (Thanks Brittany!)   My body likes it when I shake things up a bit, and this fat-filled breakfast definitely shook.  Quite a change from my oat bran, but change is good, right?

As soon as I finished eating breakfast, the Fed-Ex man came a-knockin with a motherload of coconut goodness!

A huge thank you to Chris at Turtle Mountain for sending me such a generous array of samples!  The company has been producing its dairy and soy free coconut milk yogurt since June 2008, and recently introduced several new products including a coconut milk beverage and an entire line of coconut milk ice-cream mini treats.  Check out the list of ingredients for the vanilla coconut milk ice-cream: Organic coconut milk, organic agave syrup, chickory root extract, carob bean gum, guar gum, vanilla extract, natural flavor, and vanilla bean specks. That’s it! Pretty impressive, no?

Now, some of you may be thinking: …but coconuts are high in saturated fat.  Yes, but studies have shown that some saturated fats do not pose health risks and are actually healthy.   Not to get all scientific on you, but coconut contains a vegetarian source of saturated fat consisting of medium fat chain fatty acids (MFCAs).  In the past, MFCA’s have been recognized for their anti-viral and anti-microbial properties.  The body uses them as energy instead of storing them as fat.  Cultures around the world that consume coconut on a regular basis have a lower incidene of heart disease than Americans.  MCFA’s promote weight maintenance without raising cholesterol levels and have been shown to posses anti-inflammatory properties.  My advice: Don’t fear the coconut!  Embrace it my friends. 🙂

In embracing the coconut myself, the goal for this week is a daily meal incorporating a Turtle Mountain coconut product.  You know I love a good challenge!  Now a little challenge for you…

I have long been a user of their purely decadent products, but had not seen anything like their coconut ones in the market. I am so excited. Cant wait to spread the word. Any and/or all those sound delicious. A healthy alternative to cow, soy and rice milk is great. My hubby used to make coconut milk lattes and that was where my love for coconut began.

Trying to keep my soy intake moderate, I was THRILLED when Turtle Mountain introduced the coconut milk based products!

I’ve had most of the ice-cream flavors and some of the yogurt. Yogurt is good – a bit runny, but a nice dairy/soy free alternative. I do wish it had more protein. The ice-cream is amazing!!!! I tried some of the coconut milk beverage today

I would love love love to try the coconut milk for making thai dishes or the ice cream for eating while watching late night bad tv (chocolate please!).

Also, another way to cook egg with avacado is to add the avacado chunks to the egg just after it sets, right before it’s done. This way, the avacado surprise is inside. Yum!

Thanks for the avocado tip. I actually tried to do that, but I think my avocado chunks were too large, and they all spilled out when I flipped my omelet. Oops. I’ll cut them smaller next time for more of an avocado surprise. 🙂

I LOVE Turtle Mountain. They are geniuses in creating non-dairy products. And maintaining high health standards to boot! I’ve samples all their lines of coconut products, although not every flavor, except the new coconut milk. I’d love to try their new coconut milk and I also the new vanilla minis dessert. (So far my favorite has been the mint chip ice cream).

Mo, I love plain yogurt as well, Greek being my favorite, and I have yet to find a vegan version of yogurt that even comes close! That being said, I will say that the plain coconut milk yogurt is my favorite vegan yogurt as I can’t do soy. It’s not nearly as thick and creamy as my beloved Fage yogurt, but it gives me my yogurt fix. Thank you Turtle Mountain!

OMG! After I saw this post today I emailed the company to see if these products were available in Canada, but then found out the answer myself when I found the coconut milk ICE CREAM at the store!! I’m so excited. I bought the chocolate flavor and had a little taste when I brought it home – delightful!

I hate throwing out food too so I often end up with some slightly bizarre combos… but hey, I feel accomplished being resourceful with bits and pieces of random food made into a meal so it all works out!

OH MY GOODNESS! So Delicious coconut ice cream is my new favorite food. I just finished a pint of chocolate chip cookie dough tonight and I nearly cried to see it go. It’s the most creamy, amazing tasting dessert EVER! I would love to try the chocolate peanut butter swirl flavor, since I’ve been stuck on the choc chip cookie dough cause i don’t know what could honestly be better. either that or those coconut almond bars- i haven’t even ever seen those in the store before!

I noticed above that someone talked about throwing avocados away. I just want to point out that there’s other things you can do with bad avocados instead of eating them – such as turning them into a natural hair conditioner. Mash up brown avocados, put on your damp hair and leave on for at least 5 minutes. It may make your shower a little dirty, but at least you aren’t completely wasting them!

No fear, I am definitely still planning on writing a bang-up review of coconut oil and milk (so far what I’ve found is good!).

Naturally, as a self-proclaimed ice cream lover, I would have to try a Turtle Mountain ice cream variety [I will link back to you tonight].

I am jealous of your avocados. They are SO darn expensive here that I just can’t buy them on a normal basis. My cousins have an avocado grove in CA, and whenever we visit, we stuff our suitcases full of avocados, usually exceeding the weight limits [but totally worth it]!

I think of all the sample packages I’ve ever seen a blogger receive, this one takes the coconut. Have I not been extolling the delights of coconut yogurt lately?! AND I had one of their ice cream pints (ALL OF IT) a couple weeks ago and it completely coco-ed my nuts.

Oooooh! I’ve tried the coconut ice cream sandwich mini’s and they are soooooo good! I’ve been searching all over town for the cinnaman coconut yogurt, so that would be my request. I can’t pick it out of your loot, but you’ll have to let us know how it is! I also have heard wonderful things about the coconut almond minis. Ok, I want them all 🙂

Amy, I didn’t get any cinnamon coconut yogurt, and I’ve never seen that flavor in the stores. I’m bummed as it sounds so good! I love anything cinnamon. However, I do have to say that the coconut almond minis are delicious! 🙂
