After another challenging and extra sweaty (nice, huh?) power vinyasa hot yoga class, I really wanted some green oats. So, that’s what I ate.
Extra green today, no?
I wasn’t really thinking when I made my breakfast which is such a change for me. I used to plan out all the ingredients and calculate the calories, etc. before preparing the meal. Gosh, I usually had everything planned out by the time I went to bed the previous night! Not anymore, and today I just went with everything I wanted. I did leave out the wheat bran since the 1/2 cup I was using contaied 12 grams of fiber. I went straight-up oat bran cooking 3/4 cup on the stove-top with 1 1/2 cups water. I then threw it in the Vita-Mix with a handful of raw spinach, 1/2 scoop Jay Robb chocolate whey protein powder, and 1/4 cup Trader Joe’s Light Coconut Milk. The mild coconut & sweet chocolate flavors tasted really good today, especially with some crunchy PB. For those of you that have asked, no I cannot really taste the spinach, especially when I add anything sweet to the bowl.

I topped some roasted kale with Eating Bender’s Humbecue Salmon Salad. I wanted a little something bready on the side, and decided to try my hand at Polly’s spelt tortilla recipe. I had no idea how easy it is to make your own tortillas! I simply combined 1/4 cup spelt flour with 1/8 tsp. baking powder, 1/4 tsp almond oil, and 1 1/2 TBSP hot water. After rolling the dough into a ball and letting it sit for 5 minutes, I rolled it out between 2 pieces of parchment paper with a rolling pin (I think this is the first time I have ever used my pin
), and cooked it in my cast iron skillet over medium high heat for about 30 seconds on each side. So, mine did not form a perfect circle, but more of a square. Okay, so it’s a jagged rectangle, but I’m still proud.

The tortilla tasted very plain, and I loved it! After adding some crunchy peanut butter, I was in heaven. You will be seeing a lot more of this recipe for sure. Thank you Polly (love her!). Does anyone know the benefits of using spelt flour? I’ve read that is has more protein compared to whole wheat flour, and that it is easier to digest. I think I prefer the taste of spelt over whole wheat as the spelt is a bit milder.
So far, my fiber intake for the day is at around 25 grams. Backing off the wheat bran and the Flatout wraps has helped, and I definitely had more of an appetite today. So much so in fact, that I think I’m going to go finish off the last bit of peanut butter calling my name from the cabinet.

Homemade tortillas are some of the best things ever… I have some masa that I’m going to have to start using when I’m feeling better.
Wow, we had almost the same lunch! I had roasted kale with tuna and hummus with a homemade tortilla and walnut butter!
I don’t know anything about spelt being more nutritious, but I started using it more when I did gluten free for awhile, and I agree that I prefer the taste to the whole wheat. Not that its bad, but I like the lightness of the spelt.

Yes, those tortillas are awesome! Chris now won’t eat a store bought tortilla. Great, more work for me.
I think health wise spelt is similar to whole wheat, but that spelt is less dense for baked goods. Or I might just be making that up.

I have a yoga question. I’ve taken two classes, but it was a basic/intro class and that was about 4 years ago. I really want to try hot vinyasa yoga after reading about your classes, and there’s a studio not far from my house that offers it. However, on the website it says for “intermediate/advanced” (in other words, asking me not to come). Do you think I should take some beginner classes before jumping in? I’ve always been a “back of the class” kinda gal, but I don’t want to jump into it if it’ll kick my booty (which I’m thinking it will).

Spelt = good. Doesn’t taste so wheaty. As far as the yoga goes, I was in no way advanced when I started taking the hot vinyasa yoga classes, but I had been taking random yoga classes off and on for several years. I would definitely recommend taking some more intro classes first just so you can at least learn the names of the poses and get your form down. The vinyasa classes can move pretty fast, and if you do something incorrectly, you run the risk of injury. Does the heated studio offer any beginning classes at all? You could get some DVD’s, but I really like having a teacher there to adjust me if I’m doing a pose incorrectly. Let me know what you decide to do. Have a good weekend!

I’ve tried making my own tortillas before with just wheat flour and H20… but mine were, quite honestly, gross. I’ll have to give these a try.

I’ve been following your blog for about a month now and am thoroughly obsessed with it! You make the healthiest, most yummy looking food I’ve ever seen… so much so that you inspired me to buy a Vita Mix! I’m so excited I’ll be getting it in about a week. I was just curious about some of the things you make I hope you don’t mind that I ask you a few questions?
1. How come you add avocados to so many things you make? Do you just like the taste that much, or does it help to blend things and make it creamier? I mean, I like avocados too, but you eat them like they are going out of style!
2. How come when you make you breakfast, you cook it and then add it to the Vita mix? I mean, couldn’t you just cook it and stir it all in the pot together on the stovetop? I guess I’m just trying to ask what exactly does adding your hot cereal to the vita mix do to make it better?
3. Is it okay that I continue to ask you ?s once I get my vita mix?? I have a feeling I will be experimenting alot with it.

1. I love avocados, and since many of the foods I eat are pretty low in calories, avocados are a great way to make sure I’m getting enough calories and a good dose of healthy fats. Plus, we buy them in bulk at Costco, and my husband doesn’t really eat them. So, I’ve putting them on any and everything or freezing them before they go bad. You would not believe how creamy smoothies, oats, etc. become when blended with avocados, especially frozen ones.
2. The Vita-Mix blends up my oat bran concoctions making them so creamy. The thought of spinach chunks floating around in my hot breakfast cereal totally grosses me out, but after blending on high speed in the Vita-Mix, the chunks are all gone. Fruit chunks are fine, but green chunks? No thanks! I also love how the Vita-Mix turns my breakfast into more of a pudding like consistency. Can’t wait for you to try it!

In trying to stop counting my calories, I HAD to make myself stop planning out every detail of every meal. This is huge for me, but it helps me not focus on the numbers. I definitely still struggle, but I’m trying to be more relaxed around all my eating rules. It’s hard!

Those green oats fascinate me
I can’t wait to try my hand blender when I get back to school. I purchased one before I left as a treat for getting through another quarter of classes! I think it will help me make more blended breakfasts because even though I know how easy it is to clean the Vita-Mix, for some reason I tend to associate it with more “work” – call me crazy…but I think the hand blender will help with that wacko mindset.
