Heather Does Dinner & A Little Love From Texas

by HEAB on April 6, 2009

Hello my almond butter loving friends. If you're new to HEAB, you may like to subscribe to my RSS feed or receive my posts via email. Thanks for reading!

Yes, I do eat dinner.  A few people, one in particular, often ask me what I eat at night.  So, here you go:

Blogger Inspiration x 3
Blogger Inspiration x 3

I’d been wanting to make something similar to VeggieGirl’s (Happy Birthday VG!!!) B-S-Cubed Dish, and after seeing Gliding Calm’s PB2 covered veggies, I decided the time had come…I would finally use my last few precious ounces of PB2, aka peanut butter dust.  Ever since banning myself from online nut butter orders, I had literally been hoarding what remained in my last jar. So, I knew I wanted veggies with PB2, but I needed some protein as well.  Enter the brilliant Peanut Butter Boy and his recipe for Peanut Roasted Chickpeas.  I served the chickpeas over roasted kale with baked sweet potato wedges, and PB2.  Chris always wants meat with dinner, and so I threw a couple slices of bacon on his plate. We were both very happy. :)

After enjoying dinner so much, I took another cue from Peanut Butter Boy for my breakfast.  Using my leftover roasted chickpeas, I made a quick trail mix with raw walnuts and raisins and used it as a topping for this morning’s oat bran.

Trail Mix Oat Bran
Trail Mix Oat Bran

Thanks Peanut Butter Boy.  It’s about time I made one of your recipes – so good!  My breakfast held me over until I got home for lunch at 2 PM!  7 whole hours – love oat bran!

As soon as I arrived home, Leroy The Mailman was knocking at my door with this box of goodies:

Katie, I love you. :)
Katie, I love you. :)

Words cannot express the happiness in my soul when I opened this package from Chocolate Covered Katie!  After expressing extreme jealousy over Katie’s Artisana collection, she was kind enough to offer so send me some.  When she asked if there was anything else I wanted to try that I could not find in Nashville, I immediately demanded asked her if she could also send me some PB & Co. Mighty Maple.  Katie, thank you so much for everything, and I love the Kroger coupon book as it includes some of my favorite products!

I of course had to sample the goods right away.  So, after slamming down a little Humbecue Salmon Salad, I cooked 1 serving of hot buckwheat cereal and served it with Oikos Greek yogurt, 1 spoonful each of Mighty Maple and Cocoa Bliss, and cinnamon.  Wow – both products are definitely hide from husband worthy.  Sorry CD, but I’ve seen the damage you can do to a jar of PB! :)

Again, Katie, I love you. :)
Again, Katie, I love you. :)

As promised, here is a picture of me, Justine, and our boys men from our double date this past Saturday.  For a full recap, check out Justine’s blog!

Justine, can't wait to hang out again!
Justine, can’t wait to hang out again!

So, I’ve been going to the yoga studio almost everyday since my workshop ended, and I continue to love yoga more and more.  However, I think there was one too many spinal twists last week as my back has been bothering me.  I took the weekend off and went to a power yoga class this morning. Coming out of Triangle Post hurt!  I may take the rest of the week off and cross-train.  We’ll see.

Don’t forget to stop by Meghann’s Blogger Bake sale today, Monday, April 6th!

Off to enjoy some more Cocoa Bliss before my hubby gets home. Just kidding CD – I’ll share. :)

Your dinner looks fabulous – sweet potatoes, PB, and chickpeas are all great foods…I must try them together!

VeggieGirl April 6, 2009 at 3:51 pm

I HAD MY B-S-CUBED DISH FOR MY BIRTHDAY LUNCH TODAY!!!!!!!!!!!! You freaking rock more than ever, and I love ya for it :-D

Jenn (eating bender) April 6, 2009 at 3:55 pm

Love your Tri-Blogga meal! Gotta love VeggieGirl and Gliding Calm! And I’ve been meaning to try a Peanut Butter Boy recipe for a long time, too. I think next time I make my own nut butter, I’ll have to visit his site for ideas :)

Katie is such a sweetheart! I saw some of the Artisana PB at my Whole Foods last week – it may be my next nut butter purchase! And I have yet to see Mighty Maple anywhere. I wish they would bring a PB&Co. location to Chicago!

Hurray for humbecue salmon salad – thanks for the shout out, as always :) And I love the group picture! I remember your as tall as me or perhaps even slightly taller, so Justine must be model height! Although, you both could be models, IMHO ;)

Heather Eats Almond Butter April 6, 2009 at 4:04 pm

Jenn,
I love your Humbecue Salad about as much as this Mighty Maple. Seriously, I eat it several times a week! So, thanks so much for the inspiration. If I ever see Mighty Maple in the store, expect some on your doorstep. Oh, and we’ll be in Scottsdale the 2nd week of May. Sounds like I’ll miss you. :(

Chocolate-Covered Katie April 6, 2009 at 3:56 pm

Wait a sec… you don’t just eat breakfast?!?! ;)

Yay, I am so super-glad you liked the box!!! Hahaha you made me laugh when you said it was “hide from husband” good.

I love you 100 times back (and am still definitely planning on talking about your amazing care package in a future post… I’m just so unorganized that my posts are weeks behind!)!

Heather Eats Almond Butter April 6, 2009 at 4:04 pm

Thanks again Katie – you totally made my day! :)

Sarah April 6, 2009 at 4:03 pm

I love how you just slap some bacon on your dinner and tell CD, “Now there’s your meat!” I think that only works with BACON.

So what flavors of PB&Co. have you tried and which are your favorite? ;)

Heather Eats Almond Butter April 6, 2009 at 4:06 pm

Sarah,
Bacon makes my man happy. :) I know what you’re thinking. You need not send me anything my friend. :)

Nick April 6, 2009 at 4:20 pm

Excellent! I’m so glad you like my ideas, I especially like the adjective “brilliant” =).

Emmy April 6, 2009 at 4:27 pm

Eeek, jealous!

And your salad looks delish.

glidingcalm April 6, 2009 at 4:28 pm

i just had pb2 veggies tonight as well! :)

ksgoodeats April 6, 2009 at 4:29 pm

So much PB goodness in that dinner I don’t know what to do with myself! I love it!!

Leroy – what a name! Haha ;) What a fabulous mail package!!

Hope you had a great Monday!!

Erica April 6, 2009 at 4:35 pm

I love that you made the veggiegirl dish on her birthday! That is so awesome! Fun gifties from Katie! Food is quickly becoming my favorite gift to receive :) And super cute pic from the double date! Its so great to find people you share interests with!

Shelby April 6, 2009 at 4:36 pm

I ran out of PB2 literally the day before Nick posted that recipe, I was so mad!!! I guess I’ll just have to wait until I buy some more =(

Love the idea for the veggies though, yummy!

Aww what a sweet gift from Katie! I just ordered Mighty Maple!

marafaye April 6, 2009 at 4:40 pm

I can’t wait for my box of PB2 to get here so I can try the PB2 veggies!! That Katie is just the sweetest, huh??
Let me know if there’s any Chicago stuff you’d like, I love shopping for care packages!

Heather Eats Almond Butter April 6, 2009 at 8:08 pm

Mara,
You’re are too sweet! I love that you love shopping for care packages. If I see something in blogland that I simply can’t find in Nashville, expect an email from me. We can do a trade, and I’ll send you some Southern goods! :) . Hey, did you know my husband is from Chicago? He grew up in Hinsdale.

peaceandpeanutbutter April 6, 2009 at 4:50 pm

Heather, where do I begin??? All of your meals look yumaliciousssssss :-) That oatbran with homemade trailmix?! PB2 veggies?! A plethora of delicious PB??? Can I come over for a weekend? I’m bring some almond butter ;-)

P.S. Love your skirt in that pic!

Have a great night!
Erika

Kristie April 6, 2009 at 5:07 pm

AMAZing dinner. I was so intrigued by Em’s PB2 covered veggies. And now those Peanut Butter Boy chickpeas… I sense a new dinner coming up very soon! Mmmmm. PB2 was my first ever online order of any type of nut butter… but I can see it becoming a convenient addiction veeerrry easily. In this case it’s probably a good thing I’m frugal (alright cheap but frugal sounds more friendly) so I don’t like “splurging” on those darn shipping costs haha.

What an awesome pack of loot from the lovely Katie! I managed to find that Cacao Bliss at one store around here but WHOA pricey! I’m definitely going in for the splurge one of these days though, I just have to clear out some of the other nut butters kicking around here first ;)

I don’t see myself as much of a yoga person but you’re seriously making me want to do it more and more every time I read your posts. I just have that stereotypical view of yoga as slow and unchallenging and all meditation. Don’t worry, I know it’s NOTHING like that at ALL but I still need to get out and try it myself to break that mental image. I’m just too much of a chicken to go do it myself, I need to try to convince someone that I can drag along with me first. I really want to try it out hot style, there’s a Bikram studio around here that I’ve been wanting to go to for months! I need yoga loving buddies!

Heather Eats Almond Butter April 6, 2009 at 8:06 pm

Kristie,
I would totally be your yoga loving buddy if we lived in the same city! Try Bikram or Power Yoga in a heated studio if you’re looking for a good sweat-fest challenge. I’m still battling my inward cardio junkie, and I think the fact that I sweat my booty off at every class really satisfies my need for that cardio burn. I’m hoping to get over this – I’ll get there someday, but for now I still like to feel that I got in a good workout for the day…and yoga IS a workout!

P.S. – Definitely splurge on the Cocoa Bliss. :)

Foodie (Fab and Delicious Food) April 6, 2009 at 5:13 pm

Great dinner!

Emily April 6, 2009 at 6:11 pm

Chickpeas on oat bran..what will you think of next, Heather?! :-) It must be amazing if it held you over so long. I think I need to hop on over to PB Boy’s page!

Love the photo of you and Justine and your hubbies. :-)

I hope your back feels better soon!

Alison April 6, 2009 at 6:28 pm

That dinner looks fabulous. The perfect vegetarian meal – veggies, protein, starch. Even colorful too. I’m jealous.

Anna April 6, 2009 at 6:29 pm

Hehehe I love that you call it “hide from husband worthy”. When I’m home, I often have to hide tasty food items from other members of my family because I know it will be gone in 2 days if I don’t!

I hope your back feels better- those spinal twists can be killer!

zestycook April 6, 2009 at 6:33 pm

Oh your dinner looks Fab! Love the sweet potatoes!

Gina April 6, 2009 at 6:46 pm

Oooh..peanut butter chickpeas sound fabulous!! Excellent food day :)

I stare down the PB&Co products whenever I am at the store, and for some reason I just never buy them. One of these days…

Emily April 6, 2009 at 7:05 pm

Heather,

I’m totally jealous of the PB2. I can’t find it anywhere! Myabe I’ll have to look for it when I go to LA for my brithday pilgrimage to Whole Foods in May. I’ve already started a list! It helps with the grocery-shopping withdrawls. :P

I have in fact, occasionally, hidden food from the fam. There’s no way I can share my beloved cashew butter with the cbutter monster (aka my father)!

Looks like a great day!

With Love,

Emily

brandi April 6, 2009 at 7:25 pm

what a sweet package from Katie! :) I can’t find that maple pb either!

BTW- I got a litte package from you today and I’ll be posting about it as soon as I try it (like tomorrow morning!).

Thank you SO much for sending that and the sweet note. I love those cards!

Heather Eats Almond Butter April 6, 2009 at 8:00 pm

Brandi,
So glad you got your TJ’s PB! Hope you like it. :)

RunToFinish April 6, 2009 at 8:26 pm

mm I have been on a sweet potato kick, thanks for reminding me of that recipe!

Adi (oatonomy.com - repaired!) April 6, 2009 at 8:58 pm

Good looking supper! PB dust… yep, I’ve got a couple of jars with that in the fridge too. I just can’t part with nut butter jars even if there’s just a smidgen left!

charlotte April 6, 2009 at 9:06 pm

Your blog always makes me hungry! I’m totally making those roasted chickpeas… as soon as I figure out where to buy some PB flour (I live in the land of no Whole Foods nor Trader Joe’s… sigh.)

Red Head, Yellow Dog April 6, 2009 at 9:19 pm

that meal looks so good!! even James stopped me while I was reading your post to ask me what it was!!! I need PB2!!!!

carolinebee April 6, 2009 at 9:38 pm

Oh, well i always assumed that since you didn’t post other meals you just weren’t eating them….;D

I hope your back feels better, i’m sure your trusty ol’ stationary bike misses ya!

Elizabeth April 7, 2009 at 12:07 am

What an awesome package! I am so glad you finally got your Mighty Maple!!! Good to know its delicious.. I’m still going to keep my eyes open for it.

Cecilia April 7, 2009 at 1:19 am

Ain’t Katie the SWEETEST girl?!! Love the package that you got – love that she include a block of Texas love too!! :D

WOAH *swoon* that hot cereal bowl is seriously food PORN (hah!) worthy!! No wonder you were in heaven after tasting it!! LOL… as for hiding the two nut butters away from CD – I can understand that, you can’t always share, can you ;)

Have a great day Heather, you blog rocks!!

Lara (Thinspired) April 7, 2009 at 2:33 am

Hi Heather :) It’s nice to see what you eat for dinner, too. I guess I get so distracted by your delicious breakfasts that I didn’t realize that I haven’t seen many dinners on here! The chickpeas are a great idea.
Matt and I often have the meat differences, too, although I’m not a vegetarian I am trying to become a flexitarian! Haha, how’s that for non-committal?! Are you a vegetarian? From your posts I assume you are :)

Heather Eats Almond Butter April 7, 2009 at 6:59 am

Lara,
No, I’m not a vegetarian…doing the flexitarian thing too. I eat fish several times a week, and I love the occasional bison burger. I also eat chicken when we go out, but we never buy it. I fix burgers for Chris almost every night – he’s obsessed with those and sweet potato fries. So, I usually load up on fries and leave the burgers to him. :)

seeleelive April 7, 2009 at 4:30 am

I hope you like that mighty maple!! :-)

heather-your cereal creations are amazing! ice cream with oats sounds yuummy-lately my mom has been making me ice cream sundaes (Yes, i let HER do it!) and they are to tasty, i love it!!! i suggest heating up marshmallow in the microwave and spooning it onto the ice cream. it hardens immediately and creates a crusty crunchy topping. Divine!!

Heather Eats Almond Butter April 7, 2009 at 6:56 am

Lee,
Mighty Maple – so freaking good! Your marshmallow idea sounds just like Magic Shell – used to love that stuff! You can do the same thing with coconut oil because it hardens when it cools. Mixed it with melted chocolate chips, and pour in on your ice cream and wait a minute or 2…”healthy” Magic Shell! :)

Dori April 7, 2009 at 5:21 am

Love all PB&Co stuff, especially White Chocolate Wonderful!

Holly April 7, 2009 at 6:20 am

That Might Maple seriously sounds straight out of the jar worthy. Since adding PB to my oats in the morning, I crave it (and AB) ALL the time! Man, 2 p.m.? Nice!! I’m so glad I joined the world of filling breakfasts again. I am a happy girl from 9-1 p.m. :-)

I hope your back feels better! I’m super paranoid about hurting my back when I do yoga – not the most flexible girl, right here. Yep, I failed the “reach and touch your toes test” in elementary school P.E.

That dinner looks AMAZING! I’ve wondered what you eat for dinner, too. Inquiring minds want to know.

Elina April 7, 2009 at 6:47 am

What an awesome package! And I love that dinner! :)

MizFit April 7, 2009 at 6:48 am

that is a LOT of love from TEXAS. SO kind…

and I wanna check out that Mighty Maple.
I think Id love it in my oats!

~Jessica~ April 7, 2009 at 6:51 am

Yay! It’s great to see someone else who loves nut butters as much as I do. I would hide the jars hehe. I’m just lucky no-one in my house likes nut butters apart from me (yes, they are all freaks hehe)

I’ve been reading your blog for a while and all your meals look SO delicious, although I’m not quite brave enough to try spinach in oat bran just yet ; )

Your approach to eating is so refreshing and balanced, and your dinner is so droolworthy it’s not even funny. Love the blog!

~Jessica~

Diana (Soap & Chocolate) April 7, 2009 at 9:56 am

You don’t just eat breakfast all day long?! You’ve shattered my fragile little world! Oh, the humanity!

But since you mentioned it, do post your dinns and such if you feel inspired, as they are inspiring to others as well (me). If you’re to be my menu planner, you have to round things out, after all. :)

Megan April 7, 2009 at 11:31 am

Oh man I need a friend like that! The card is especially cute.

ttfn300 April 7, 2009 at 7:58 pm

ooooh, i made those chickpeas too!! i’m saving the last of my pb2 to try and make pb crackers :) i need to try that cacao bliss ;-)

runnerskitchen April 8, 2009 at 9:46 am

Wow, that dinner looks delicious. I just recently discovered your blog and I am really enjoying the focus on nut butters :-) I think that nut butter is my favorite food and could easily eat it 3 x day, 7 days a week!

D May 18, 2009 at 4:16 pm

Heather,

I have the skirt you are wearing in the picture! I bought it last summer to wear in Pakistan. Don’t know why I just got so excited seeing you had the same one :)

Take care,
D
