Salty Sweet

by HEAB on April 28, 2009

I was blown away by everyone’s comments yesterday.  Seriously, thank you so much.  Yesterday’s post had been weighing on my heart, and I just wanted to speak my truth.  So, I did, and the feedback I received completely overwhelmed me. Thanks again for all your love and support. :)

Well, after no exercise whatsoever since Friday’s ER visit, I went back to yoga today. I was up early and made a last minute decision to go to a 6 AM Vinyasa class…NOT in a heated studio.  Sanctuary Yoga is another studio in town that I really like (as does Polly :) ), and I’ve decided take more classes there rather than at Hot Yoga Nashville.  My hot yoga package ends next month, and from then on, I think I’ll just stick to Sanctuary.  Tomorrow’s plan is for a 60 minute hot vinyasa class, and yes, I’m drinking plenty of water AND eating some salt today…

Sweet AND savory breakfast.

Sweet AND Savory

This morning’s breakfast was an attempt at an omelet.  I sauteed a handful of spinach with some leftover cooked spaghetti squash.  Once the spinach began to wilt, I poured whisked eggs  in the pan and cooked everything for about 3 minutes over medium high heat.  I then added a dollop of Gena’s raw cashew pizza cheese to the center (Oh my gosh, y’all have to got make this stuff!  It tastes like creamy sun-dried tomato pesto.  Delicious!). Voila… a cheese stuffed veggie mess omelet!  On the side was a banana with walnut butter.  Perfect.

Look, I touched up the pink:

Don't you think this is Pink Ladies Jacket Worthy?

Definitely Pink Ladies Jacket worthy, no?

Back to work.  Enjoy the rest of your day my friends!

Awesome hair!!
Do you purchase yoga classes individually or do a monthly package? I get sad at how expensive yoga can be . . . just curious how you make it cost-effective.

I’ve had a busy week and just got around to reading your past few posts. These topics are just what I needed to read about, as I haven’t been able to exercise much at all recently. Finals, term papers, etc have kept me cooped up in my apartment. no exercise, and no sunlight! I’m glad to hear that otehr people, even those whom I consider strong individuals, still struggle with diet enad exercise. Just hearing you talk about it makes me feel so much more sane! Thanks for getting it all out!
Enjoy the rest of your week

I love the pink! I want to do something crazy like that. Maybe a tattoo to cover my new scar I’ll get tomorrow ;)

Thank you so much for your comment. You are a sweetheart and I love you.

I’m printing that no-cardio article out and putting it up on my fridge ASAP.

i totally used to have hair like that, but green! or purple, or blue…or pink. depends on when you were seeing me! haha!

shawna April 28, 2009 at 1:52 pm

You are so right! That cashew cheeze is amazing!! I made it yesterday as well. I kept half the batch plain (just cashews spun with a tad of water and a pinch of salt) and made the other half the italian version. YUM! The italian is perfect for savory and the plain was excellent as a rich addition to something sweet (I put a dollop on my chia pudding and drizzled with honey and berries – the cashew cheeze tasted like ricotta – soooo good!!)

Stay electrolytified!!!

Emily April 28, 2009 at 5:06 pm

Love the hair!

Your omelet looks delicious. Only you would think of putting spaghetti squash into an omelet. I’m sure it was pretty good, though! I’m about to look up Gina’s cashew cheese.

Hope yoga goes well tomorrow, and I’m glad you are drinking lots and eating some salt. :-)

Michelle April 28, 2009 at 5:32 pm

I LOVE the pink streak! So cute!

CaSaundra April 28, 2009 at 6:06 pm

Omg I love your hair–so funky and cute. What kind of hair dye do you use if you don’t mind me asking?!

Heather Eats Almond Butter April 29, 2009 at 7:38 am

Hey CaSaundra,
I’m not sure what kind of dye was used in my hair. I had it done at a salon. They had to bleach the hair first before dying it pink. Usually fades pretty quickly, but I love it while it lasts. :)

peaceandpeanutbutter April 28, 2009 at 6:09 pm

The pink is so summery!

Walnut butter sounds delicious :-)

Adi (oatonomy.com - repaired!) April 28, 2009 at 6:39 pm

The pink is great! You can definitely pull that off… if I did that, people would ask me if I was painting over the weekend and fell into the can… eek! But YOU make it look awesome!

Neat breakfast idea. I’ve never thought to add spaghetti squash to my breakfast (I’m not a big veggie at breakie person) but it looks tasty.

Hope you’ve enjoyed your Tuesday!

Ashley April 28, 2009 at 6:40 pm

This is definately a silly question, but can you explain how spaghetti squash works? You just use a normal squash, and then make spaghetti from it… (and then, if you are amazing and creative, put it in a yummy omelet.. obviously!)

Am loving the pink hair :-)

Heather Eats Almond Butter April 29, 2009 at 7:43 am

Hey Ashley!
Not a silly question at all. Here is a link to what spaghetti squash looks like: http://missvickie.com/howto/images/spaghetti.jpg. My baking method is as follows:
Cut squash in half lengthwise and scoop out seeds with a spoon. Then place on foil-lined cookie sheet face-up. Cook for 45 minutes in a 375 degree oven. After baking, simply scrape the spaghetti-like strands away from the flesh with a fork. So yummy and makes a great pasta substitute!

Galit April 28, 2009 at 7:03 pm

Hi Heather!!

I just caught up on some of your blogs. I am happy you are healthy after your ER visit. don’t want to mess with those Potassium levels! Definitely lots of avocados for you!
I am going to yoga source this summer to take more of Gillian’s classes. She teaches three times a week there. You should come! She is so fabulous. Love the pink by the way!

Heather Eats Almond Butter April 29, 2009 at 7:46 am

Galit,
Yes, I was just checking out Yoga Source’s new schedule the other day. All of Gillian’s classes are level 3…do you think that would be too advanced for me? I’d love to go with you sometime, and I really want to check out their Anusara class on Thursday evenings. Hope school is going okay!

Mandy A April 28, 2009 at 7:15 pm

I LOVE the pink!!! Too cute!

Glad you’re feeling better :) I am pretty new to yoga – definitely a beginner… but Hot Yoga has always interested me. I am just too chicken to even think of doing yoga in public! :)

Emily April 28, 2009 at 7:46 pm

That omelet pic looks beyond scrumptious – you should submit it to tastespotting! And I adore the hair – I went through a pink hair via cherry kool aide phase in high school!

Hearts for Heather!

I’m glad you’re okay! And that you’re making sure to drink lots of good fluids and feeling better.

I also loved your last post about the right kinds of foods for your body. You are so very right and it’s really eye opening. Everyone is so different. I’m so glad you wrote that.

Love the pink Lady!

Amandamoo April 28, 2009 at 10:00 pm

I keep meaning to ask when you’re moving to Colorado. I currently live in Fort Collins but will be moving to Denver in a month or two. Where will you be? What’s the plan? I’d love to get together for a Vinyasa class : )

Heather Eats Almond Butter April 29, 2009 at 7:52 am

Amandamoo,
Hurray for fellow yoginis in Colorado! :) When are we moving? Good question – just waiting for our house here in Nashville to sell. We spent last summer living in Manitou Springs, and we hope to live there as my husband loved the city’s running trails. If our house doesn’t sell, we’re still planning on spending at least a month out West like we did last year. I’d love to meet you in Denver for a Vinyasa class! Please email me after your move with your info. You can scope out a good studio for us. :)

thelongweigh April 28, 2009 at 10:07 pm

Love the sweet-salty combo, I do that for almost every meal/snack too. I like to alternate between tastes.

Pink ladies! Grease used to be my favorite movie when I was 7…I still love it.
