Why Isn't This On The Menu?!?

Saturday has been a busy, but fun day.  It started with this:

Fluffy folds of green oats.

Fluffy fields of green with almond butter.

Guess what I put in my oat bran this morning?  Ashley said it was good, and so I went with broccoli + spinach blended oats…yes, I did, and yes it was good.  I’m sure the Jay Robb vanilla rice protein powder I added to the mix helped, but it tasted just like my cauliflower oat bran.  Yummy and filling. Ashley, thanks for being brave enough to try it first. :)

Then it was off to the Titans Stadium downtown to cheer for CD in a 5K road race:

3.1 miles in 15 minutes and 36 seconds.  My man is fast!

I’d also like to give a shout-out to Jacob C. who ran an excellent race this morning as well.  Jacob is one of our running friends here in Nashville and has been following Heather Eats Almond Butter from the very beginning.  So good to see you this morning my friend!

Then it was off to hit up Costco for our weekly staples (read spinach, broccoli, hummus, and almond butter).  Afterwards, I came home and made the best salad ever:

Let’s see, the above bowl contained raw summer squash noodles, grated jicama (so delicious), spinach, red bell pepper, avocado, and steamed broccoli.  Following one of my reader’s advice (love you Briana), I made an all raw dressing with miso paste, olive oil, lemon juice, stevia, and water.  Seriously amazing.  

Why on earth do restaurants not offer more salads like this?  The salad section of menus always consist of Caesar, Cobb, or mixed greens with candied nuts, Gorgonzola & dried fruit.  Yeah, those types of salads are delicious, but what’s wrong with nothing but a variety of raw veggies and a simple dressing?  I think I need to open my own restaurant serving nothing but oat bran concoctions and Heather salads.  Would y’all dine there?  I promise I won’t make you eat broccoli oats. :)

Maggie, I blame this on you – seriously, I cannot get enough kabocha in my life.  Oh well, at least it’s helping with my Whole Life Challenge goal #5: Incorporate more vegetables into my diet, both raw and cooked. Definitely no problems there!

OK, off to think up a clever name for my new restaurant.  Any suggestions?

Oh, and someone’s birthday is tomorrow.  I’ll give you a hint…she’s my guacamole muse. :)

I think CD deserves the recognition though!- A smoking 15:36 5k on a hilly course!! I was almost 2 mins behind! Does he run with the dogs?- I bet Einstein could out-run me..lol..

No offence to 99% of your readers Heather, but I was just thankful to not get beat by a woman today ;-) There were 2 on my heels the whole race- I couldn’t shake them off!

Guess where I went for lunch??- Rakka! I got the tandorini chicken and cheese along with the rice pudding, pretty good! I mowed a customer’s yard for free– in exchange they would take me to lunch at a restaurant of my choice ;-p.. I don’t know how fair of a trade that was for a $40 yard … hmmm, good company though..

And if you decide to open your own restaurant I’ll be a regular ;-)
How about “Heather SHARES almond butter” or “its always better with almond butter”
“almond butter and massage junction”…ehhh… I suk at this..

Do you have any other restaurant recommendations? We need some reviews ;-)
I wasn’t expecting it, so I didn’t have my camera or I would have took some pics for you to post!..

( I’ll probally have something deepfried in bacon fat tonight to make up for it though…kidding ;-p)

I completely agree-restaurants just don’t offer enough options that can be filling enough, and fun to eat! I’m sick of the basic greens with tomatoes and cucumbers. I’m sick of the salad with nuts and cheese! I want the good stuff that all of us bloggies put together! :)

If Bobby and I get another cat we’re naming it Kabocha (our cat now is named Couscous). If we open a restaurant it’s going to be called “Couscous & Kabocha”. Or just “Cous & Kabocha”. We haven’t decided yet.

I would also be a regular customer. My kind of salad, for sure! I prefer avocado to be my healthy fats. Even when I ate cheese, I always hated it in salads!

I used to put broccoli in my oats all the time when I was vegetarian (it also included cheese). It was so good. Savory oats are yummy. Hm, I haven’t had that in awhile actually.

I want some squash now, it looks so good!

I’m SO with you on the restaurant salad thing!! There are so many delicious varieties and creations you can do with salads, the possibilities are endless, and yet every restaurant offers the same four boring choices. I would go to Nashville just to visit your salad place ;)

Whoa…CD’s time is super impressive! Wow! Congrats to him!
I enjoyed your last post about your massage practice. It must be such a great feeling to love what you do. I am hoping to find that someday soon! I’ve seen multiple massage therapists about these unbeievable knots I get in my shoulders. They’ve always been there but recently the build-up is really bad and my shoulders just deeply ache, seriously “craving” a massage to work out those knots. Ever therapist I see is surprised by the knots and say that regular massage will help, but I’ve spent tons of money on massages and it only seems to help in the very short-term.
Am I just not seeing the right type of therapist, or is there anything else you would recommend to relax the shoulders? I’m trying to spend less time at the computer and I’m always pretty conscious of my posture. I don’t know what to do!
Sorry for the novel but my shoulders are hurting now as I write this so I thought I would ask ;)

I wish restaurants would offer salads like that! I’m so sick of iceberg lettuce! I would most definitely dine at your restaurant! I vote for ‘Heat The Salmon Butt’ as your restaurant name but that might be a bit misleading ;)

I agree, restaurants need more salads like the one you made! The only ones that usually resemble that are “house salads” which contain more lettuce than anything else. BOR-ING!

I agree with K, “Heat the Salmon Butt” should be the name of your restaurant!

Heather- I went to the farmers market after work a little while ago.. Not a single kobacha squash! seriously, don’t these farmers know that if HEAB’s blog features a kobacha- that demand is going to go up 10525%!!

That oat bran looks EXTRA delicious. Must be the broc. I’d be a little afraid to try it but if it works then I guess why not load it up with as many veggies as you can?!

Kombocha YUMMM!!! I took mine with me and ate some there. A few people tried it and loved it cooked as fries. I havent cooked broccoli in for eves. I wanna give you your present!!! Do you wanna wait till I get back from DR or try to meet up before?
