Logging The Miles

This morning, I got up and walked 3-miles with the pups.  Came home for a bowl of oats, and then decided to go on a 6-mile walk of my own. Would you like to join me?

After I got home, I took the pooches out for a bit of fresh air and decided to give VeggieGirl a call.  VG is back in NYC and happen to be in Whole Foods when I called her.  Then, who should she run into, but Diana from Soap and Chocolate.  So, I got to say “Hi” to Diana as well – two of my favorite bloggers in one of my favorite stores is one of my favorite cities.  It truly is such a small world.  Love you girls! 

So, I don’t know if its all the walking, the yoga, the altitude, or what, but I cannot satiate my hunger.  Some random eats in an attempt to quiet my belly…

There are no huge salad bowls in the house we’re renting, and so I raided the cookware cabinet for the biggest pot I could find. Into the mix went a little of everything:

  • 1 Head chopped romaine and several handfuls of spinach massaged with juice of 1/2 a lemon, 1/2 avocado, and 1/2 packet of stevia.
  • Grape tomatoes 
  • Raw corn
  • Chopped cucumber
  • Blue tortilla chips
  • Huge chopped grilled Chicken breast

Reader Deb was kind enough to send me some more xanthan and guar gums, and I love how they fluff and thicken my smoothies.  Thanks again Deb!  Have y’all tried the gums yet?

Oh, and I made Sarah’s zucchini chips.  Mine were a bit soggy, and next time I will slice the squash a bit thinner.  Still good though!

That’s it for now folks…I’m off to haul our trash to the local landfill.  Yes, we are truly in the boonies.

Holy Moly! A 9 mile walking day?! I am seriously impressed! I top out at 5 miles a day.

Hmmmm, Hugh Lass Pot Salad. And I mean soup pot, not that other kind of pot…

I think a trip to the land fill just might make us ALL apprecieate how nice we got it!

I got thru hungry weeks all the time! It scares me but also I always just know my body must need it!

I still need to try rhubarb smoothie. Sounds so taste!

That’s a lot of walking, but I’m sure time just flies by the scenery is that gorgeous. Beautiful horses on the way too!

I swear I had the same HUGE salad today except rather than eat out of a pot, I separated mine into 3 different large plastic storage containers to bring with me to work because I didn’t have a container large enough. I think my coworkers think I am CRAZY!! Whatever, a girl needs her greens ;) !

Yeah for K! I made oat groats finally…although they didn’t make my ME meal challenge, I did eat them slowly, alone…

Oh wow!! I know what I’m doing with the rest of my zucchini now! That’s such a good idea! And I’m loving the salad in a pot!! That’s the best way to eat them!!

…I think you’re so hungry because you are getting a lot more exercise than you think you are… and not the kind you measure in miles… just minute to minute… you pioneer woman!

OK…Because you are up on this stuff… and obviously i am not… or else you know probably know someone bloggerey who is up on this stuff …What is YERBA MATE? My cool SanFran friend mentioned in an email he was sipping on one and i thought… huh? a what? Being just a midwestern nerd ya know i am YEARS behing on new hip things..

Am i missing out on something here or is it just a non thing…help?

I’ve definitely never tried the gums but I’m super curious and always up for thicker smoothies. Must search these out! And a rhubarb smoothie is pretty much genius. I can’t believe I never thought of that!

I often find that the salads I make are just too big for the bowls that I want to put them in. Or else all the bowls that I own are just completely inadequate.

I’m from Vermont and we always have to haul our trash to the landfill. It’s annoying, but it does give you a better appreciation for where your trash ends up!

The scenery is beautiful! Walking can be so great for mind clearing and exercising. People tend to overlook the value of a great walk.

I use xanthum gum quite a bit for just general thickening for sauces, dips, dressings, but have never tried guar gum. What’s the major difference you notice? Colorado looks beautiful, enjoy your time there!

Must try those zucchini chips! I’ve been way short on sleep this week between teaching VBS, carting around new arrivals, diving, and other randomness so I haven’t “cooked” at all. We’ve been living on leftover jerk ribs and chicken from sat’s party…and lots of salad with raw veggies. Or protein powder mixed in my morning coffee. We’re diving right after lunch tomorrow so maybe I can actually cook for our family tomorrow night! (can you tell I’m taking advantage of my husband’s week of leave before we lose him for the latter half of 09?!) :)

That really is a beautiful place…easy to see how you could crank out 9 miles just wandering and admiring!

What a beautiful place to walk! You are really logging a lot of miles! No wonder you are so hungry!

I made zucchini chips recently and they were good but didn’t really get crispy like I wanted. So, I sliced some and dehydrated them to see if they would get crispy. They still weren’t what I wanted but I think if I would have let them dehydrate a little longer, they would have gotten crispier. I ate them all up though, so they must not have been too bad:)

Friend, what kind of shoes do you wear to walk nine miles? When I finished my four-miler the other day, my feet, ankles, lower back, and hips were screaming. What keeps your bones feeling good on a long walk like this? Do you have to stop and stretch throughout? I’d love to get up to nine miles–walking is the best!

The 6 mile walk looks absolutely delightful! I need to get away and do some walkings and runnings out in the middle of nowhere like that!
Also – I don’t own big salad bowls and always use what you have going on for mine!! Make do, right?!

I am still smiling that I got to talk to you yesterday. You have no idea how you and Liz totally made my day! NYC is totally the smallest big city.

I would have done likewise with my salad too – I have been known to eat salads from legit mixing/serving bowls. I’m sorry, but I don’t even want an appetizer sized plate to LOOK at my salad, let alone hold it. Salads must be forest-sized. Period.

Haha – when we would go up north (that’s what us south MI kids call the northern tip of MI) we had to take our garbage to the landfill too!

Gorgeous scenery, I love the west! Your salad looks amazingly delicious :) The bigger the better when it comes to veggies!

What beautiful scenery! Thanks for bringing us along on your walk. What is the weather like there? Is it pretty hot and/or humid or cool since you’re in the mountains? I’ve been thinking about trying rhubarb and maybe beets in my juices. Are they sweet? It might add a nice red color. I have 2 gimongous butternut squashes and a ton of zucchini. Time for fries! :)

i use bowls like that all the time, and kyle used to think it was weird (like years ago) and now he uses them all the time too.

the view in those pics is amazing.

Hey Heather!! Love the eats,you always come up with such tasty recipes. My mouth was seriously hanging open at CD’s food intake–a whole HEAD of romaine??!! lol. But then again he NEEDS it cuz he runs a crazy amount of miles. Fuel for Fuel right?
Anyway, did you know that you are in my HOMETOWN!! I think that is so awesome. Colorado is really a gorgeous state, especially the constant backdrop of those beautiful Rocky mountains and our summer sunsets. What part of CO are you in?
Also, as far as produce goes I have found that the BEST deals are at Sprouts markets. Did you know you can get a pound of apples for only 99c, and a whole watermelon for 10c a pound!! I love that store. Their prices completely blow Whole Foods out of the water and they are all-natural and all-organic so I never have to worry about what’s in my food.
Wow…i totally sounded like some advertisement just then. oh well. just wanted to let you know!

Yes, I’d be hungry too after walking 9 miles. The difference would be that i’d be reaching for a pizza pie not an over-sized salad :-) . Keep up the hard work and dedication.
