To celebrate kabocha squash, a haiku…

Your sweetness overwhelms me.
I shall eat you everyday.

On September 22, 2007, two years ago today, Chris and I were married…

Biking in Tuscany on our honeymoon.

Happy Anniversary CD. Love you so much!!!!

And last, but not least, my prayers have been answered…

Nashville is finally getting a Chipotle!

'Bout Time!

Don’t forget to enter my Nuttzo Omega-3 Multi-Nut Butter Giveaway and stay tuned tomorrow for my review of the So Delicious Coconut Milk Creamers. Off to continue today’s celebrations with some yoga. Bye.

P.S. Be sure to stop by Justine’s Blog, Confessions of A SAHM, for a chance to win some free Kombucha…as in the fizzy fermented drink, NOT kabocha, as in my (& Maggie’s) beloved squash. ;)

HAPPY ANNIVERSARY!!!! I’m so happy for the two of you, as you make an amazing couple, and are so supportive of each other. Here’s to 100 more years! :)

Sweetie Pie September 22, 2009 at 8:47 am

I love the haiku and the photos. Congrats on your anniversary… and on Chipotle! ;-)

Averie (LoveVeggiesAndYoga) September 22, 2009 at 8:51 am

Happy Anniversary Heather, I hope you guys are always this happy :) I beat you to the Coconut Milk Creamer review…I just did one today
http://loveveggiesandyoga.blogspot.com/2009/09/less-cookin-more-shoppin.html
Anyway, I freakin’ dig it. The singular drawback is price…it’s on my permanent grocery wish list. Can’t wait to see what you think of it!
And glad you said komboucha’s a bitch to cut. I have always been wondering if it’s just me who thinks that (and I’ve never even tried but heck watermelons scare me sometimes LOL)
Continued blessings and love to you both!!!!!!!

HAPPY ANNIVERSARY! Such a gorgeous, happy couple. :D

And yay for Chipotle! I don’t have a Chipotle near my house, but there are several locations in Colorado Springs… Which makes my moving there January all the more fabulous. ;)

HAPPY ANNIVERSARY!!! You two are such an amazing, gorgeous couple. :-) Love all of the pics!

Amy September 22, 2009 at 8:56 am

Happy Anniversary! Such a precious couple :)

I just found kabocha. So excited!

jacobc September 22, 2009 at 8:58 am

I’m not to much of a gardner.. do you have a garden of some sort?

I purposely dispursed some of the seeds from those watermelons from the farm in my yard in hopes some of them might “take” next spring. I wonder if kabocha seeds would do the same if i threw them out in the yard? I know regular yellow squash is easy to grow, not sure about the kabocha.

Heather Eats Almond Butter September 22, 2009 at 9:03 am

JacobC,I have no green thumb whatsoever, but CD was thinking of doing the same thing with the watermelon seeds. So funny. Not sure about the squash, but definitely worth a try! As far as anniversary plans go, we’re going out to eat at Park Cafe in Sylvan Park. My favorite restaurant in Nashville, and our wedding ceremony took place on their back patio.

Sharon September 22, 2009 at 9:01 am

Hi Heather!

Happy Anniversary to You and Chris!

Kabocha is delicious. I eat it with AB almost every week. :)

Alisa - Frugal Foodie September 22, 2009 at 9:02 am

Aw, happy anniversary!

On a squash note, can you roast the kabocha whole? Butternuts are a bitch to cut too, but I discovered that you could actually roast them whole, making them uber-easy to cut!

MelissaNibbles September 22, 2009 at 9:05 am

Happy Anniversary!

balancejoyanddelicias September 22, 2009 at 9:08 am

happy anniversary! So happy for you lovely couple! :)

Congratulations!!! What a perfect fall day to be married :)

Hooorayyyyy for kabocha!

Fallon September 22, 2009 at 9:16 am

I was at wholefoods yesterday and forgot about the creamer! But I did notice So Delicious now carries Coconut Milk Keifer. I didn’t pick it up because it have no protein and a whole lot of sugar! I was eying for the vanilla flavor which I think may be good in oatmeal or a smoothie and can up the protein with with those items.

Heather Eats Almond Butter September 22, 2009 at 9:22 am

Fallon, I love the coconut milk kefir: http://heathereatsalmondbutter.com/2009/07/10/coconut-milk-kefir/, and it makes the most amazing ABU: http://heathereatsalmondbutter.com/2009/07/11/you-asked/. Yes, too bad about the protein content, but still good stuff!

brandi September 22, 2009 at 9:22 am

Happy Anniversary!!! I hope you two enjoy your day :)

Marissa September 22, 2009 at 9:27 am

Happy Anniversary Heather!

That Kabocha looks delicious. I’d cook up a pot of my kabocha stew tonight, but I got some super fresh green veggies I have to eat first!

mmmmm kabocha *drools*

Kim C. September 22, 2009 at 9:32 am

Happy Anniversary!!!!

Didn’t even know we were getting a Chipotle… can’t wait!!

Heather Eats Almond Butter September 22, 2009 at 9:35 am

Kimberly,Yep, right on West End where Bittner’s used to be near Ted’s Montana Grill. Cannot wait myself!

Peace and Peanutbutter September 22, 2009 at 9:37 am

Heather, your kabocha looks fabulous!! What do you do when you roast it? Do you use olive oil/cooking spray/spices?

Great haiku :-)

HAPPY ANNIVERSARY!! Hope you have a wonderful day with CD!

~Erika

Heather Eats Almond Butter September 22, 2009 at 10:19 am

Hey Erika,I add nothing to my squash. Just chop and place on parchment lined baking sheet in a 425 degree oven for about 50 to 60 minutes. Perfect on its own in my opinion.

Dawn (HealthySDLiving) September 22, 2009 at 9:48 am

Happy Anniversary! :) Hope you guys have a wonderful day!
Ugh I’m sooo jealous…I need a Chipotle to open closer to me!

Claire September 22, 2009 at 9:49 am

Hope you have a FAB dinner at Park Cafe – it is a great place!!

Carolyn September 22, 2009 at 7:03 pm

I would have gotten the Tuna Sashimi, and a crab cake for the appetizer… the scallops, and a side of asparagus for dinner…… and PLEASE tell me someone ordered the Bananas Foster Bread Pudding..even WITH all that sugar….i have stabbed Paul in the back of his hand with my fork for the last bite, when we split it, at the Chop House in Ann Arbor… until they quit featuring it…:-(

Hope you had a great night…and as we say in my family… Happy Bananaversary…(two weeks from today… 25 years…)

Heather Eats Almond Butter September 23, 2009 at 4:26 am

Carolyn, You are too funny. We ordered the crab cakes – oh my gosh, so rich and good. For dinner, I had one of the specials – mahi mahi, and I ordered a side of Schezwan green beans (amazing – get them every time I go there). No Bananas Foster…we were stuffed!

Great Haiku! I love writing them…there’s just something about the syllable constraints that really concentrates the essence of the creative process of poetry…they’re always so beautiful or amusing, depending on the author’s intent.

Ahh, why oh why have I never seen a Kabocha squash!? Virtually every other type in UK supermarkets, but never the sqaush King (Queen?)

Happy Anniversary! You two look so lovely together and it’s great that you even had a fitness-focused honeymoon!

<3
