I had one tonight that wasn't fully ripe, and it did not taste nearly as sweet. Anyway, they are normally sweeter than butternut, but not as sweet as sweet potatoes. The texture is a bit dry when roasted (great for fry making!) - not mushy and not at all stringy like butternuts. My favorite winter root vegetable for sure. HEKS...I dunno.
