Guess What Today Is?

Pancake Sunday! This morning, I tried a new version of Katie’s Brownie Batter Pancakes. They tasted kind of weird, but I’ll share the recipe with you anyway.

Ingredients:

1/2 cup teff ground into flour in the Vita-Mix…hence the weirdness. I was aiming for a gluten free batter. Stick with buckwheat or gluten free baking flour. P.S. Dear Bob’s Red Mill, please start selling teff grains in Nashville. Oh, and while you’re at it, add guar gum to the list as well. Thank you.

1 scoop (30 grams) Jay Robb Chocolate rice protein powder (I always throw the scoop that comes with Jay Robb out and use a smaller one)

Pinch of Celtic sea salt

1/2 square Baker’s unsweetened baking chocolate crushed in food processor

1/8 cup canned pumpkin

1 egg white

1/3 cup water

Directions:

Mix dry ingredients, including chocolate. Mix wet ingredients and add to dry. Cook pancakes in a non-stick skillet over medium high heat.

HEAB’s toppings of choice today:

1/3 TBSP soy-free Earth Balance

1 heaping spoonful PBU (Trader Joe’s crunchy peanut butter, So Delicious Coconut Milk Kefir, stevia)

1 tsp maple syrup (365 brand Grade B)

Yeah, so the first bite was weird, but that didn’t stop me from eating them. Things got much better when I would get a mouthful of pancake, melted chocolate, PBU, and maple syrup. Heavenly! According to Katie, the recipe yields enough pancakes for 2. Um, not in my house Katie. I ate them all while Chris was out doing his long run. Sorry CD! :)

I try not to count calories, but I usually have a running total going in my head throughout the day. However, lately I have been tracking most of my daily eats since I’m trying to increase my protein (more about that soon). For most of my recipes, I never figure up calories, etc. per serving, but I was curious this morning…read, I was kind of freaking out since I ate the entire batch of pancakes and had to know how many calories I just consumed in under 5 minutes. So, I thought I’d share. (Totals include toppings)

Hmm, a bit more than I like to have at breakfast, but oh well. Those bites o’ heaven were totally worth it!

Oh do not worry, dear Heather! I eat one serving (oh ok, 1 and 1/2…), but I ALWAYS have something else too, like scrambled tofu-veggies, a banana smoothie, or what have you ;) .

P.P.S. Please tell me you’re stocking up on kabochas for when I change my permanent residence to Nashville. Also, if you could arrange a meeting with your bud Keith, I’d be very appreciative.

You just made me have a really big craving for some pancakes. I never give myself enough time in the morning to whip up a batch from scratch, but yours look so good that I may have to wake up a few minutes early to get some going!

Yum, pancakes. I usually have the *open pancake box, add water* thing going through…no patience for all that food processing :)
Funny you are upping your protein…different strokes for different folks…I like have meals often with virtually all-carbs, no joke :)
Oh, and only 600 cals for breakfast ??? Do not sweat it, I can beat you on that one easy anytime!…and a snack soon after to boot :)

2 things to know:
- serving sizes are never right in my book…
- chocolate chips are a must for pancakes

The calorie content of your breakfast isn’t all that hefty when you factor in the awesome amount of protein you got out of it. And, hey, they were pancakes! That’s a dense breakfast that’ll keep you chugging with a happily content stomach all day.

Hey Heather! I eat almost the exact same as you- veggies, eggs, protein powder, gluten-free grains, legumes and no fruit, sugar, soy, gluten or processed stuff! I also had a pancake this morning and for my flour, I ground up 1/2 cup of gluten-free oats + tablespoon ground flax + water. Then I cooked it in a pan with some coconut oil. Turned out fabulously!

Lauren, I love using ground up oats in pancakes…trust me, it works much better than teff! Glad you enjoyed Pancake Sunday as well. :)

What a great start to your day. At 100 calories a minute, I think that’s a great way to get your tummy feelin’ groovey all day. Hey, at least it was chocolate. I have done shots at the rate of 1 per minute and 5 mins and 500 calories later feeling less than ideal :) LOL

Cant wait to hear what this whole protein thing is about. I have this feeling you are making an announcement…but then again I really don’t. You’ve got me wondering!

I had a pancake sunday here too! I made Banana Cream pancakes with almond butter and maple syrup. So good. I wish I had some soy free earth balance to round out my meal though :)

I’ve been trying to get more protein too, I got some tempeh in the oven, getting ready to be made into that chicken salad you posted!

Oh I freeeak when I have too many cals before lunchtime. But ya know my friend, I’ve heard you worry about this before and yet you aren’t gaining weight and look fab. Guess it all evens itself out.

Gotta tell you Heather, I was actually EXCITED to check out your blog today because I knew it was Sunday, aka pancakes haha makes me feel like I’m looking at my own kitchen table. :) I understand the minor freak out, btw, but don’t worry- pancakes are guaranteed to fill your belly for a loooong time.. and they’re happy food, I promise!

I like the pancakes! And HEather you have to eat 3500 calories extra to gain one pound, relax :)

Recovery from my food issues has been so slow going. I get worried if I feel like I go “over” my breakfast calories, but that’s because I will sit there and dwell and stress until I finally can’t take the anxiety that I go eat MORE (blew it, might as well).

Ugh, eating healthy, wonderful foods should NOT be stressful, but I let it get to me. As soon as I feel like i screwed up, it’s all over. You’re really an inspiration, HEAB!

I enjoyed pancake Sunday too. Yum. Only mine were blueberry… not nearly as exciting as Brownie Batter, eh? I still have to try those!

Don’t sweat the calories. That’s how much I have for breakfast every day, and trust me – that would NEVER count as two servings here at my house. Hahah. Have a great day!

Oh I have enjoyed the Brownie Batter pancake recipe more than once, and not because the portion lasted me for two servings! I hear ya – it’s definitely a recipe for one. ;)
