Guess What Today Is?

by HEAB on November 15, 2009

Pancake Sunday! This morning, I tried a new version of Katie’s Brownie Batter Pancakes. They tasted kind of weird, but I’ll share the recipe with you anyway.

1/2 cup teff ground into flour in the Vita-Mix…hence the weirdness. I was aiming for a gluten free batter. Stick with buckwheat or gluten free baking flour. P.S. Dear Bob’s Red Mill, please start selling teff grains in Nashville. Oh, and while you’re at it, add guar gum to the list as well. Thank you.

1 scoop (30 grams) Jay Robb Chocolate rice protein powder (I always throw the scoop that comes with Jay Robb out and use a smaller one)

Pinch of Celtic sea salt

1/2 square Baker’s unsweetened baking chocolate crushed in food processor

1/8 cup canned pumpkin

1 egg white

1/3 cup water

Mix dry ingredients, including chocolate. Mix wet ingredients and add to dry. Cook pancakes in a non-stick skillet over medium high heat.

HEAB’s toppings of choice today:

1/3 TBSP soy-free Earth Balance

1 heaping spoonful PBU (Trader Joe’s crunchy peanut butter, So Delicious Coconut Milk Kefir, stevia)

1 tsp maple syrup (365 brand Grade B)

Yeah, so the first bite was weird, but that didn’t stop me from eating them. Things got much better when I would get a mouthful of pancake, melted chocolate, PBU, and maple syrup. Heavenly! According to Katie, the recipe yields enough pancakes for 2. Um, not in my house Katie. I ate them all while Chris was out doing his long run. Sorry CD! 🙂

I try not to count calories, but I usually have a running total going in my head throughout the day. However, lately I have been tracking most of my daily eats since I’m trying to increase my protein (more about that soon). For most of my recipes, I never figure up calories, etc. per serving, but I was curious this morning…read, I was kind of freaking out since I ate the entire batch of pancakes and had to know how many calories I just consumed in under 5 minutes. So, I thought I’d share. (Totals include toppings)

Hmm, a bit more than I like to have at breakfast, but oh well. Those bites o’ heaven were totally worth it!

Don’t forget to send me your Katie inspired POM Wonderful pomegranate recipes by tonight at midnight. 2 winners will receive a shipment of 5 POM Wonderful pomegranates each.

P.S. Not only is it Pancake Sunday, but it’s also my sister-in-law’s birthday. HAPPY BIRTHDAY TABBY!!!!

Diana (Soap & Chocolate) November 17, 2009 at 1:32 pm

Oh I have enjoyed the Brownie Batter pancake recipe more than once, and not because the portion lasted me for two servings! I hear ya – it’s definitely a recipe for one. 😉

CaSaundra November 17, 2009 at 8:11 am

Brownies for breakfast?! Yesss please 🙂 I always am trying to fit more protein into my diet as well, and iron because I am always low on iron.

Lara (Thinspired) November 16, 2009 at 10:23 am

Thanks for the link! Not sure if I have checked that one out yet. I’ve been using Spark People, which is really good. I’ll see how this compares 😉

Pure2Raw Twins November 16, 2009 at 7:33 am

I love pancakes and would always overeat on them, so my thing is for pancakes calories and all do not count!! I think they look yummy, I would have inhaled them too ; )

Liz November 15, 2009 at 11:47 pm

Mmm…I love pancake Sunday. It was waffle Sunday in my house. Love relaxing and delicious Sunday breakfasts!

BroccoliHut November 15, 2009 at 10:58 pm

Oh man! I can’t wait until Thanksgiving break when I’ll finally have some time in the morning to make pancakes!!

Melissa S. November 15, 2009 at 7:44 pm

what a great way to start a sunday morning!!! i want pancakes now!

livingfreeforever November 15, 2009 at 7:41 pm

Holy cow, that pancake breakfast looks good! I may have to concoct some kind of pancakes for myself very soon.

Loved your response to Mama Pea! Cracked me up!

organicashley November 15, 2009 at 7:39 pm

Awesome Protein in those babies. Jay Robb is sending me some protein to sample I am really excited. I know how you love them.

Heather Eats Almond Butter November 15, 2009 at 7:53 pm

Organic Ashley, Love love love Mr. Robb. 🙂

psychoj1 November 15, 2009 at 7:23 pm

I think it should be pancake day every day 😀

Kate November 15, 2009 at 7:07 pm

I enjoyed pancake Sunday too. Yum. Only mine were blueberry… not nearly as exciting as Brownie Batter, eh? I still have to try those!

Don’t sweat the calories. That’s how much I have for breakfast every day, and trust me – that would NEVER count as two servings here at my house. Hahah. Have a great day!

prettyladycmu November 15, 2009 at 6:59 pm

Thanks for providing such a good attitude toward food and indulgences like this. It means so much!

Mama Pea November 15, 2009 at 6:57 pm

It was pancake Sunday for us too! WHOOHOO! Of course, every day is pancake day….in my bra!

Heather Eats Almond Butter November 15, 2009 at 7:34 pm

Mama Pea, I just spit out the water I was drinking when I read your comment. I’m sending you the repair bill. 😉

Jessica November 15, 2009 at 6:12 pm

THose look incredible!

M November 15, 2009 at 5:59 pm

Recovery from my food issues has been so slow going. I get worried if I feel like I go “over” my breakfast calories, but that’s because I will sit there and dwell and stress until I finally can’t take the anxiety that I go eat MORE (blew it, might as well).

Ugh, eating healthy, wonderful foods should NOT be stressful, but I let it get to me. As soon as I feel like i screwed up, it’s all over. You’re really an inspiration, HEAB!

eatmovelove November 15, 2009 at 5:46 pm

Looks delish! And that’s not too much at breakfast girl!! That sounds just about right 🙂 Good fuel for the mind and body.

Sweet Cheeks November 15, 2009 at 4:17 pm

Awesome way to start out a Sunday! I need to remember this for next weekend…better yet, how ’bout Pancake Monday? It has a nice ring to it, I think. 😉

Heather Eats Almond Butter November 15, 2009 at 5:08 pm

Sweet Cheeks, Pancake Monday…I like it. 🙂

Maggie November 15, 2009 at 4:11 pm

I want to hear about protein! Also how avoiding grains might be good (though I don’t think I would try that again – too hard). P.S. Going to WF later tonight and will check on Teff!

Erin November 15, 2009 at 3:09 pm

Ohhh yum! Those look so good! I had been doing Pancake Sunday for a while this summer and think I need to bring it back.

eaternotarunner November 15, 2009 at 2:52 pm

Well those look awesome! Pancake sunday is an awesome idea 🙂

Lara (Thinspired) November 15, 2009 at 2:47 pm

Oh Heather, I am so behind on HEAB. I am so embarrassed. I hope we can still be friends 🙂 What have you been using to track your intake? These pancakes look fabulous. Worth the calories…and look at all that protein and fiber!

Heather Eats Almond Butter November 15, 2009 at 3:05 pm

Lara, Justine told me about this site: I love it – they have EVERYTHING in their database. So much better than Fitday. Never feel bad for getting behind on HEAB! I know you’ve been busy with your mama in town. 🙂

Dawn November 15, 2009 at 2:45 pm

We love the way you tell a pancake story! :)d

Carrie November 15, 2009 at 2:20 pm

I like the pancakes! And HEather you have to eat 3500 calories extra to gain one pound, relax 🙂
I think the protein announcement is that you are going to be a spokesperson for Jay Robb ! 🙂

The Pancake Girl November 15, 2009 at 2:14 pm

Gotta tell you Heather, I was actually EXCITED to check out your blog today because I knew it was Sunday, aka pancakes haha makes me feel like I’m looking at my own kitchen table. 🙂 I understand the minor freak out, btw, but don’t worry- pancakes are guaranteed to fill your belly for a loooong time.. and they’re happy food, I promise!
-joelle (the pancake girl)

Deb (Smoothie Girl Eats Too) November 15, 2009 at 1:53 pm

Oh I freeeak when I have too many cals before lunchtime. But ya know my friend, I’ve heard you worry about this before and yet you aren’t gaining weight and look fab. Guess it all evens itself out.

Heather Eats Almond Butter November 15, 2009 at 3:06 pm

Thanks Smoothie Girl Deb. You’re so right…as always. 🙂

shelby November 15, 2009 at 12:48 pm

I had a pancake sunday here too! I made Banana Cream pancakes with almond butter and maple syrup. So good. I wish I had some soy free earth balance to round out my meal though 🙂

I’ve been trying to get more protein too, I got some tempeh in the oven, getting ready to be made into that chicken salad you posted!

Heather Eats Almond Butter November 15, 2009 at 3:07 pm

Shelby, Your pancakes sounds amazing, and I think you will love that chicken salad recipe. Thanks for the reminder that I need to pick up some tempeh and make it again!

Erica November 15, 2009 at 12:00 pm

Sorry the taste was a little off- they look totally delicious though! Hope you’re having a relaxing Sunday

homecookedem November 15, 2009 at 11:51 am

I, too, have a feeling you have some sort of announcement… hmmm, what are you up to HEABs?! 😉

Those pancakes sound/look amazing!! 🙂 Enjoy your Sunday!!

Averie (LoveVeggiesAndYoga) November 15, 2009 at 11:39 am

What a great start to your day. At 100 calories a minute, I think that’s a great way to get your tummy feelin’ groovey all day. Hey, at least it was chocolate. I have done shots at the rate of 1 per minute and 5 mins and 500 calories later feeling less than ideal 🙂 LOL

Cant wait to hear what this whole protein thing is about. I have this feeling you are making an announcement…but then again I really don’t. You’ve got me wondering!

Jenny November 15, 2009 at 11:16 am

brownie flavored pancakes are an amazing way to start your Sunday morning 🙂 Have a great day, Heather!

Jenn (eating bender) November 15, 2009 at 10:59 am

Mmm gotta love pancake Sundays! I am admittedly a sucker for all recipes that start out with, “They tasted kind of weird, but I’ll share the recipe with you anyway.” 🙂 Bring it on!

Happy Birthday to Tabby!

Lauren November 15, 2009 at 10:47 am

Hey Heather! I eat almost the exact same as you- veggies, eggs, protein powder, gluten-free grains, legumes and no fruit, sugar, soy, gluten or processed stuff! I also had a pancake this morning and for my flour, I ground up 1/2 cup of gluten-free oats + tablespoon ground flax + water. Then I cooked it in a pan with some coconut oil. Turned out fabulously!

Have a great Sunday! 🙂

Heather Eats Almond Butter November 15, 2009 at 3:01 pm

Lauren, I love using ground up oats in pancakes…trust me, it works much better than teff! Glad you enjoyed Pancake Sunday as well. 🙂

Marissa November 15, 2009 at 10:36 am

Perfect Sunday breakfast!

kbwood November 15, 2009 at 10:29 am

you go girl!! that looks awesome!

Carolyn November 15, 2009 at 10:21 am

By noon that 596 will seem small for a days total… 😉 Great combo…

I need to get some of that butter wanna-be Earth Balance… Adds a wonderful visual

Chelsea Ward November 15, 2009 at 10:21 am

The calorie content of your breakfast isn’t all that hefty when you factor in the awesome amount of protein you got out of it. And, hey, they were pancakes! That’s a dense breakfast that’ll keep you chugging with a happily content stomach all day.

calmkindpeace November 15, 2009 at 10:15 am

Yum, pancakes. I usually have the *open pancake box, add water* thing going through…no patience for all that food processing 🙂
Funny you are upping your protein…different strokes for different folks…I like have meals often with virtually all-carbs, no joke 🙂
Oh, and only 600 cals for breakfast ??? Do not sweat it, I can beat you on that one easy anytime!…and a snack soon after to boot 🙂

2 things to know:
– serving sizes are never right in my book…
– chocolate chips are a must for pancakes

Evan Thomas November 15, 2009 at 10:11 am

That breakfast sounds great! And if ever there’s a meal to eat too much during the day, it’s definitely breakfast, so no worries 🙂

Anna November 15, 2009 at 10:11 am

You just made me have a really big craving for some pancakes. I never give myself enough time in the morning to whip up a batch from scratch, but yours look so good that I may have to wake up a few minutes early to get some going!

justrun November 15, 2009 at 10:07 am

From a girl who doesn’t like chocolate, I gotta say, those look pretty good!

Chocolate-Covered Katie November 15, 2009 at 10:06 am

Oh do not worry, dear Heather! I eat one serving (oh ok, 1 and 1/2…), but I ALWAYS have something else too, like scrambled tofu-veggies, a banana smoothie, or what have you ;).

P.S. Jay wants me to let you know that he was very excited to be included in your breakfast today. He very much enjoys your company.

P.P.S. Please tell me you’re stocking up on kabochas for when I change my permanent residence to Nashville. Also, if you could arrange a meeting with your bud Keith, I’d be very appreciative.

Heather Eats Almond Butter November 15, 2009 at 10:20 am

Katie, The kabocha is stocked, and both Keith and Scottie are waiting…;)

candice November 15, 2009 at 10:06 am

Hehe, I love how you always experiment with different ingredients/combinations. Your exploits are always so fun to read about 🙂

Happy Sunday!

Abby November 15, 2009 at 10:06 am

Perfect way to start a Sunday!! Enjoy it 😉

Light Delight with Tou Tou November 15, 2009 at 10:05 am
