Smoothie Girl Pancakes

Did you guys see Deb’s most brilliant smoothie post today? If not, you better go read, for it was the inspiration behind my breakfast this morning.

Pancakes came one day early this week…

That’s right. It was pancake Saturday in the HEAB household. I made a batch of protein pancakes using Jay Robb chocolate rice protein powder, but the topping was the star of the show. I used the following ingredients to make my very own Mole sauce:

I stirred together 1 heaping spoonful of reader Carolyn’s chipotle almond butter, 2 tsp cocoa powder, 2 tsp espresso powder (could sub instant coffee grounds), cinnamon, 1 packet of stevia, and a little water to thin. Oh, and I did add 1 squirt of peanut butter flavored FrankenSyrup (I blame Deb for this purchase. Not necessary in the recipe…but really good none the less. ;) )

My sauce coupled with a bit of soy free Earth Balance and extra cinnamon made for an incredible explosion of flavors in my mouth that I can’t even begin to describe…sort of like spicy sweet cafe mocha pancakes…wow! Scott, now I really need to try one of your Pick Me Up smoothies. :)

WOW!! thanks for the linkage and the spicy, chocolate, juiced-up nut love. And yes, I take full blame for your upcoming and lifelong addiction to Peanut Butter frankensyrups! :-) I think Allie is about to get hooked too. Watch out people! It’s baaaddddd stuff. Like cigarettes and crack!

YUMMY! Great breakfast. I need to try making these with my Jay Robb. What a fabulous day today was :) We got SO much good stuff at TJs and I came home and had a mini feast. Hope you two are enjoying the rest of your day. You both are so sweet

you make mw want jay robb protein everytime I read, What is the diff w other protein powders and it?

N.D. Love Jay Robb. I can’t do soy or whey protein powders, and his rice is the best tasting in my opinion. I love that it contains nothing artificial, and it’s sweetened with stevia. Sun Warrior makes a good rice protein powder as well, but Jay Robb tastes slightly less chalky to me.

Just commented on DEb’s post ’bout using instant coffee in recipes. And same could be true here w/ your espresso powder. My worry, is it like eating coffee grounds, or does it somehow dissolve (dont see how that would work as coffee grounds aren’t really soluble). I recently just overflowed my coffee pot and for about a week was getting trace grounds in my coffee and yeah, not a fan :)

Can’t wait to hear bout your excitement. Do I hear an Itzy story? I read either here or there she was gonna be in N’Ville.

Averie, The espresso powder I have is awesome for recipes, but you’re right. I need to change my post to read “instant coffee grounds”.
