Happy Pancake Sunday!

The winner of the Bob’s Red Mill xanthan and guar gum giveaway is…

Picture 2.png

ajoyinclass, thanks for entering the giveaway and for the rap lyrics. πŸ™‚ Please email me your address, and I’ll forward your info. to Bob.

Today, I met up with some girlfriends for an early Sunday brunch at Miel Restaurant. So, no pancakes this morning. Instead I dined on crabcake served atop a biscuit with poached eggs.

It came with bernaise sauce, but I asked for it on the side and didn’t end up using any. We then split the crepes filled with currants, berries, and pecans for dessert. I rarely eat restaurant desserts, but I had a couple of bites. I love eating pretty food with my girlfriends. πŸ™‚

After brunch, I did some Christmas shopping, and by the time I got home, I was hungry again…

Nothing wrong with a late lunch of pancakes! My gosh, I have eaten nothing green today, have I? I see some roasted veggies in my dinner future. πŸ™‚

I tried a new variation of my protein pancakes. I made my usual recipe, but added 2 TBSP of coconut flour. The pancakes cooked up much more fluffy and were less “rubbery”. I can’t wait to experiment more with this stuff.

My pancake toppings were pretty basic today, just a smidge of soy-free Earth Balance and some Grade B maple syrup. They were just what I needed after dealing with all the craziness at the mall.

Have you tried protein pancakes with Jay Robb protein powder yet? You want to? Well, Mr. Sexy Hot himself has agreed to donate a package of Jay Robb goodies to one lucky HEABer in honor of HEAB’s birthday. Thanks so much Jay. You know I love ya!

Aren’t we cute together? πŸ˜‰ To win, please leave a comment below telling me your favorite pancake toppings. The giveaway will stay open through tomorrow night at midnight, Monday, December 7.

Hope everyone had a good weekend!

coco December 8, 2009 at 3:18 am

favorite pancake topping? recently soy yogurt and/or aduki coconut mousse! πŸ˜€

Michelle December 8, 2009 at 1:52 am

Pancakes are like ice cream for me – anything goes! Here’s my list, in order!
1 – toasted coconut w/bananas and buttermilk syrup (bad girl, I know, I KNOW!)
2 – Hot sauce, favorite meat or substitute (tofu) and egg/substitute with sauteed veggies! yum
3 – peanut butter
4 – nothing!
5 – jam
6 – almond butter/banana brulee (CCK!)
7 – cocoa w/ powdered sugar
8 – yes, ice cream. Protein or otherwise (coconut milk with toasted coconut … hmm).

I love me some Jay Robb!! Awesome giveaway!!! πŸ™‚

Stephanie December 8, 2009 at 1:05 am

Me, me gotta get some jay Robb love toooooo ..

Jess December 7, 2009 at 9:59 pm

I love maple syrup and almond butter!

Brandi December 7, 2009 at 9:33 pm

I would say my favorite depends on the day–I am so picky and change my tastes frequently. I love coconut oil mixed with cinnamon and stevia but I’ve also been known to dip my pancakes in the egg yolk with some sea salt and pepper (wow I’m hungry for breakfast). Other times it is the leftovers from my son’s breakfast (soggy agave nectar pancake globs).
I am dying to try Jay Robb’s protien–I have yet to find it in my area:(

marie December 7, 2009 at 9:13 pm

My favorite pancake toppings are nutella, bananas, and cashew butter. mmmmmmm

guess I know what I’m having for breakfast…

Heather December 7, 2009 at 8:27 pm

I enjoy real maple syrup and pecans.

Jessica December 7, 2009 at 8:22 pm

Hmmm…lookin’ for some Jay Rob love myself, so THE best pancake topping is very specifically instructed πŸ˜‰ a little butter of your choice, crunchy almond butter, blueberries, and grade B maple syrup…then you MUST stick it in the microwave (or toaster oven), but step away if you use the microwave (ya know about those killer waves! ;), and heat, so the berries and AB are just warm enough. MMMM ;)’ Hungry yet??…

Heather Eats Almond Butter December 7, 2009 at 9:15 pm

Jessica, Yes! Sounds like the perfect combo to me. Love crunchy. πŸ™‚

Jennifer R. December 7, 2009 at 8:06 pm

Alex December 7, 2009 at 7:12 pm

Triple N Stephie December 7, 2009 at 7:05 pm

hmm…it’s definitely sliced banana, Greek yogurt, cinnamon, cacao powder, and some almond butter – on top of the pancakes like a huge mountain…
it tastes better than anything else in the world. (even better than muesli, can you believe it?)

Heather Eats Almond Butter December 7, 2009 at 7:23 pm

Triple N Stephie, Yes, I can. πŸ™‚

melissa December 7, 2009 at 6:54 pm

Ahhh, that would be marantha chocolate almond butter spread thinned out with a bit of almond milk….Heather you MUST try this stuff:)

Heather Eats Almond Butter December 7, 2009 at 7:24 pm

I seriously love your Pancake Sundays, and this edition looks especially delectable. I’m totally intrigued by the addition of coconut flour and am definitely going to look for some to try out soon! As for my favorite pancake toppings, I love fresh local berries (while in season over summer) and I also love raw almond butter mixed with a touch of maple syrup, which melts on the warm pancakes. Oh so gooey and wonderful!

Thanks for another fantastic giveaway HEABY! I’m loving this week of blog birthday fun!

Laurie H December 7, 2009 at 5:12 pm

My favorite pancake toppings is definately bananas and agave…..and CINNAMON!! Lots of cinnamon…I put it on everything I eat I think, haha! I also like to microwave the banana a little bit so it ‘souffles’ some. Yum, pancakes for dinner?! JK πŸ™‚

I love bananas and almond butter… mmm…. so yummy or melted blueberries… mmm…

Heather December 7, 2009 at 4:33 pm

I haven’t had pancakes in forever! But if I were, I would top them with almond butter and honey!

Quix December 7, 2009 at 4:30 pm

Um, I don’t do pancakes very often so they’re not normally “healthy” food, more of a splurge-y food for me. So I like chocolate chip ones with a little margarine and syrup. A traditionalist, I know. It’s better than the waffles with ice cream and strawberry sauce I used to love!

*hangs head*

I am doing some pancakes this weekend, so I might try a little nut butter. Mmmmm….

Anna December 7, 2009 at 4:29 pm

Favourite pancake toppings would have to be bananas or sauteed apples (probably the later), although the berry compote I had at a restaurant this weekend was pretty fabulous, too!

Rina December 7, 2009 at 4:23 pm

My favorite pancake topping has to be plain old and good maple syrup! Sometimes simple is just the best! Berries are delicious too. =)

Amanda December 7, 2009 at 4:13 pm

VT maple syrup!

Alicia December 7, 2009 at 3:48 pm

For pancake toppings I LOVE banana’s, blueberries, and REAL vermont maple syrup! yum!

jen December 7, 2009 at 3:37 pm

I love love love chopped pecans, some power PB (the p butter with flax and egg whites), cinnamon and a little Trader Joe’s organic reduced sugar blueberry jam. Like a p b and J but better!

Katie T December 7, 2009 at 3:35 pm

Call me a traditionalist, but I love me some Earth Balance and pure maple syrup.
Although I must admit, copious amounts of nut butter is good on just about ANYTHING…

Haylee December 7, 2009 at 3:27 pm

Favorite pancake toppings have got to be anything with berries or bananas, and some maple syrup! mmmmm

Emma December 7, 2009 at 3:14 pm

My favorite pancake toppings? Fruit, fruit, and more fruit! Also – nut butters, especially chocolate ones and almond butters.

kate December 7, 2009 at 3:10 pm

Hi, Heather. I’m new to your site and I have to say, it’s SUPER! You’ve helped me get through some pretty slow work days πŸ™‚

Anyway, my favorite pancake toppings are thawed cherries and Peanut Butter Co. Dark Chocolate Dreams!

sarah December 7, 2009 at 1:48 pm

In college – it was ice cream and the inside of whatever pie the cafeteria was serving that day. Now- give me some raspberries, maple syrup and almond butter and I’m good to go!

Natalie December 7, 2009 at 1:45 pm

My favorite pancake toppings are simply banana, barney butter, flax, and a little agave.

Sallie December 7, 2009 at 1:26 pm

Favorite pancake topping: Lingonberry jam on Swedish pancakes. I hate the smell of maple syrup and pancakes, it makes my stomach turn. But Swedish pancakes remind me of childhood, and you can only make them if you have some Lingonberry jam to roll them up with. =)

Rita December 7, 2009 at 1:26 pm

Banana, walnuts and maple syrup.

Brooke December 7, 2009 at 1:13 pm

almond butter, agave and coconut. hands down the bestttt!

Natalie December 7, 2009 at 12:54 pm

i’ll take some fresh berries and whipped cream πŸ™‚

Kathleen December 7, 2009 at 12:44 pm

Tough one. When I’m ambitious, I warm up some frozen mixed berries. Not so ambitious, I coat ’em with almond butter and some Sarabeth jam–either blood orange marmalade, or mixed berries or strawberry rhubarb or cherry plum jam or…sigh! They’re low in sugar and very fruity, with no artificial sweeteners, and taste so good! I like to think I’m getting some extra antioxidants with these!

Been using Jay Robb whey protein for YEARS! Great stuff, cuz it doesn’t contain artificial sweeteners–just stevia! I add it to frozen mixed berries and coconut milk in my Vitamix for a healthy ice cream.

There! Is that a commercial for 3 products, or what?

Julia A December 7, 2009 at 12:42 pm

Pure maple syrup, vanilla protein powder, cinnamon and a dash of stevia powder. Reminds me of the french toast I used to have as a kid only back then it was Mrs. Butterworth’s, powdered sugar and cinnamon!

Jessica December 7, 2009 at 12:01 pm

Good ol’ really maple syrup for me. Yummmm.

Sharon Marriott December 7, 2009 at 11:59 am

Either sliced mangos with a little butter or olliaberries with olliaberry syrup.

apartmentnearchinatown December 7, 2009 at 11:57 am

Bananas and maple syrup; always a winner!

Emily December 7, 2009 at 11:44 am

Heather December 7, 2009 at 11:25 am

I LOOOOOOOOOVE Jay Robb. It is the only protien powder that I have found palatable. If you know any others worth imbibing please blog about it. Just started following you. Would you also post about your chipotle almond butter? Sounds delish!

Pancake toppings – greek yogurt and fruit sweetened raspberry preserves are excellent toppings or straight off my cast iron griddle with no topping at all!

Heather Eats Almond Butter December 7, 2009 at 12:48 pm

Karen, Jay Robb is my favorite protein powder – best tasting out there in my opinion. I don’t use whey or soy protein powders, just rice. So, Jay is #1, but I also like Sun Warrior: http://www.sunwarrior.com

Here is the recipe for the chipotle almond butter: http://heathereatsalmondbutter.com/recipes/chipotle-almond-butter/. It is delish!

Thanks for reading my blog. πŸ™‚

Kat December 7, 2009 at 9:25 am

As odd as it sounds, I don’t like anything on my pancakes. I eat them plain and enjoy every last bite!

Food-Fitness-FreshAir December 7, 2009 at 9:21 am

Your restaurant breakfast looks exceptionally scrumptious (trying to vary my adjectives because almost every food bloggers eats look “delicious”).

Coconut flour…does this have a substantial amount of fat in it, like coconut milk? Does it have a real “coconutty” flavor?

Heather Eats Almond Butter December 7, 2009 at 12:42 pm

Food-Fitness-FreshAir, Per 1 serving (2 TBSP) coconut flour, 60 calories, 2 grams fat, 8 grams carbs, 5 grams fiber, 1 gram sugar, and 2 grams protein. Honestly, I didn’t notice much of a coconut flavor in my pancakes, but again, I only used 2 TBSP of the flour. I think I love this stuff!

Jean December 7, 2009 at 9:09 am

I’m boring – just plain ol’ butter & maple syrup for me!

Cherie December 7, 2009 at 9:07 am

Hi Heather

My fav is still organic butter and sometimes with a little Nature’s Hollow sugar-free (xylitol) “Tastes Like Honey”. I would really love to try Jay Robb!!!

Also, I love Aloha Nu Coconut flour ($9.99 @ netrition.com)! They have a muffin recipe on the package (I substitute the above honey) that is sooo yummy! There are so many great way to use coconut flour that I think you’re gonna love it too!

Have a great day! Good luck to all of us!

Ameena December 6, 2009 at 10:56 pm

Butter and maple syrup!!

Gaby December 6, 2009 at 10:51 pm

I want hot muscles like Jay!
I actually am still so excited from last night’s dinner because I went to a vegetarian/ vegan place and I had about 6 vegan desserts to choose from! Usually veg friends meals are doable, and this place was fantastic, but being able to order dairy free desserts is basically impossible so I was so excited I finished my entire meal then ordered not only the Belgian chocolate cake, but took the Blueberry pie to polish off a few hours later! OMG so good and so great to be able to treat yourself to dessert!

The last few times I”ve made amazing pancakes by topping them with almond butter and letting that melt. Then I mash up a banana, raspberries and coconut flakes and smear that all over the top of the almond butter. Try it!

Heather Eats Almond Butter December 6, 2009 at 10:55 pm

Gaby, Glad you enjoyed your evening out last night. Dairy free desserts are indeed rare…I would have shared the Belgian chocolate cake with you. πŸ™‚

Your pancake toppings sound divine. I need to get raspberries and try it for sure!

Tyler December 6, 2009 at 10:51 pm

Kelly December 6, 2009 at 10:20 pm

My all time favourite topping has to be maple syrup…you just can’t go wrong with it!

A new topping I recently discovered is to throw some frozen berries and cottage cheese in the blender, blend it all up and use as a topping for pancakes! It is quite delicious as well!

Shelley December 6, 2009 at 10:17 pm

Yummy almond butter and frozen blueberries – love the hot cold contrast. Also love that protein powder!

wanna hear something really sad πŸ™ Jay Robb doesn’t ship brown rice protein powder to Canada anymore. Our custom laws don’t let him πŸ™ πŸ™ It’s something having to do with the fact that the rice is sprouted outside the US. I think it’s a tragic *sniff sniff tear tear*

Kim December 6, 2009 at 4:47 pm

Don’t make me pick a favorite! I have two that I couldn’t never choose between. One is a no sugar added apple butter made by a local orchard that is amazing! The other is a roughly 1:1 mix of natural peanut butter (but I’m sure almond butter would be good in this, too) with pumpkin puree. Add a touch of sweetener of your choice, and perhaps a dash of cinnamon and you’re set. The pb/pumpkin mix is also great as an apple dip for kids (and grown-ups, too)! Oh, I hope I win. I hope I win. I’ve been wanting to try Jay Robb protein powder forever!!

fartygirl December 6, 2009 at 4:47 pm

So glad you had fun with your girlfriends!!

Blueberries are my favorite pancake topping. My grandma makes a killer blueberry sauce for pancakes.
