Today, I met up with some girlfriends for an early Sunday brunch at Miel Restaurant. So, no pancakes this morning. Instead I dined on crabcake served atop a biscuit with poached eggs.

It came with bernaise sauce, but I asked for it on the side and didn’t end up using any. We then split the crepes filled with currants, berries, and pecans for dessert. I rarely eat restaurant desserts, but I had a couple of bites. I love eating pretty food with my girlfriends. :)

After brunch, I did some Christmas shopping, and by the time I got home, I was hungry again…

Nothing wrong with a late lunch of pancakes! My gosh, I have eaten nothing green today, have I? I see some roasted veggies in my dinner future. :)

I tried a new variation of my protein pancakes. I made my usual recipe, but added 2 TBSP of coconut flour. The pancakes cooked up much more fluffy and were less “rubbery”. I can’t wait to experiment more with this stuff.

My pancake toppings were pretty basic today, just a smidge of soy-free Earth Balance and some Grade B maple syrup. They were just what I needed after dealing with all the craziness at the mall.

    mmmm fav. pancake topping is greek yogurt+PB+cinnamon+dark chocolate flakes all mixed together. MMMM. it is one of the only exceptions I make to my no-dairy rule. and well worth it, i might add :)

    BUTTER! Real butter, peanut butter, almond butter – whichever floats my boat. Growing up we always smeared peanut butter and confectioner’s sugar and then rolled it up to eat. Not healthy, lol – but YUM. :)

    I usually have 4- one with applesauce, one with maple syrup, one with nutella, and one with powered sugar..
    I keep meaning to put some mushed kabocha in the pancake mix, but never have any leftover kabocha ;-)

    Peanut butter and cinnamon, always. I’ve tried other nut butters. I’ve tried tahini. I’ve even tried soy cheese. Nothing makes me happier than PB with a little sweetness.

    Don’t make me pick a favorite! I have two that I couldn’t never choose between. One is a no sugar added apple butter made by a local orchard that is amazing! The other is a roughly 1:1 mix of natural peanut butter (but I’m sure almond butter would be good in this, too) with pumpkin puree. Add a touch of sweetener of your choice, and perhaps a dash of cinnamon and you’re set. The pb/pumpkin mix is also great as an apple dip for kids (and grown-ups, too)! Oh, I hope I win. I hope I win. I’ve been wanting to try Jay Robb protein powder forever!!

    wanna hear something really sad :( Jay Robb doesn’t ship brown rice protein powder to Canada anymore. Our custom laws don’t let him :( :( It’s something having to do with the fact that the rice is sprouted outside the US. I think it’s a tragic *sniff sniff tear tear*

    I have really really been wanting to try jay robb! Here’s to hoping I will win! Favorite toppings? Probably blended banana, almond butter, a bit of almond milk, cin and vanilla! Delicious, and a sprinkle of coconut is pretty good too. Last week I tried a chocolate avocado topping that I was pretty satisfied with as well!

    A new topping I recently discovered is to throw some frozen berries and cottage cheese in the blender, blend it all up and use as a topping for pancakes! It is quite delicious as well!

    I want hot muscles like Jay!
    I actually am still so excited from last night’s dinner because I went to a vegetarian/ vegan place and I had about 6 vegan desserts to choose from! Usually veg friends meals are doable, and this place was fantastic, but being able to order dairy free desserts is basically impossible so I was so excited I finished my entire meal then ordered not only the Belgian chocolate cake, but took the Blueberry pie to polish off a few hours later! OMG so good and so great to be able to treat yourself to dessert!

    The last few times I”ve made amazing pancakes by topping them with almond butter and letting that melt. Then I mash up a banana, raspberries and coconut flakes and smear that all over the top of the almond butter. Try it!

    MY FAVE PANCAKE TOPPINGS, HEATHER, ARE PUMPKIN PASTE WITH DARK CHOCOLATE… mmm. In fact I want some now. peanut butter or almond butter is just as good, but you know after a workout i really like the smooth feeling of pancakes and sweet pumpkin paste inside my mouth.

    I also like Japanese pancakes with adzuki bean paste stuffed inside. Delicious when hot… now I miss home :(

    My fav is still organic butter and sometimes with a little Nature’s Hollow sugar-free (xylitol) “Tastes Like Honey”. I would really love to try Jay Robb!!!

    Also, I love Aloha Nu Coconut flour ($9.99 @ netrition.com)! They have a muffin recipe on the package (I substitute the above honey) that is sooo yummy! There are so many great way to use coconut flour that I think you’re gonna love it too!

    Tough one. When I’m ambitious, I warm up some frozen mixed berries. Not so ambitious, I coat ‘em with almond butter and some Sarabeth jam–either blood orange marmalade, or mixed berries or strawberry rhubarb or cherry plum jam or…sigh! They’re low in sugar and very fruity, with no artificial sweeteners, and taste so good! I like to think I’m getting some extra antioxidants with these!

    Been using Jay Robb whey protein for YEARS! Great stuff, cuz it doesn’t contain artificial sweeteners–just stevia! I add it to frozen mixed berries and coconut milk in my Vitamix for a healthy ice cream.

    There! Is that a commercial for 3 products, or what?

    I seriously love your Pancake Sundays, and this edition looks especially delectable.     Hmmm…lookin’ for some Jay Rob love myself, so THE best pancake topping is very specifically instructed ;) a little butter of your choice, crunchy almond butter, blueberries, and grade B maple syrup…then you MUST stick it in the microwave (or toaster oven), but step away if you use the microwave (ya know about those killer waves! ;) , and heat, so the berries and AB are just warm enough. MMMM ;) ’ Hungry yet??…

    I am a new reader and LOVE your blog- totally makes my day and I am ready to try some of your protein pancakes. I have celiac so coconut flour is right up my alley! Id love to try the protein powder. I went out and bought the gums and loved them in my smoothies!

    I would say my favorite depends on the day–I am so picky and change my tastes frequently. I love coconut oil mixed with cinnamon and stevia but I’ve also been known to dip my pancakes in the egg yolk with some sea salt and pepper (wow I’m hungry for breakfast). Other times it is the leftovers from my son’s breakfast (soggy agave nectar pancake globs).
    I am dying to try Jay Robb’s protien–I have yet to find it in my area:(

    Pancakes are like ice cream for me – anything goes! Here’s my list, in order!
    1 – toasted coconut w/bananas and buttermilk syrup (bad girl, I know, I KNOW!)
    2 – Hot sauce, favorite meat or substitute (tofu) and egg/substitute with sauteed veggies! yum
    3 – peanut butter
    4 – nothing!
    5 – jam
    6 – almond butter/banana brulee (CCK!)
    7 – cocoa w/ powdered sugar
    8 – yes, ice cream. Protein or otherwise (coconut milk with toasted coconut … hmm).
