A few days ago, I made coconut flour pancakes. Click here for the recipe. These are light and fluffy and oh so good. Many of you told me you loved Greek yogurt on your pancakes. Well, I tried that, and it was delicious. However, I really need to stay away from dairy. I think I’ve found a combo that is almost just as good.
I cooked some frozen cherries on the stove-top, and then mashed them with a little stevia and a pinch of guar gum to thicken the mix. I then ate them atop a stack of coconut flour flapjacks with 1/2 a container of So Delicious plain coconut milk yogurt and cinnamon. I like to make pancake tacos…
This morning, I had the same combo, but with blueberries instead of cherries. Forgot the cinnamon. 🙁
