After reading all about your favorite pancake toppings, I decided that I needed to try a lot of them…you know, to make sure they’re good. :) So, I’ve decided to declare this entire week Pancake week. Anyone want to join me?

A few days ago, I made coconut flour pancakes. Click here for the recipe. These are light and fluffy and oh so good. Many of you told me you loved Greek yogurt on your pancakes. Well, I tried that, and it was delicious. However, I really need to stay away from dairy. I think I’ve found a combo that is almost just as good.

I cooked some frozen cherries on the stove-top, and then mashed them with a little stevia and a pinch of guar gum to thicken the mix. I then ate them atop a stack of coconut flour flapjacks with 1/2 a container of So Delicious plain coconut milk yogurt and cinnamon. I like to make pancake tacos…

This morning, I had the same combo, but with blueberries instead of cherries. Forgot the cinnamon. :(

Oh yes I am all over an entire Pancake Week, my daughter will love the idea!!! We tried some oat pancakes a couple of weeks ago and loved them. Do you ever use agave or is that too sweet? Where do you get your coconut flour?

Just read your guest post and wow your yoga pose!!! I want arms like that! :)

Melissa, I bought Bob’s Red Mill coconut flour at Whole Foods, and although I have used agave in the past, I rarely buy it. If I use any kind of sweet topping for my pancakes, it’s Grade B maple syrup. It’s my fav!

Yum. Who doesn’t love pancakes for breakfast! My favorite is blueberry pancakes…and I think that blueberry-topped blueberry pancakes would be even better. Spreading peanut butter and fruit on pancakes can also turn them into a great sandwich.

Pancake Week sounds wonderful and so do your Coconut Pancakes!
I have heard of Stevia but have never used it- Is it safe? I mean obviously NOT aspartame but after Sucralose came out and was supposedly safe, it is now known to not be- What are the big WOW’s on Stevia? What are some of the negatives, if any? (I am not an artificial sweetener user due to my ability to really taste the difference, so I need some help here on how close to actual sugar it is on top of the health facts) Thx!

Luv2CUSmile, Stevie is an all natural sweetener made from a plant. You can read all about it here: http://en.wikipedia.org/wiki/Stevia. For years, it was considered a dietary supplement and was recently approved by the FDA as an alternative sweetener. As far as I know, it is safe, but I have heard of some people having adverse reactions to it – headache and or stomach distress. I prefer the NuNaturals brand – best tasting in my opinion: http://www.nunaturals.com. I use it everyday.

Sweet.. Im stoked for pancake week.. I could eat em everyday too BUT I find sometimes I need a “quicker” meal or Im too impatient in the morn. Im looking forward to seeing your creations Ms. Heather ;)

How does coconut milk yogurt compare to regular or greek yogurt? I’ve never tried it before.

Heather, The coconut milk yogurt is soy, dairy, and gluten free. It’s kind of runny – not nearly thick as Greek and contains no protein. However, it does the job when recipes call for yogurt, and it’s really good on pancakes. :)

The So Delicious brand of coconut milk yogurt does contain the beneficial bacteria just like regular yogurt. I’ve tried most of their flavors, and I have to say I like plain the best. The flavored ones are way too sweet for me.

It totally depends on the pancake. If it is plain I can do just about anything, but I think the old standby of maple syrup is my favorite. i don’t do this anymore because of the sugar, so now I make fruit syrups or purees. LOVE fig preserves. Caramelizes bananas are also amazing. Matt loves syrup and peanut butter. I wish he liked pure maple, but he goes for that crap that comes in a plastic bottle.

Heather, thank you for the sweet email! I miss you and blogging and hope to do something new with it in the next few weeks. But I had to tell you that I had pancakes this morning too! It seemed like a nice way to delay studying for criminal law. :)
Now I have inspiration for more pancakes when I actually have time to make them.

By the way – when I opened my google reader and saw a post from you my heart totally fluttered because I realized you’d be posting the winner today! I know the chances of winning are slim to none, but apparently my hopes are still up lol.

Also, just curious – when you delete out your comments, will you also delete out those who posted multiple times to try to increase their chances? I noticed some were doing that – different names but same URLs. Silly people! (Meanwhile, I’m going to go be silly and say a prayer that I win…like God has nothing more important on His hands than me winning a vitamix lol).

Yum! I should try making some pancakes this week because I’ve gotten really bored with breakfast lately, and I’ve been wanting to use my griddle. I think Tofutti cream cheese and strawberry jam would make a good topping.

Mmmmm. I made dark chocolate and peanut butter covered GF pancakes on Saturday (I used the TJ’s Pancake & Waffle Mix), but I love the idea of coconut flour for an extra sweetness. Do you think you’d get a nice result with almond flour and coconut flour mixed together?

P.s. Have you tried straining the coconut milk yogurt? You could always use the extra liquid in smoothies or in baking, and then use the thicker, strained yogurt as a pancake topping this week!

Mmm, pancakes are great for taco-fying. I tested a recipe for Lindsay’s upcoming Happy Herbivore cookbook, and it was Amish Pancakes. Have you heard of them? I can’t pass on the recipe unfortunately but they’re awesome! Like cornbread pancakes that have some cajun spice to them–I used salsa as my “syrup”. Talk about the perfect pancake to make a taco with. :)

Heabers I LOVE waffles as much as you love pancakes!!! I would totally love pancakes more if they didn’t take that much longer to make than waffles. hehehehe But i do love the crunchy crust on the outside of waffles though.

I’m a fan of the faux greek! Sometimes I think greek yogurt is a little too thick on my pancakes, but combined with some almond milk and cinnamon to make it more runny, it turns into the perfect sauce! :) YAY for pancake week! I can’t wait to see all the

Ahh i LOVE pancakes, too! And have been dying to make these thangs every time I see them on here!! On my winter break to-do list, for sure :)

I’ll probably have to top mine with some sunflower seed butter and a sliced, warmed/nuked apple–or frozen berries, mashed and nuked…..YUMMMMMMMMM
