Cheesy Obsession

So, I’m officially obsessed with Mae’s pizza cheese.

I served it over some steamed Brussels sprouts and spiralized zucchini noodles last night for dinner…

Mae’s cheese sauce also found it’s way into this messy bowl of a lunch, which included 1 strip of bacon stir-fried with 1/2 onion. 1/2 red bell pepper, 8 ounces sliced mushrooms, lots of spinach, and 1/2 an avocado the size of my head chopped and stirred in after cooking.

To convert Mae’s pizza cheese into a sauce, I simply stir about 2 or 3 TBSP of hummus with 2 TBSP nutritional yeast and water to thin. I then pour that over my veggies and add a drizzle of tahini. I know many of you don’t like tahini on its own, but honestly, I want to strip down naked and swim in it. Honestly. 8)
The one thing that did not get topped with Mae’s cheese was this morning’s breakfast…

Mmm, a big bowl of Hot Chocolate Soup topped with 2 TBSP whipped heavy cream. I ♥ cream.

I skipped out on my hyperbolic resistance training for an hour long walk with the pups this morning, and it was so windy and cold. Brrrr. I like it to be cold for Christmas and New Years, but come January 1, I’m ready for tank top weather…don’t think that’s going to be happening anytime soon.

I hit up THREE cooking stores this weekend, and none of them had a spiralizer :-(

I thought of you this morning tossing my gums into my magic bullet to make a smoothie– it turned out more like a bowl of pudding though, I think I’ll take it a little easier on the gums–

That cheese sauces sounds fantastic, have you ever made cashew cheese?

Emily, All my breakfast contained was almond milk, 1/2 avocado, cocoa, and stevia. No gums or powder required. :)

Miss Heather, I’m so honored!!! :-D :-D I agree, I could bathe in tahini too. It’s so good with chocolate or with apples (Or, obviously, hummnut cheese sauce!!)

I don’t really like tahini by itself, but since I don’t eat peanuts (or peanut butter) anymore, I’ve found that 2 parts almond butter/1 part tahini makes something that tastes somewhat similar to peanut butter.

I am in 100% agreement about the tahini. I put it on what I’m eating, and then licklicklick the spoon clean:). It is one of my favorite nut/seed butters, I think. And as far as your last sentences, I just can’t get along without a daily dose of HEAB!!!

This is going to sound weird… But I can’t wait for winter to come! After weeks of temperatures consecutively above 30 degrees celcius (no air-con!) I’m starting to think I may become a roast chicken before the summer ends…

I love HEAB!! I’m wondering, when do you freeze avocados–right after you buy, or when they are ripe? Are they only good for smoothies after being frozen, or could you thaw them and eat like normal? Thanks so much :)

Courtney, I usually wait until they are ripe, and I’ve only ever used them for smoothies. That being said, I know at one time, Trader Joe’s sold frozen avocado halves that you could thaw out and use for any recipe requiring avocados. So, I’m sure you could do the same with your own frozen avos. :)

I know you probably get this a lot, but can you at all taste the avocado in the hot chocolate soup? And just out of curiosity, how in the world did you think to use avocado in a chocolate dish?!

Gracie, Not sure. I’ve been using avocados in chocolate dishes ever since I became interested in raw foods, about 5 or 6 years ago.I’m used to tasting the avocado, and I love it. That’s why I don’t use a lot of cocoa. However, you probably won’t taste the avo at all if you double the cocoa and sweetener.

Hummus…and….nooch? I’ve officially gone to Awesome Combinations Heaven! I just hit up Trader Joe’s a few days ago and got three different types of hummus, so now all I have to do is decide which one to sample first. Mae is a genius :)

That’s it, I have to try this pizza cheese! And for once I actually have all the ingredients to do it! I sense a La Tortilla Factory + pizza cheese + veggie creation coming on! Or perhaps a spaghetti squash + pizza cheese + tomato sauce combo. Oh, the possibilities!

Those brussel sprouts reminded me of your post when you said you and CD went through 10 lbs in a week….don’t feel crazy about that, because I could prolly do that by myself!

I love brussels sprouts! I think I eat them every single day- they make great additions to butternut squash soup from a box. I like to add hummus and nutritional yeast to egg scrambles; I bet it tastes a lot like this.

I also love your combination of random foods, and I have no doubt that the tahini added to the cheesiness tastes divine. I checked out the cheesy recipe and I think I’m going to have to try it! First I need to invest in some nooch though.

Cheese sauce over Brussels sprouts! Now there’s a lunch idea.
I get some funny looks when I bring in my Tupperware full of Brussels sprouts to work for lunch. It helps that I work in a health freak accepting environment but there’s something about Brussels Sprouts makes people cringe.
We should start a ‘love the Brussels sprouts’ movement.
I’ll be pouring some cheesy hummus over them when I have some around. Watered down a little, that is my all time favorite easy to prepare salad dressing and/or everything dressing!
