		<description>I am eager to hear how it goes for you!  I found your blog shortly after I bought my first jar of Artisana&#039;s Coconut Butter at a WFM for $13!  I wanted to see how it was made, and look for a home made recipe.  Your article was the first link in Google...  When I saw that you used your food processor I figured that I could do it in the Vitamix, since I make nut butters in it.  I ran to my local health food store and bought 12 little bags of unsweetened coconut flakes.  First batch (2 bags) came out awesome and almost filled the same jar the Artisana&#039;s came in (and the 2 bags only cost $2.50!)  Then I bought some coconuts, shredded the meat, dehydrated it and made another batch from my own coconut.  It was even better (if that is possible!  :-)  I love to add stevia powder and raw cocoa powder to make my own choco-coconut bliss!  Oh, and after making coconut butter in the Vitamix, I added some fresh pineapple, some ice cubes, and a big hand full of spinach to make a &quot;GreenYaColada&quot; Green Smoothie!</description>

I use about 4 cups of the unsweetened coconut flakes and it reduces down to about 2 cups of coconut butter (after blending).  Use your tamper liberally until it is all flowing through the blades.  It only takes 30 seconds to a minute start to finish!  It is best to do at least 4 cups of the flakes, because you don&#039;t want a volume that is too small to flow freely through the blades - get too little, and you will get air pockets forming repeatedly and you will have to use your tamper repeatedly - it will never &quot;flow&quot; through the blades with any amount much less than a 2 cup final product level.  :-)</description>
