I woke up again at 3:30 in the morning! Not sure what is going on inside my head, but for some reason I could not go back to sleep. After answering a few emails, I started watching Donnie Darko at around 6 AM…what a bizarre little film. I then fell asleep at about 7 AM and woke up about 45 minutes later when I heard CD leave to go trail running. I lay there contemplating going on a walk but decided to drink coffee and finish my movie instead. 🙂
Pancakes didn’t sound too great this after tossing and turning for most of the night. So I waited until I was really hungry, and around 11 AM, I cooked up a big batch based on this recipe sent to me by reader Kendall. Thanks Kendall!
4 heaping TBSP of unsweetened shredded coconut (20 grams)
2 TBSP coconut flour
1 egg + 2 egg whites
1/4 tsp baking powder
1/2 tsp cinnamon
1/4 tsp cloves
1/4 tsp ginger
1/4 tsp nutmeg
1 packet stevia or sweetener of choice (Optional. I omitted.)
Combine coconut, coconut flour, baking powder, spices, and sweetener of choice. In separate bowl, whisk together coconut milk beverage with egg. Slowly stir coconut/egg mixture into dry ingredients. While you heat up your griddle or skillet over low heat, beat 2 egg whites until stiff white peaks form and then fold into pancake batter. Cook pancakes over low heat.
For my toppings, I made reader Katie T’s coconut-cream-cheese frosting by combining 1 TBSP melted homemade coconut butter with 1 ounce (30 grams) softened cream cheese and then doused my entire plate in more cinnamon and a wee bit of maple syrup. Katie – loved the frosting! 🙂

A yummy late pancake brunch on a rainy Sunday morning. Perfect! However kind of kicking myself for not walking before it started raining. Oh well, I think I’ll take a cue from the weather, stay inside, cuddle up, and read while CD watches basketball all afternoon. I’m currently reading The Guernsey Literary and Potato Peel Pie Society . Have you read it? I’m about half way through and so far, it’s been a very entertaining read.
