Chocolate PB Explosion And A Vita-Mix Sale

Yesterday, I awoke around 6 AM with every intention of going on an early morning walk…but then I started baking. I did get in my walk…about 5 hours later. ;)

As you know I’ve been craving chocolate + peanut butter like crazy. (For any new readers, I’m pregnant, and just trying to go with my cravings rather than restrict them like I would normally do). So, I went a little crazy in the kitchen yesterday, but now our freezer is stocked with all sorts of goodies when the cravings hit!

First off, I made Peanut Butter Finger’s flourless peanut butter cookies. These are the easiest cookies I have ever made, and they taste straight-up like peanut butter cookie dough. In other words, I’d like to bathe in them.

While those were in the oven, I used CD’s brilliant double boiler method to melt a bag of dark chocolate chips for Vanilla Sugar’s peanut butter cups. The key ingredient?

Best graham crackers ever!

I skipped the confectioners’ sugar, and wow…that’s all I have to say!

Bite taken courtesy of CD. Unfortunately, these did not last very long in the freezer and are already all gone. However, I will be making more soon. Loved that graham cracker crunch in the center!

I also whipped up a batch of Maple Nut Oaties for a certain special someone. Danielle, they’re on their way! :)

So, how have I been enjoying all these goodies? Well, last night was girls night out, and my best friend and I attended a Rocky Votolato living room show here in Nashville. The HEABlet LOVES his Makers album. I play it all the time when I’m sitting at my computer, and she kicked like crazy when Rocky played Portland is Leaving. Many thanks to reader Kendall for introducing me to his music! :) Anyway, I didn’t want my stomach to start grumbling during the show, so I enjoyed myself a nice little bowl of plain oat bran with a PB cup all melted and gooey…so good, and my belly was quite content.

For breakfast this morning, I ate a bowl of chocolate protein ice-cream with a flourless peanut butter cookie.

Becki, Yep, you can make soups and warm puddings in the Vita-Mix. It generates enough heat to warm its contents if you let it run on high for few minutes. I own the 5000 model. Bought it 5 years ago, and it’s worth every penny!

hearing about a vitamix sale makes me crazy! i’d love to buy it but i only live at home 3 months out of the year… and people in my dorm do NOT want to be woken up by a vita-mix every morning. i brought a blender to school last semester and people got mad at me when i made my daily green smoothies :(

Lauren, If it makes you feel any better, my husband sometimes gets annoyed at me when I make smoothies, etc. Yesterday, I actually took the Vita-Mix outside to make protein ice-cream b/c Chris was asleep on the couch. That thing is so loud!

HEAB, you’re making it very hard for me to not crave something sweet in the morning! I swear, I have to brace myself for the sugary goodness that is sure to come my way every time I go to your blog! And I have to agree, TJ’s Cinnamon Grahams are to die for! I’m not gonna lie, I’ve been known to break up 3…or 10 in a bowl with some almond milk and call it cereal. Oh, how disturbingly delicious!

I’m assuming a living room show is like a house concert….I went to my first this year (there’s a Craftsman house here refurbished JUST for acoustic concerts), and it was so amazing.

That is a STEAL on the Vitamix, and I can attest that mine is also refurbished and it’s awesome. Can’t grind grain but I’m totally fine with that. Over a year, and it’s still going strong! You can also do a web search for a free shipping code if anyone wants to save the shipping too!

Carbzilla, I had the dry blade, but totally use the wet blade to grind any and everything. Have you tried it? The dry blade is a waste of money in my opinion.

And yes, the concert was in some random girl’s apartment. Such a cool concept – a very intimate show. Rocky lives in Seattle – you should check him out!

I just made those cookies too last week. I used a flax egg for a vegan version, and it worked perfectly. But, I have to say I liked the dough better than the baked cookie.

Those peanut butter cups are exactly what my mom makes at christmas time. I bet they’d be great with sunflower seed butter.

Oh my…cookies I can’t mess up!!! That is exciting! What kind of pb do you use? I have a brand called Naturally More which is all natch. Do you think it would be good for this recipe? If not, I have some regular old Jif waaaay back in the cabinet that either needs to be used, returned, or given away. So I wouldn’t mind using one cup of that. But I’d prefer to use my natural pb. Think it’ll work?

Holy PB Cup explosion!!! So many versions and yummy ways to try them! I need to up my game and pimp up my own recipe and add some extra goodies to my own filling recipe! yum!!

As for the Vita, that’s a great sale and if I didnt already have one, I’d be all over that. At that price, it’s just like another hundred bucks over a Cuisinart and really, Night and DAY difference in results, as you know :) I am not telling you anything..love my machine!

You KNOW I’m all about the choco-peanut butter marriage!
I really think you should try it in an omelet. I often whiz up eggs with some cream of tartar and baking powder and cook it on both sides and then spoon in a hearty dose of PB and some chocolate chips and fold the omelet in half so the chips and pm get melty and gooey.
and of course, nothing beats online shopping, any excuse to stay closer to the couch is fine by me :)

I think that I crave chocolate and nut butter together all the time – no pregnancy needed here :) . Some flavor combinations are proof that the universe loves us and wants to be happy (i’ve seen a similar slogan about beer on many, many a t-shirt)

PB and chocolate might be the best combination in the entire world! I have been wanting to make Julie’s PB cookies but honestly I fear I will easily eat the entire batch so I am saving it for the next party or BBQ I need to go to. That way I will be able to one (okay let’s be honest..2 or 3) and then the rest can happily go into other people’s bellies! haha!

Thanks for the ideas – my ice cream has been like an icy so I just ordered a bunch of guar gum from amazon. If you use subscribe and save, 8 – 8oz packages is only 27 something! so 3.38 a package. You’re going to have to give me some ideas as to what else I can use it for!
The peanut butter cookies and cups look amazing. I’m going to do something like that tomorrow for breakfast. Just had my protein cake and ice cream for dessert tonight :) !

Kim, Welcome and thanks for reading. I didn’t HEABify this recipe and used straight up white sugar…very unusual for me, but I figure 1 or 2 cookies a day won’t kill me. I’m sure stevia would work, but Chris (my husband) does not like the taste, and I didn’t want it to be left up to me to eat the whole batch! ;)

Have you tried NuNaturals stevia baking blend? I’ve used it in other muffin and cookie recipes, and it works great: http://www.nunaturals.com/product/166.

I baked the cookies for 10 minutes in a 350 degree oven. Enjoy – they are so yummy!

I went out to lunch today and one of the waitresses was pregnant so my mom and I started talking about it and I brought up what you had posted about gaining a whole new appreciation for the miracles your body is capable of (paraphrasing there) because it really made me think. She also said she absolutely loved being pregnant, all 3 times! While I know I don’t want a baby for a long time, I’m becoming a little more sold on the idea for the future :)

Heather, I’ve been meaning to tell you about one other thing that got me thru two pregnancies! Have you heard of the ComfortU body pillow? It totally helped me get much needed sleep! I know you’re an early riser, but your body needs rest! Up baking at 5am? No girl! ;)

Elyse, Yes, I’ve been eyeing a body pillow at Costco every time we go, and as my belly gets bigger, I know I will be purchasing it soon. Good to know it helped you!

So glad you enjoyed the concert!! I’m seeing him this weekend, and even though it’s probably the 12th time I’ve seen him over the years I always get so excited for him to play my favorite songs. Glad the Heablet is already exhibiting good taste in music :)

i was thinking about this post the rest of my work day yesterday, so i stopped by trader joes on my way home to get some of those delicious graham crackers! after dinner i was just too tired to whip up those pb cups (30 wks preg!) so i simply melted 1/2 square of bakers unsweetened chocolate and spread it onto about 6 grahams, then put them in the freezer to harden. next i spread 1tsp of pb ontop of each of the chocolate grahams, froze for a few minutes then managed to eat about 3 grahams! totally delicious and easy….but i will be making those cup very soon! :)

Alli, I love your *pregnant girls’ lazy PB cup*, and will have to try that soon! Last night, I was tempted to just throw some graham crackers, chocolate chips, and pb into a bowl of oats…until I realized Chris had eaten all the graham crackers. I must buy more!

Hi Heather! Have you heard of the alternative to PB – low-cal powdered PB? Powdered peanut butter is a low-fat, low-calorie mix that can be used as an ingredient or made into peanut butter by just adding water! I love them – I use mine in shakes and oatmeal since I love the PB flavor but not all the calories! You should check it out! The two I know of are :

PB2 (Original)
PER SERVING (2 tbsp.): 53.2 calories, 1.87g fat, 77.6mg sodium, 3.4g carbs, 0.48g fiber, 1.66g sugars, 5.65g protein — POINTS® value 1*

Larissa, Yes, I used to order PB2 all the time, but I’ve never tried the FitNutz. However, I prefer peanut flour as it lends a much stronger peanut taste. In fact, I need to order some because the samples a friend sent me are all gone. For a little healthier sugar replacement, I use palm sugar and it is fan-freaking-tastic! You can get it on iherb for a good price.

Do you know what I do when I am craving peanut butter? I make peanut butter protein ice cream using your recipe and adding some peanut butter …. sooooo yummy!! I have only had xanthan gum but it still comes out pretty creamy with that. You have to try it!

Natalie, I always read about palm sugar, but I’ve never tried it. Will definitely add it to my next iherb order thanks! Oh, and I love adding PB to my ice-cream. Your pregnancy cravings are pretty much identical to my “i’ve been away for six months and i have vita mix withdrawals” cravings. :) When I bake- I bake like alll day.
