On our way home from Missouri yesterday, we stopped at the egg lady’s house. There is literally a woman who lives right on the outskirts of town where we stayed, and when she has fresh eggs, she puts out an Eggs for Sale sign in her front yard. We got there just as her and her adorable little husband were leaving for church. When she heard we were in from out of town and hoping for some fresh farm eggs, she went and gathered 4 dozen eggs while her husband entertained us. I split the eggs with my mom and brother and ended up with 2 dozen freshly laid eggs for $2.00. Can’t beat that! Thank you Egg Lady.
Since Chris and I will be leaving this coming weekend for our Babymoon, I’m trying really hard not to go to the grocery store this week. So, the eats should be interesting, and they will include lots of eggs…starting with my dinner last night…
A scrambled egg mess with red bell pepper, cherry tomatoes, sliced mushrooms, spinach, and crumbled goat cheese. Sadly, I’m all out of wing sauce.
Please send me your favorite egg-o-licious recipes. I’m thinking I need to make custard oats. What’s your favorite way to prepare them? Also, any good frittata recipes out there? I seem to always scorch the bottom of mine.
