On our way home from Missouri yesterday, we stopped at the egg lady’s house. There is literally a woman who lives right on the outskirts of town where we stayed, and when she has fresh eggs, she puts out an Eggs for Sale sign in her front yard. We got there just as her and her adorable little husband were leaving for church. When she heard we were in from out of town and hoping for some fresh farm eggs, she went and gathered 4 dozen eggs while her husband entertained us. I split the eggs with my mom and brother and ended up with 2 dozen freshly laid eggs for $2.00. Can’t beat that! Thank you Egg Lady.
Since Chris and I will be leaving this coming weekend for our Babymoon, I’m trying really hard not to go to the grocery store this week. So, the eats should be interesting, and they will include lots of eggs…starting with my dinner last night…

A scrambled egg mess with red bell pepper, cherry tomatoes, sliced mushrooms, spinach, and crumbled goat cheese. Sadly, I’m all out of wing sauce.
Please send me your favorite egg-o-licious recipes. I’m thinking I need to make custard oats. What’s your favorite way to prepare them? Also, any good frittata recipes out there? I seem to always scorch the bottom of mine.

I think the key to frittatas is when you are cooking on the stove top to turn down the skillet to medium/medium low once you add the eggs. You don’t need to have the pan super hot at that point because you will completely set the eggs in the oven anyway.

Wow, that is a steal for fresh eggs! I feel like I might not be entirely outcast/crazy for saying here that one of my favourite things about Nigella Lawson’s show is that the eggs she uses are so high quality that the yolks are practically amber.
I hope you guys have a wonderful babymoon! My sister and brother in law spent theirs in France, Belgium, Syria and Jordan. Not a bad reason to have a baby. Just kidding!

Tortilla Espanola is perfect for eggs. Parboiled potatoes (sweet potatoes work too), diced onion and anything else you want to add sauteed and then covered in eggs until they set around then edges and the put under the boiler. It was my favorite thing in Spain and the make it in many flavors. And it tastes great cold the next day.

There’s a brand of tater chips I’ve seen at the health food stores that are fried in avocado oil. Since seeing them, I’ve been wanting to try the oil. Maybe this is my shot!

My all time favorite egg recipe has to be omelets. That’s my go to recipe when we don’t have very much in the house or I’m too tired to cook anything extravagant. Lately I’ve enjoyed homemade vanilla pudding though.

That’s a steal for good quality eggs! I bought some local eggs a few weeks ago. I had some mass produced store bought generic eggs in my fridge, and I cracked open one of each. The local egg yolk was almost orange! And the taste is incredible. The local egg yolk was much smoother/kind of buttery tasting. I try to get local eggs whenever I can – good for the planet, good for my palate
My favorite way to have eggs is scrambled with sauteed onion and green bell pepper. I have black beans on the side (in an adobo sauce) and toast some corn tortillas on a medium heat griddle. I may just have this for dinner tonight!

I just made a pizza and the crust was made out of 5 egg whites. I wasn’t sure how it would be but it was pretty tasty. I cooked the egg whites until done in the plan, topped it with tomato sauce that was seasoned with oregano and basil, roasted veggies and cheese. I put it under the broiler until the cheese was melted. Delicious! let me know if you give it a try.

Muffin Frittatas
6 eggs
1/2 cup milk
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup shredded Cheddar cheese
3/4 cup chopped zucchini
1/4 cup chopped red bell pepper
2 tablespoons chopped red onion
Directions
1.Heat oven to 350 degrees F. Beat eggs, milk, salt and pepper in medium bowl until blended. Add cheese, zucchini, bell pepper and onion; mix well. Spoon evenly into 12 greased muffin cups, about 1/4 cup each.
2.Bake in 350 degrees F oven until just set, 20 to 22 minutes. Cool on rack 5 minutes. Remove from cups; serve warm.

I love eggs!! The only problem is I never use a recipe. I ALWAYS make what’s ever in the fridge scrambled eggs. This is usually my way of using up veggies that are going bad. However, reading everybodys ideas has kind of inspired me…..kind of, when you have a good thing going it is hard to change.
I love cooking frittatas with lots of veggies on the stovetop, then adding cheese and putting it under the broiler for a few minutes!
EGGS! A.k.a, chicken periods.
As I learned from Sophia, nothing beats a good poached egg on top of ANYTHING.
You can also mix cooked eggs with goat yogurt for custardy stuff. Actually, what I’ve done is created a little “egg cake” in the microwave (you could probably do it on the stove too), out of one egg (or two whites), then once it’s cooled, topped it with yogurt or cottage cheese and put it on toast. With any flavorings/sweeteners you’d like, of course. Haha, plain would be kind of gross.

I put a Dr. Praegers California veggie burger in the skillet… chop it up with the spachala & throw in 4 egg whites & a dash of Himalayan salt… YUM! The veggies are still identifiable in those burgers, which is why I like them… you can snag them at Trader Joe’s, but I just got a big box at Costco & I’m more than glad to share!

I love farm fresh eggs — mu husband works with an egg lady! They taste so much better than grocery store eggs, hands down!
I love eggs especially for dinner lol. But I lie to scramble some eggs, salmon and cheese together and put the mix in a tortilla for a delicious burrito. I also like to make breakfast sandwiches with a English muffin, egg, and cheese.

Awww… we used to have an “egg lady” back in the day, too! My mom would make the trip down to her house every other week for fresh ones…
I love putting a poached egg in a bowl of soupy black beans topped with salsa…mmmmm. I don’t know if you eat beans, but I bet a poached egg on top of a bowl of oat bran would be amazing too. Or poached eggs with rice, or toast, or sauteed greens…or plain, I don’t know. Lately I’ve been discovering the amazingness of eggs in general.

I actually made one of my favorite egg dishes just yesterday for my pregnant sister.
I did this quick meal often while I was living in China, since English-labeled grocery selection was scarce. Just grate a zucchini/yellow squash (or 2) until shredded and sautee in a bit of oil, garlic powder, oregano, S&P, then scramble in an egg (or 2…or 4). It’ll be watery from the squash, but I just pour it out of the skillet while holding the mixture back with a lid. Top with cheese of your choice (parm is nice) and that’s it!
For custard oatmeal, I think the last time I did it, I stirred in the egg in the last minute of cooking or so, then turned off the heat, covered and let it stand for a couple minutes to custard-ify.

I love avocados and would really like to try avocado oil, I never had it before.
Regarding eggs, my favorite way to enjoy them are scrambled with cheese, tomatoes and herbs (basil, parsley, oregano, or dried italian mixed herbs). I sautee some onions and garlic then I add chopped tomatoes, cook for a minute, season everything with salt and pepper and in goes some beaten eggs. I then scramble it quickly until almost done and add cheese. Parmesan is a favorite, as is goat cheese or even american cheese (it melts beautifully but doesn’t get stringy, which I like!). Done, put it on a plate and enjoy with a big salad, roasted veggies (I love having broccoli as a side with eggs!) or put the scramble in a tortilla (and a bit more cheese maybe), also yummy!
Another way I like eggs is in a frittata! The key is not get the stove too hot. I like to sautee lots of veggies with garlic until they are starting to get soft but not too soft (I like using red peppers, spinach, tomatoes, corn, and I looove peas – the sweet green frozen ones – with eggs, either in the scrambled eggs or in a frittata, for some reason peas are really good with eggs, imo at least!). Sometimes I add leftover roasted chicken pieces to the veggies if I have on the fridge, they go well with the eggs too. Then I add beaten eggs to the sauteed veggies and mix gently to get everything together. Let it sit for a minute, run a spatula around the edges and let the unscrambled egg ooze on the surroundings of the pan.
As the whole thing starts to set I sprinkle it with a good dose of parmesan cheese (or another cheese I have, sometimes goat cheese, sometimes mozzarella) and put the pan under the broiler to finish cooking and setting the eggs. It takes about a couple of minutes or so, keep a close eye on the thing as broilers can burn things pretty quickly!
I love making frittatas with tons of veggies inside, then I have it with a salad and some brown rice it is a complete meal!

Avocado oil sounds interesting; I saw it at Whole Foods just a few days ago and was intrigued.
When you get fresh eggs like this, I think the best way to enjoy them is straight up either fried, (runny) or poached (runny) on top of toast so you can actually taste the freshness and quality of the egg. Nothing beats these types of eggs. Going from our eggs at home (that we buy like 10 dozen at a time from a family outside of Tucson, just yesterday the family came over to hand deliver them, my family is craaazy I will say that) to the cheap-o eggs by the flat at school– there’s simply no comparison. The average eggs don’t taste like anything!
Or I’d make egg salad, boiled eggs, or a frittata, etc. to enjoy the flavor of the yolk. 2$ though- that is cheap. Farmer’s markets go for like 5$/dozen, it is crazy.

Egg lady…love that story! There’s an egg lady that goes to the farmer’s market (which is across the street from my house! every Sunday). Too bad I dont eat eggs b/c everyone raves about her eggs. Nothing beats eggs from chickens who can forage for bugs and worms and are raised with love, not in cages. It’s not even the vegan in me that has egg issues…it’s my darn food allergies. Eggs! I’m on a total egg kick right now. I eat “Western Eggs” (aka Toad In A Hole) every single day. No lie. I love dipping the toast into the runny yolk. Served with a side of either roasted broccoli or green beans. Happy baby belly. xo
Mandy, Runny yolk plus toast was my favorite breakfast when I was young. My mom used to butter the toast and cut it all up for me – no one makes it like my mama!
I love eggs. A definite perk to raising chickens is having them right outside your kitchen, freshly laid (and usually still a little poopy). Ah, the farm.
I acknowledge this might sound a little odd, but when I was in Poland, the woman I stayed with would make up the dough for sourdough or rye bread, and when it was finished rising, shaped and ready to bake, she would stuff in some barely-hard boiled (and de-shelled) eggs and cover ‘em with dough. When the bread was done, each slice had hard-boiled goodness in it, and even though I thought I was adverse to eggs in general, that was some seriously good eating, especially when combined with sweet and sour cabbage!

This is one of my favorite frittata recipes!! Have yet to burn it and it’s full of really tasty ingredients. I generally put mozzarella on the top, but the way it’s originally written would work perfectly for you!

I wonder why you don’t see avocado oil more often. Most of the other high-fat legumes have pretty popular oil’s (olive oil, peanut oil, sesame oil, etc). I would love to give this one a try!

One of my favorite quick and easy egg-meals is simply a scambled egg mixed with some tuna. I usually add a sprinkle of cheese and some hot sauce to it.

Shakshuka!! is my FAV egg recipe since travelling to Egypt. It’s like a Mediterranean version of “eggs in a nest” — and so easily HEABified. Who wouldn’t like eggs poached in soupy veggies?! I put artichoke hearts and spinach in mine once instead of peppers — SO YUMMY.
