Many of you left comments on yesterday’s post singing the praises of massaged kale, and after reading them all, I had massaged greens on the brain. So, for last night’s dinner, I made my favorite raw salad and then un-rawed it with toppings. 😉
This recipe is super simple and so delicious. Simply throw a ton of spinach (like 5 to 6 cups) into a huge bowl along with 1/2 to 1 whole avocado, juice of 1/2 lemon, 1 spoonful of miso paste, and sweetener of choice (I used 1/2 packet of stevia). Fresh minced garlic is good too, but I didn’t have any. Next comes the fun part…time to get your hands dirty! Simply massage all the ingredients together until well blended. The spinach will start to wilt like it has been cooked. Love it!
