Sweet Potato Saturday

CD is jealous as Einstein has a new best friend…

For CD, this never gets old. I laughed the first year he did it. CD, I’m no longer laughing. ;)

Two excellent meals I’ve eaten in the last 24 hours…

Many thanks to my good friend Lindsay for our delicious dinner last night consisting of creamed spinach, roasted butternut squash, and baked salmon. Lindsay, not only are you an amazing writer, but wow, you can cook! We loved it.

My brother and his friend Zeita brought us a yummy brown rice medley made with ground beef, spinach, goat cheese, chopped walnuts, and dried cherries. Thanks you guys – so good! I warmed up it for lunch and paired it my sweet potato recipe of the day.

Holiday Veggie Roast

(Inspired by my friend Jamina)

Ingredients:

1 small sweet potato, chopped into small chunks

10 to 12 Brussels sprouts, quartered

2 TBSP coconut oil

1/2 inch chopped ginger

1 tsp vanilla

generous sprinkling of cinnamon

Directions:

Pre-heat oven to 425℉. Place veggies in a greased baking dish. Melt coconut oil and then stir together with vanilla, cinnamon, and ginger. Drizzle over veggies and stir to coat. Roast in oven for 45 minutes, stirring once or twice throughout baking.

Jamina, I loved this recipe! Thanks so much for sharing! Forgot to add the chopped pecans, but next time for sure.

Have you started your holiday decorating? I’ve got everything up but the tree, and we’re hopefully picking ours up later today. Can’t wait – nothing like the smell of a real Christmas tree!

Too funny. I love that sleeper – so warm and cozy and with feet. We’ve got so many sleepers without feet, and seriously, why do they even bother making infant socks? I cannot keep them on Summer’s feet for more than 5 minutes! :)

I think dogs are naturally intrigued by babies. When my brother was born my dog would not leave his side either! We have so many cute baby & dog pictures! :-)

Our cat is the same way with our baby! He even sleeps under her bassinet.

My husband is also the same way and put our Noel letters up to spell “Leon” instead, it must be a guy thing :)

Thanks so much for the sleeper. Summer wears it all the time – so warm and cozy, and I love that it has feet. She has so many sleepers without, feet, and it’s impossible to keep socks on her – she has them kicked off immediately. :)

I laughed at the Leon… ;) my dad, an engineer, somehow has a lighted sign from the software co. NOVELL … and threatens to change it to NOEL each holiday… he lives high on a hill, and I know one day I’m going to drive up there and see a bright Noel on his property… ;)

Such a cute pic of Einstein and Summer! She’s one of the “pack” now!

I love the combo of roasted sweet taters and brussels. I usually season them with garlic and or smoked paprika (my new love), but I’ve never thought about ginger and cinnamon! Duh!

I was going to put up my decorations today, but I guess I’m taking a cue from the weather and being lazy. I did buy a little 4 foot pre-lit tree (hate messing with lights) at Wal-Mart yesterday. No need for a big tree for just little ol’ me! But I do have a lot of other decorations to go with it. Every year I forget what all I have until I get it out! I’ll save it for tomorrow when I’m not feeling like a bum! ;)

Aw, that’s so great how loyal Einstein is to Summer. I’m sure that must have been a bit of a concern with the dogs and the new baby… A cousin of mine had to find a new home for her dog when she and her husband had their baby because their dog didn’t react well. Glad to hear it’s so good with Eintstein!

Sweet Heather, glad your enjoying your Saturday thus far with Christmas festives, and of course, Summer, CD and the dogs :)
Is that bad I don’t get your joke? Haha, I guess I’m a bit slow in the whole joke area! Despite, your decor looks so cute thus far.
Oh, and I made a really yummy harvest, veggie roast recently, too. Added chopped walnut, beets, brussel sprouts, coconut oil, onions, and apple. So yummy. I’m SO adding sweet potatoes next time, good call!

CD switches the “NOEL” to read “LEON” every year. :)

And next time I make a veggie roast, I should add apples and onions. Sounds delicious – if only I had more Santa Cruz apples! Enjoy some for me. :)

Okay, Summer + Einstein = a match made in heaven! I love how some dogs just take to babies, and even protect them like they are a “pup” in the litter.

That hash sounds awesome. With the exception of my birthday, I haven’t had brussel sprouts yet this winter! I need to get on that.

That’s so nice that you have friends bringing you dinners! I hope it’s giving you a chance to rest and focus on your new member of the family. TOO cute that your dog is protective of her – dogs are amazing creatures.
My family decorated our tree and house last weekend while we were all home, it’s a big tradition!

Yes, the dinners have been so helpful. We have people bringing us food about 3 nights a week for another 2 weeks. I’m getting spoiled!

HAHA! on the re-arrangement of NOEL and that picture of Einstein with Summer is precious! Gosh, she is so cute and has a friend already:)

I wish we had all our Christmas decorations completed, but we’re just now getting started. Last summer we gave my in-laws all our Fall/Winter decorations since they have a huge basement and storage for us is scarce and totally forgot to get it back when we visited them in OH for Thanksgiving- DOH! We’re getting all our Christmas decorations on Monday, though, since my MIL will be an hour away. Can’t wait for our home to feel more Christmas-y. At least there is snow on the ground, though:)

What a sweet picture! (not the joke, ha ha!) Glad to hear the pups have taken Summer under their wing…errr…paw. So much love going on with folks bringing you meals, and they all look amazing! (our XO brought us food last night so we could just focus on Samuel being home from the hospital and getting better, it was amazing too!)

And this whole series on sweet potatoes…can’t wait to get back in the kitchen!

Nah, Einstein just likes to ham it up for the camera…Radley? Not so much. She’s usually running around like crazy and won’t ever sit still, and no, will never get sick of sweet potatoes. Never ever! :)

Haha! My dog does the exact same thing! With each baby (I have 5 kids), he was like a doggy bodyguard. If we went walking he would get in between the stroller and any dog or person that approached.

I miss pajamas with feet. In my sparsely heated home, they would serve a practical purpose as well as providing me with a hit of nostalgia.
Dogs make wonderful babysitters, methinks – it’s pretty adorable that Einstein has taken so readily to the wee one. Man’s best friend be darned.

Holiday veggie sounds delicious! CD is too funny but my BF does the same jokes year after year too and now I am not thinking they are as funny anymore ;) LOL But he still does… oh boys, haha!

Our sister’s dog never leaves our baby niece’s side either, I think it is so cute when dogs watch over little babies :) SO CUTE!! Sending lots of love!

The foods looks yummy! Ive seen creamed spinach and generally it looks so overcooked and brown. Bleh! But this spinach looks so green and yummy! What spinach is it and can we have the recipe? :D Summer is so adorable and I’m glad she is here to celebrate her 1st Christmas!

Here is the recipe for the creamed spinach. Enjoy! :)

here’s the recipe:( i used real cream as I think whole foods are best in taste as well as quality and make sure to use “good” cheeses that are fresh as well..
you can leave out tofu if you like…

Ingredients

1 tablespoon butter
1 tablespoon olive oil/or coconut butter
1 small sweet yellow onion, chopped
2 cloves garlic, minced
2 pounds fresh spinach, washed and chopped
1 (12 ounce) package firm tofu
1/2 cup whipping cream,milk or soy milk
1 cup Parmesan or Asiago cheese
garlic powder to taste
salt and pepper to taste
Directions

Heat butter and olive oil in a large skillet over medium heat. Stir in onion and garlic; cook until soft and translucent, but not brown. Add spinach; cook, stirring frequently, until wilted.
Place tofu, milk, cheese, garlic powder, salt, and pepper in a blender, and puree until smooth.
Stir pureed tofu into spinach. Cook until warmed through. Adjust seasonings, if desired, and serve.

I would just like to say a word of caution about the dog. My parents had a dog when my older brother was born. The dog loved to be around my brother, but then mysteriously my parents were finding little scratches and nip marks on my brother. Then they witnessed the dog being too rough with the baby, and had to send him away. Seeing the dog so close reminds me of this. I should hope this isn’t happening, but this is just one family experience shared :)

The roast looks great! Baked veggies are the best thing to have during this cold time of year.
I was looking at your sweet potato meatballs recipe in your previous post and wondering – do you think it’s possible to veganize them using tofu instead of beef? I think I will try. It looks really good. :)

It’s worth a try, but tempeh might work better. I used to make tempeh balls all the time, and the texture was much better than tofu. Good luck if you try it. :)

That CD,.. such a hoot!! Hey? I’ve been meaning to ask.. did you rescue your puppy dogs??? I recently learned that there are more black dogs in shelters than all other colors combined.. evidently people don’t want black dogs cuz they’re not as photogenic (?) or some other stupid reason.. ha! They should see that precious precious picture of Einstein and Summer!! (I also have a black doggie named Lucy)…

I’ve heard the same thing about black dogs – so sad as I think they’re the best! Yes, both of our are rescues. Einstein was left in a box at the door of a local donut shop, and Radley’s entire litter, mama included, was abandoned at the door of a vet. Love those pups – sweetest dogs ever. It’s like they’re so grateful to us for taking them in and loving them. :)
