Not My Fault

by HEAB on December 15, 2010

Hello my almond butter loving friends. If you're new to HEAB, you may like to subscribe to my RSS feed or receive my posts via email. Thanks for reading!

Yesterday I made a new oatie

IMG_6853.JPG

Butterscotch Oaties

I blame Averie and Reader Carolyn. Both of them have been baking with butterscotch chips lately, and I have butterscotch brain.

Inspired by my Mom’s Oatmeal Scotchies…

Ingredients:

1 cup rolled oats

1/2 cup softened butter

1/2 cup canned pumpkin

1/2 cup unsweetened shredded coconut

1/2 cup chopped almonds

1/2 cup butterscotch chips

1 tsp vanilla

pinch of salt

Directions:

Pre-heat oven to 325℉. Combine all ingredients and refrigerate for at least 15 minutes. Roll into balls and place on a parchment or foil lined baking sheet. Bake for 11 minutes. These are so good! Feel free to add additional sweetener – for me, the butterscotch chips make them sweet enough.

The new oatie recipe inspired my breakfast this morning…

IMG_6857.JPG

Butterscotch Oatmeal

My bowl consisted of rolled oats, coconut, and butterscotch chips. Oh, and there was some cinnamon in there as well. I love adding any kind of chips to oats. Oatmeal plus blobs of melted chocolate or butterscotch makes me happy. :)

Several of you have requested more pics of Summer. Looks like we have a little football fan on our hands…

she is SO cute!!

chocolate-covered katie December 15, 2010 at 11:59 am

Yeesh, now I have a huge craving!
I wonder if there’s such a thing as vegan butterscotch chips…

Also, Summer is a cutie patootie!!!!

chocolate-covered katie December 15, 2010 at 12:00 pm

Oh, but I just gotta say… lol does anyone else think it looks like she’s missing the lower half of her body in the second photo? hehehehe it’s like one of those optical illusions. My uncle used to do it with his thumb. The disappearing thumb trick :) . Ok, I’ll stop being weird now!

Baking 'n' Books December 15, 2010 at 12:35 pm

I thought the same thing! So maybe were both weird? ;)

HEAB, I recently did a twist on your Kermit Mufifns – Green for the Grinch of course ;)
http://bakingnbooks.wordpress.com/2010/12/15/green-like-the-grinch-muffins/

Samantha Angela @ Bikini Birthday December 15, 2010 at 12:36 pm

Totally. When I first saw the picture I thought “WTF??” I had to do a double take.

chocolate-covered katie December 15, 2010 at 3:15 pm

Haha but she’s the CUTEST 1/2 baby I ever did see :) .

HEAB December 15, 2010 at 4:51 pm

Katie,
Haha – I didn’t notice that. She fell asleep strapped into my boppy pillow. It does look like half her body is missing – too funny. :)

Deb (SmoothieGirlEatsToo) December 17, 2010 at 6:08 pm

With a face like that, who needs a bottom half. Those are over-rated anyway! ;-)

Felicia (a taste of health with balance) December 15, 2010 at 12:04 pm

She is precious!! and just so you know, there will be multiple batches made of your traditional maple nut oaties for Christmas this year… they went instantly on thanksgiving!!

HEAB December 15, 2010 at 4:54 pm

Felicia,
So glad they were a hit! :)

Erica December 15, 2010 at 12:20 pm

Averie’s treats always make me hungry. Love the look of the new oaties. And how cute is your little pumpkin????

HEAB December 15, 2010 at 4:54 pm

Erica,
I must admit, she’s pretty darn cute. ;)

Pure2raw Twins December 15, 2010 at 12:21 pm

She is sooooooo CUTE!! Love the bears outfit! Too cute!!

Amalfi Girl (eatrunhavefun) December 15, 2010 at 12:21 pm

Brilliant! Why did I never before think to treat my oatmeal like cookie batter? This situation must be rectified immediately. Thank you!
PS received milk frother today. How long do you froth to get whipped cream?

HEAB December 15, 2010 at 4:55 pm

Amalfi,
Yes, cookie batter oatmeal is definitely the way to go…perhaps topped with a little whipped cream? ;) Not sure how long it takes to froth – less than a minute maybe? Not very long at all. Enjoy!

Amalfi Girl (EatRunHaveFun!) December 15, 2010 at 5:53 pm

Yes, whipped cream is always a welcome addition. (Have you tried it on straight vanilla almond butter? Heaven!)

BTW, I posted about the milk frother (and, therefore, YOU, since you are the only reason I even knew it existed!) on my blog under the “Know Thyself” heading. Thanks again for the great tip!

VeggieGirl December 15, 2010 at 12:21 pm

Holy butterscotch goodness!

And holy cute Summer :)

Abby @ Have Dental Floss, Will Travel December 15, 2010 at 12:22 pm

Sorry about the tough Bears loss last weekend :)

HEAB December 15, 2010 at 4:56 pm

Abby,
Yeah, Summer peed on her outfit in protest of the Bears performance. ;)

Abby @ Have Dental Floss, Will Travel December 15, 2010 at 7:12 pm

Brent’s a Pats fan, so he was on Cloud Nine Sunday… kind of balanced out the sentiments in Philly a couple weeks ago, when your Bears crushed the Eagles!

melissa @ the delicate place December 15, 2010 at 12:23 pm

i’m thinking of re-introducing gluten free rolled oats into my diet for my bad tummy days. the soluble fiber is just what i need and the oats are very comforting. this recipe looks divine! lol i love her hair!

HEAB December 15, 2010 at 4:57 pm

Melissa,
I think that sounds like a good plan. They make gluten free oat bran as well, and I’m not sure, but I think it has a little more soluble fiber.

Christin@purplebirdblog December 15, 2010 at 12:23 pm

Hell yes, oaties!! Butterscotch chips are so sweet, so I think that would be plenty of sweetness for me too!

I love her giraffe blankie!

Sarena (The Non-Dairy Queen) December 15, 2010 at 12:24 pm

Ok, I swear I see you in that last picture of her! She is just so darn cute! The oats…YUM! Seriously, everything is better with little morsels of goodness mixed in!

Amy December 15, 2010 at 1:22 pm

I agree! She looks just like you!

HEAB December 15, 2010 at 4:58 pm

Amy, Really? I can’t see it, but thank you. :)

Healthy Chocoholic December 15, 2010 at 12:25 pm

Awwww Summer is soo adorable!!!!!
Those oaties look wonderful, I swear, my list of things to make is growing every day! =D I’ll still be baking things off of it this time next year!

HEAB December 15, 2010 at 4:59 pm

Healthy Choc,
I’m the same way…I have way too many recipes bookmarked. Don’t think I’ll ever get around to making them all as I keep making oaties. There are just too many possibilities to explore. :)

Heather (Perspective Is Everything) December 15, 2010 at 12:28 pm

It’s amazing how you can be totally stuffed and not even remotely hungry, but see a picture of butterscotch coconut oats and suddenly feel famished and have mad cravings!!
dangit that looks good.
and summer is so precious. but, the Bears? who’s responsible for that?? ;)

HEAB December 15, 2010 at 5:02 pm

Heather,
CD is the Bears fan, and I’m more of Titans girl. ;)

Anna @ Newlywed, Newly Veg December 15, 2010 at 12:28 pm

Awww, the pictures of Summer are so cute! I love the funny positions babies get into when they sleep :-)

Butterscotch chips are the BOMB, every which way!

Tulika December 15, 2010 at 12:33 pm

OhEmGee…Summer!!! So CUTE!

Amy B @ Second City Randomness December 15, 2010 at 12:34 pm

As a Chicago gal, I 100% approve of Summer’s enthusiasm towards the Bears. LOVE it. :)

HEAB December 15, 2010 at 5:02 pm

Amy B,
CD grew up in Chicago. There will be lots of Bears, Bulls, and Cubs outfits for Summer. :)

Kristina @ spabettie December 15, 2010 at 12:36 pm

okay, so I won’t blame YOU when I make these later… and add butterscotch to MY oats, or eat them by the handful. :D

Summer is adorable, thanks for sharing more photos! she is serious about that touchdown! <3

HEAB December 15, 2010 at 5:03 pm

Kristina,
It’s impossible to add butterscotch chips to anything and not eat a handful…or 5. ;)

Bethany Taylor Greenoe December 15, 2010 at 12:39 pm

I’m definitely gonna try your oatie recipe b/c I’m a HUGE fan of butterscotch — they look fantastic. Summer is so adorable in her football outfit, but seriously, girl – get that baby some AUBURN duds! War Eagle!

HEAB December 15, 2010 at 5:04 pm

Bethany,
Hi! You will love those Oaties. I swear I could eat the entire batch in one sitting. Hope all is well with you and your two little ones – they’re gorgeous by the way. :) And yes, need to get Summer some Auburn gear. I am a horrible alum.

Holly @ couchpotatoathlete December 15, 2010 at 12:41 pm

Heather she is so beautiful — and I love how she sleeps with her arms up — how hilarious!

I have a Butterscotch brain too :)

kathleen December 15, 2010 at 12:44 pm

go bears!

are y’all chicago fans? my father in law coaches for the bears so i am a HUGE fan as well!! love the onesie!

erinbee. December 15, 2010 at 3:36 pm

thats the kind of family id want to marry into. bear down!

HEAB December 15, 2010 at 5:05 pm

Kathleen,
Really? How cool! CD grew up in Chicago and is a HUGE Bears, Bulls, and Cubs fan. :)

kathleen December 15, 2010 at 7:38 pm

Yes! We are huge Chicago sports fans as well, but partial to the Bears of course :) You will have to let me know if you are ever in Chicago.

Ida December 15, 2010 at 12:51 pm

Summer!! She’s adorable. So funny that she likes to sleep that way.

Averie (LoveVeggiesandYoga) December 15, 2010 at 12:53 pm

Thanks for the shoutout :)

Ok so it’s soooo ironic I was JUST going to email you b/c I was wondering if you had a special recipe you wanted me to feature on my site b/c I was doing a post of friends’ recipes I want to make and with yours, I couldnt pick, so was going to email you and have you pick..but by gosh, I think that I would be pickin’ these new oaties!

Another weird twist of irony…I JUST Emailed my mother 2 days ago for my grandma’s recipes for Scotcheroos, b/c my grandma made them unlike anything I’ve seen anywhere online. And she sent me the recipe yesterday.

Too ironic we were both thing about our mom/grandma’s butterscotchey scotcheroo type recipes.

Final twist of irony, I think I told you that 2 days after Skylar was born the Bears were in the Superbowl…and Scott is a HUGE HUGE HUGE Bears fan. And my lil precious was dressed up in a Bears onesie. All barely 5-6 pounds of her back then! As I was pumping and nursing..oh..the memories. LOL

Summer is beautiful!!!!!! Just like her mama :)

HEAB December 15, 2010 at 5:08 pm

Averie,
Haha – great minds think alike. Definitely feature the Butterscotch oaties. OMG – so good!!! Why has it been so long since I’ve had butterscotch chips?!? Oh, and I would love your grandma’s recipe. Are you going to post it?

Polkadotmommy December 15, 2010 at 1:02 pm

The oaties and oatmeal look amazing but the baby stole the post. :-) she’s precious… Thanks for sharing!

chelsey @ clean eating chelsey December 15, 2010 at 1:07 pm

Have you ever lived in Chicago? I’ve never known anyone outside of Chicago to enjoy the Bears! :)

HEAB December 15, 2010 at 9:29 pm

Chelsey,
CD grew up in Oak Brook. Loves the Bears, Bulls, and Cubs. :)

Dea December 15, 2010 at 1:09 pm

I love her hair! Kinda jealous, we’ve never had such fabulous hair around here! Also I think she’s really starting to look like you. How are your baby pictures in comparison to hers?

HEAB December 15, 2010 at 9:31 pm

Dea,
I had thick black hair just like Summer. She does look like me as a baby, but I think she looks even more like my younger brother did.

Katie December 15, 2010 at 1:16 pm

Summer is so cute! And, sometime soon I am going to get around to making your oaties. I’ve been so inspired by your meals lately. I am going to Whole Foods tomorrow and I will be buying some grass-fed beef! I reallly want a hamburger and some kale stir fry. :)

HEAB December 15, 2010 at 9:31 pm

Thank Katie. Hope you enjoy a good burger soon!

lindsay December 15, 2010 at 1:24 pm

oh no, you just combined my 2 loves. This could be dangerous. Summers touchdown look is priceless!
LC

Heather December 15, 2010 at 1:42 pm

She’s so freaking cute I can’t stand it! Lovin’ her touchdown pose!

Omg, when you told me you made butterscotch oaties, I thought yum…now that I’ve seen the pics I’m like, “Holy freaking butterscotch!!” I am practically drooling over here! I need to adapt the recipe to make just one…maybe two! ;)

Ana December 15, 2010 at 1:47 pm

Cute, cute, cute!! And I think Summer looks just like you on the second picture Heather!! (the one in the yellow outfit) It is your mouth right there!
Ana

HEAB December 15, 2010 at 9:32 pm

Ana,
I know – CD keeps telling me Summer has my mouth. :)

Diana (Soap & Chocolate) December 15, 2010 at 1:49 pm

Haha, the “touchdown” cracked me up. Now see if you can get her to do “safe.” :)

Annette December 15, 2010 at 1:53 pm

She is adorable- I love that peaceful face :)

Nicole December 15, 2010 at 2:01 pm

Heather…Oh my goodness…that touchdown picture..I can’t even put into words the cuteness that is involved. SOOOO cute. She actually looks a lot like you in that pic too. GORGEOUS!! xoxoxoxoxo

Marina December 15, 2010 at 2:16 pm

She is so wonderful. I swear, babies and animals sleeping are the most amazing and soothing images ever!
I would so like to have butterscotch chips to bake with, or top my oatmeal with. But not gonna happen, unless I figure a way to make them or get them on the ebay :D

Courtney (greeneyedrunner) December 15, 2010 at 2:21 pm

I love butterscotch! I agree, little melty blobs against the warm oats just add something special!

Summer is such a doll :)

Emily (Big Life, Little Blog) December 15, 2010 at 2:27 pm

Where do you get your unsweetened shredded coconut? Whole Foods? What aisle is it in!? I get overwhelmed at WF and end up not being able to find anything ;)

HEAB December 15, 2010 at 9:34 pm

Emily,
I sometimes buy my unsweetened shredded coconut at Whole Foods – mine sells it in both the bulk bins and the baking aisle. However, the brand I used in this post was from Harris Teeter, a grocery store here in Nashville. I bought the store brand – it’s sold in the baking aisle.

Jill December 15, 2010 at 2:46 pm

OMG, LOVE the arms. Definitely my fave pic of Summer yet!

And seeing butterscotch has totally made me rethink my Christmas cookie line-up. It was going to be chocolate chip-walnut cookies, snickerdoodles (which I have never made but feel compelled to try) and nanaimo bars (http://www.nanaimo.ca/EN/main/visitors/NanaimoBars.html) but I may have to switch it up and put something butterscotch in there. My main goal is to actually distribute the cookies prior to eating an obscene amount of them :-)

HEAB December 15, 2010 at 9:36 pm

Jill,
I don’t think I’ve ever had a Nanaimo Bar – but they sound delicious. Chocolate, graham crackers, and coconut – you really can’t go wrong with that combo.
P.S. I think some banana butterscotch bread would taste amazing. :)

Rebecca @ How the Cookies Crumble December 15, 2010 at 2:48 pm

Rachel December 15, 2010 at 3:02 pm

Awwwwwww, she looks so much like you. Next week she’ll probably look like CD. She’s getting big, awesome! Good job Mom & Dad!

Mary @ Bites and Bliss December 15, 2010 at 3:14 pm

Yes!! Buttserscotch oaties!! :D Those have to be amazing.

hahaha! That picture of Summer doing the T-down is so adorable. She makes the butest ref!

Natalie @ cinnamonbums December 15, 2010 at 4:03 pm

summer is soooo beautiful! i love that head of black hair!!!!

(and i like that the butterscotch oaties are yellow! my favorite color!)

btw, thanks for the birthday wishes on facebook! so sweet of you

HEAB December 15, 2010 at 9:37 pm

Natalie,
You’re welcome – I hope you had a good day! I think you should celebrate your b-day with some yellow oaties. :)

Dorry December 15, 2010 at 4:07 pm

so, so, so cute! I’m not sure why but I never really eat anything with butterscotch. It’s been so long, I think I should try it out and see if I have a new love for it.

Katy (The Singing Runner) December 15, 2010 at 4:08 pm

Mmmmmm I love the recipes you post! They always make my mouth water!

Summer is adorable! And I love the blanket in the second picture! A giraffe is my sorority’s mascot so I’m a bit obsessed!

Lee @ College Foodie Finds December 15, 2010 at 4:10 pm

Ann Claire December 15, 2010 at 4:28 pm

Yum! I’ve actually been wanting some butterscotch chips lately too. I made your original oaties and loved them so I”m sure I”d love these too! I must try them. Summer is so cute!

sarah December 15, 2010 at 5:00 pm

Oohhh, Summer’s hair = awesome!
Thanks for reminding me how good oatmeal is, and you got me loving oat bran–it’s my new fav. Gonna add some chocolate chips next time!

HEAB December 15, 2010 at 9:38 pm

Sarah,
Oat bran is the best – my favorite hot cereal, and it’s even better with melty ooey-gooey chocolate chips!

Little Bookworm December 15, 2010 at 5:06 pm

Great sounding Oaties recipe! :) Cute photos of Summer as well.

Corey @ the runners cookie December 15, 2010 at 6:42 pm

What a lovely mohawk Summer’s sporting! :) I recently made pumpkin butterscotch cookies – they were addicting. Adding coconut is a fabulous idea!

HEAB December 15, 2010 at 9:39 pm

Corey,
Yes, I’m officially addicted to the oaties. Summer had a mohawk all week – I could not get her hair to stay down. So funny.

Bekah December 15, 2010 at 8:04 pm

Heabie!! Oh how I miss you. Great post, great little girl, and great new recipe. Been meaning to make some oaties to send some of my fellow culinary school buddies. So busy though! Speaking of.. would you send me your address dear Heather? I want to send you a little something something. ;)

Jessica in NH December 15, 2010 at 8:14 pm

HEAB, when I pulled up your post today, I somewhat gasped, I am surprised you are using butterscotch chips, you eat so clean and butterscotch chips seem so far from it. Unless you are using an all natural and organic chip that it is unknown to me, if so please tell where I can find them?!

Pics are adorable, she is changing everyday! :-)

HEAB December 15, 2010 at 9:41 pm

Jessica,
I looked for some decent butterscotch chips, but couldn’t find any. So, I gave into my craving and just bought Nestle. The ingredients are less than stellar, but I have to admit…they’re really yummy. That being said, I’m on the lookout for some better ones. If I find any, I’ll let you know.

Annie@stronghealthyfit December 15, 2010 at 8:33 pm

What a beautiful baby! I always make my husband come over to the computer to see the pics of Summer :-)

HEAB December 15, 2010 at 9:42 pm

Aww, thanks Annie. :)

:D

Charlotte December 16, 2010 at 11:47 am

I would eat a dirty diaper if it had butterscotch chips in it! Good thing your oaties look a lot yummier than a diaper;) And Summer is so so so so precious! Do you just want to kiss her all the time? Even now I want to sneak into Jelly Bean’s room and kiss her little button nose.

HEAB December 16, 2010 at 12:20 pm

Charlotte,
Really, b/c I though the oaties kind of reminded me of breast milk poo. It’s so yellow! ;) And yes, I want to smooch her all the time. Can’t keep my hands or lips off that baby!

Kari December 16, 2010 at 12:00 pm

Summer is so cute, and getting so big!!!! Good, good things!

I have the same nursing pillow. It saved my life once in an Indiana Jones-like experience.

Keep on keepin’ on, Heather. You’re doing GREAT! No one understands sacrifice like a mom giving up food to not irritate baby. My heart goes out to you because I know. It may be for the better. Chocolate is a stimulant (caffeine). I ate chicken breast seasoned only with pink sea salt, avocados, plain lettuce, and potatoes for months while we were figuring out what was irritating Wren. It turned out to be dairy products and anything processed in a large amount, ie sour dough pretzels. Lol.

HEAB December 16, 2010 at 12:19 pm

Kari,
Thanks so much for the encouragement. I haven’t noticed any side-effects from chocolate, but broccoli on the other hand…wow, that was bad. Poor Summer – I felt so bad. No more broccoli for me!

The Boppy! It’s so versatile. It’s great for nursing, and I prop Summer up in it to sleep when she’s congested. Love that thing.

Krista (kristastes) December 16, 2010 at 1:45 pm

Those pictures are darling!! :)

sara December 16, 2010 at 1:45 pm

those oaties look amazing! butterscotch and pumpkin, what a tasty combination. summer is adorable, congratulations!

Monica December 16, 2010 at 5:18 pm

Heather your blog was love at first site for me. Then your recipes and the frequency that they held on my weekly meal plans really progressed the relationship. However, the fact that you are a Bears fan is just pure old amazingness!

HEAB December 16, 2010 at 7:14 pm

Monica,
Hehe, yes, we are Bears fans. CD was born and raised in Chicago and loves the Bears, Bulls, & Cubs. :)

GirlonRaw December 17, 2010 at 10:08 am

You had me at coconut. Well ok, and butterscotch :) Summer is a real doll and thank you for your very thoughtful response about getting rest etc the other day. I really need to make the most of it before he arrives, right ;) For some reason I am winding up rather than winding down though which is weird!

HEAB December 17, 2010 at 2:55 pm

GirlonRaw,
I did the same thing – I was so freaked out that I wouldn’t have everything ready before Summer arrived, but it all fell into place just as it will for you. :)

Hi Heather! What kind of butterscotch chips do you use? The only kind that I find are all made with hydrogenated oils. Thanks!

Lisa

HEAB December 19, 2010 at 8:11 pm

Hey Lisa,
I broke down and bought Nestle. I looked for butterscotch chips with better ingredients, but I can’t find any. :(
