Yesterday I made a new oatie…
I blame Averie and Reader Carolyn. Both of them have been baking with butterscotch chips lately, and I have butterscotch brain.
Inspired by my Mom’s Oatmeal Scotchies…
1 cup rolled oats
1/2 cup softened butter
1/2 cup canned pumpkin
1/2 cup unsweetened shredded coconut
1/2 cup chopped almonds
1/2 cup butterscotch chips
1 tsp vanilla
pinch of salt
Pre-heat oven to 325℉. Combine all ingredients and refrigerate for at least 15 minutes. Roll into balls and place on a parchment or foil lined baking sheet. Bake for 11 minutes. These are so good! Feel free to add additional sweetener – for me, the butterscotch chips make them sweet enough.
The new oatie recipe inspired my breakfast this morning…
My bowl consisted of rolled oats, coconut, and butterscotch chips. Oh, and there was some cinnamon in there as well. I love adding any kind of chips to oats. Oatmeal plus blobs of melted chocolate or butterscotch makes me happy. 🙂
