Yesterday I made a new oatie…

Butterscotch Oaties
I blame Averie and Reader Carolyn. Both of them have been baking with butterscotch chips lately, and I have butterscotch brain.
Inspired by my Mom’s Oatmeal Scotchies…
Ingredients:
1 cup rolled oats
1/2 cup softened butter
1/2 cup canned pumpkin
1/2 cup unsweetened shredded coconut
1/2 cup chopped almonds
1/2 cup butterscotch chips
1 tsp vanilla
pinch of salt
Directions:
Pre-heat oven to 325℉. Combine all ingredients and refrigerate for at least 15 minutes. Roll into balls and place on a parchment or foil lined baking sheet. Bake for 11 minutes. These are so good! Feel free to add additional sweetener – for me, the butterscotch chips make them sweet enough.
The new oatie recipe inspired my breakfast this morning…

Butterscotch Oatmeal
My bowl consisted of rolled oats, coconut, and butterscotch chips. Oh, and there was some cinnamon in there as well. I love adding any kind of chips to oats. Oatmeal plus blobs of melted chocolate or butterscotch makes me happy.

She is precious!! and just so you know, there will be multiple batches made of your traditional maple nut oaties for Christmas this year… they went instantly on thanksgiving!!

Not sure how long it takes to froth – less than a minute maybe? Not very long at all. Enjoy!
Yes, cookie batter oatmeal is definitely the way to go…perhaps topped with a little whipped cream?
Yes, whipped cream is always a welcome addition. (Have you tried it on straight vanilla almond butter? Heaven!)

Yeah, Summer peed on her outfit in protest of the Bears performance.
Brent’s a Pats fan, so he was on Cloud Nine Sunday… kind of balanced out the sentiments in Philly a couple weeks ago, when your Bears crushed the Eagles!
i’m thinking of re-introducing gluten free rolled oats into my diet for my bad tummy days. the soluble fiber is just what i need and the oats are very comforting. this recipe looks divine! lol i love her hair!

I think that sounds like a good plan. They make gluten free oat bran as well, and I’m not sure, but I think it has a little more soluble fiber.
Hell yes, oaties!! Butterscotch chips are so sweet, so I think that would be plenty of sweetness for me too!

I’m the same way…I have way too many recipes bookmarked. Don’t think I’ll ever get around to making them all as I keep making oaties. There are just too many possibilities to explore.
It’s amazing how you can be totally stuffed and not even remotely hungry, but see a picture of butterscotch coconut oats and suddenly feel famished and have mad cravings!!

Ok so it’s soooo ironic I was JUST going to email you b/c I was wondering if you had a special recipe you wanted me to feature on my site b/c I was doing a post of friends’ recipes I want to make and with yours, I couldnt pick, so was going to email you and have you pick..but by gosh, I think that I would be pickin’ these new oaties!
Another weird twist of irony…I JUST Emailed my mother 2 days ago for my grandma’s recipes for Scotcheroos, b/c my grandma made them unlike anything I’ve seen anywhere online. And she sent me the recipe yesterday.
Too ironic we were both thing about our mom/grandma’s butterscotchey scotcheroo type recipes.
Final twist of irony, I think I told you that 2 days after Skylar was born the Bears were in the Superbowl…and Scott is a HUGE HUGE HUGE Bears fan. And my lil precious was dressed up in a Bears onesie. All barely 5-6 pounds of her back then! As I was pumping and nursing..oh..the memories. LOL

I had thick black hair just like Summer. She does look like me as a baby, but I think she looks even more like my younger brother did.

Where do you get your unsweetened shredded coconut? Whole Foods? What aisle is it in!? I get overwhelmed at WF and end up not being able to find anything

I sometimes buy my unsweetened shredded coconut at Whole Foods – mine sells it in both the bulk bins and the baking aisle. However, the brand I used in this post was from Harris Teeter, a grocery store here in Nashville. I bought the store brand – it’s sold in the baking aisle.

And seeing butterscotch has totally made me rethink my Christmas cookie line-up. It was going to be chocolate chip-walnut cookies, snickerdoodles (which I have never made but feel compelled to try) and nanaimo bars (http://www.nanaimo.ca/EN/main/visitors/NanaimoBars.html) but I may have to switch it up and put something butterscotch in there. My main goal is to actually distribute the cookies prior to eating an obscene amount of them

I don’t think I’ve ever had a Nanaimo Bar – but they sound delicious. Chocolate, graham crackers, and coconut – you really can’t go wrong with that combo.
P.S. I think some banana butterscotch bread would taste amazing.

HEAB, when I pulled up your post today, I somewhat gasped, I am surprised you are using butterscotch chips, you eat so clean and butterscotch chips seem so far from it. Unless you are using an all natural and organic chip that it is unknown to me, if so please tell where I can find them?!

I looked for some decent butterscotch chips, but couldn’t find any. So, I gave into my craving and just bought Nestle. The ingredients are less than stellar, but I have to admit…they’re really yummy. That being said, I’m on the lookout for some better ones. If I find any, I’ll let you know.

Keep on keepin’ on, Heather. You’re doing GREAT! No one understands sacrifice like a mom giving up food to not irritate baby. My heart goes out to you because I know. It may be for the better. Chocolate is a stimulant (caffeine). I ate chicken breast seasoned only with pink sea salt, avocados, plain lettuce, and potatoes for months while we were figuring out what was irritating Wren. It turned out to be dairy products and anything processed in a large amount, ie sour dough pretzels. Lol.

The Boppy! It’s so versatile. It’s great for nursing, and I prop Summer up in it to sleep when she’s congested. Love that thing.
