Lights Out

This morning was a bit crazy. Due to bad overnight storms, we were without power from about 1:30 AM until 11 AM. Fun. Thank goodness we have a gas range, and I can light it without electricity. So, we were able to heat water for some instant coffee and tea this morning. Also, the hospital grade breast pump I use does not take batteries, but I do have a car adaptor for it. So I spent a good bit of the morning sitting in the driveway. My apologies to our neighbors…I’d hate to traumatize them anymore as I’m pretty sure I’m already that crazy girl always outside taking pictures of her food. Oh well, a mom’s gotta do what a mom’s gotta do, right?

On top of our power going out, my laptop was misbehaving, and so I took a trip to our local Genius Bar. Oh how I love my Macbook, and I have only ever had good experiences at the Apple Store. They fixed the problem, and I was out of there in 10 minutes and back home where CD was waiting to join Summer and me for lunch. I whipped up a quick curried chicken salad and served it atop a bed of spinach.



Curried Chicken Salad


  • 1 baked chicken breast, chopped
  • 1/4 cup plain yogurt (I used goat’s milk)
  • 1/4 small onion
  • 1/2 TBSP curry powder
  • 1 TBSP fresh lime juice
  • 1 gram stevia powder or 1/2 packet
  • 1/4 tsp dried ginger
  • salt and pepper to taste
  • 2 TBSP chopped nuts (I used pecans)
  • 2 TBSP raisins


  • Combine all ingredients except raisins and nuts in food processor.
  • After processing, stir in raisins and nuts.

Smoothie Girl Deb’s Protein Fudge Muffin

Now, I have tried several of these microwave protein muffin recipes floating around, and Deb’s has been my favorite thus far. It’s huge and not dry at all. Love it Deb! I used goat milk yogurt instead of pumpkin and added 1/2 tsp of vanilla. YUM!

Hi Heabie my friend! Sooo glad you are enjoying the muffin- I hit lucky on that one for sure. did I mention to you that the Hersheys special dark is the best cocoa (or any dark one?) Fitnissista used it and also liked it but it didn’t look dark so I told her about it. I have been using carob as an experiment and DEFINITELY stick with the dark cocoa! it’s far better! 🙂 Miss you my friend!

Hershey’s Special Dark is my favorite!!! A friend pointed out the higher sodium content when compared to other cocoa powders – wonder if that is what makes it so good? Definitely the BEST, and I love how it makes everything look super chocolaty. 🙂

Oh, I love making curried chicken salad! My go-to “recipe” (meaning I just throw it together and measure nothing) has about the same ingredients only with the addition of celery because I love the crunch!

It seems like a lot of people lost power and/or had tree damage around here too. To tell ya the truth, after my butt-kicking workout earlier that day, I was dead to the world come 10:00. I didn’t hear a thing!

I just bookmarked Deb’s recipe! That muffin looks amazing! I can’t discriminate…I’ve never met a muffin I didn’t like! 😉

Thanks for the muffin recipe Heather and Deb! I had a can of sweet potato puree in my pantry, so I made the non-chocolate version for breakfast this morning with almond butter on top. SO good!

I have been making Deb’s cake almost every night! It is so good. I can’t make it quite like she does (she mailed me some) but I am getting closer. I think it is altitude. Looks like yours turns out just as great as hers! Sorry about the power issue, that always blows.

Lauren’s Peanut Butter Chocolate Lava Cake for One i to die for. I realize it’s not for the microwave..but it’s SO worth the wait. Mmmm I’ve also successfully subbed mashed banana for the apple sauce or yogurt. I might also try pumpkin (I rarely have apple sauce or yogurt on hand, unfortunately).

First off, I really only like the Baker’s unsweetened. The other brands, especially the more expensive ones are usually too bitter for me. I got used to it by dipping it in almond butter and surprised myself when I started liking it all on its own. Took some getting used to, but now I’m obsessed!

You didn’t say the # of servings in the recipe – but I assume it’s for one right?

I have to say I agree, I love Deb’s Protein Muffin recipe the best ! I have made it a couple times!

Goat’s milk yogurt? I need to find some of that! That’s so funny that you had to pump in your driveway. Does anyone neighbors ask you why you always photograph your food?

Goat’s milk yogurt is usually the only kind I buy, and if you live near a Trader Joe’s, their brand name is the cheapest I can find. Love it!

Our neighbors that we know never see me take pics of my food, but our house backs up to some condos, and they are the ones that can see over the fence into our backyard where I take the photos. We don’t know any of them, and I often wonder what they think of me. Hehe.

oh my goodness! Glad y’all are ok after the crazy storms. You must have felt pretty hilarious sitting in your car pumping away :). That chicken salad looks very yummy, as does the protein muffin. I haven’t tried any muffin for 1 recipes, but now I’m intrigued. Hope you guys are having a good night (with power!)

I guess while I was out of town this past weekend there was some pretty nasty storms here too. I am glad you are ok!!! And MACs are the best! Lori still has a really old PC she really wants a MAC but do not have the money right now hopefully one day 😉

As always, your recipe is going right to the top of my ‘to make’ list! I’ve been trying for years to find a replica of Whole Food’s Cranberry Curried Chicken Salad. This sounds awfully similar. Yum!

That chicken salad was so easy. Just swap some cranberries for the raisin, and I think you’ll be a happy girl. 🙂

Genius Bar….10 minutes…that’s awesome!

Pumping…I used to use a battery pack with my Symphony on airplanes, traveling, etc (I rigged the medela pump in style pack to go with the symphony) and it worked but what a battery suck!! Like $10 worth of batteries every hour of pumping. You did better to use the car adapter 🙂

We were without power due to the San Diego fires when Skylar was about 6 mos old…for days and days. It was the most horrific thing ever to have a small baby, no power, and yeah, I hear you on pumping without power!

I have the Pump In Style, but yeah, such a batter suck. Only use it when I really need to. Love that car adaptor! Can’t imagine days and days without power. At least the weather in San Diego stays nice, and you didn’t have to worry about not having heat or air.

That salad looks so yummy! I love Curry but am not great at cooking it at all. And honestly, I hate the smell it leaves in my house for like hours upon hours after cooking it!

I hate power outages, I always find myself doing the stupidest things when I KNOW the power is out, example; walking into the laundry room and still flipping on the light switch .. even when I’m holding a flash light, like DUH!

LOL, don’t feel bad, I’m positive we are considered the crazy people in our neighborhood, too! We stay up late or we are up very early because we work at home and for ourselves. Home all. Day. Long– I’m sure they think we’re drug dealers. Pulling into the subdivision with gangsta rap blaring probably doesn’t help disprove the theory, lol!

I have definitely had to pump in my car as well. Though I was sitting outside a local restaurant. The things we do for our kids huh?

I have also noticed that coconut flour makes baked goods more moist. I love it!

My favorite microwave muffin/bread recipe lately is a gluten-free, vegan, breakfast sweet bread: 1/4 cup gluten-free flour, 1 tbsp coconut flour, 1 tbsp tapioca flour, 1/4 tsp baking soda, 1/8 tsp salt, 1/2 cup mashed banana, 1/4 cup coconut milk (more as needed), and 1 tsp sweetener of choice – stir together, taste batter and add more sweetener if desired, then microwave 3 minutes!.

Ugh the storms. They just won’t stop! That stinks about the power, but I too love my gas range since I always have a means for coffee and oats that way. I’ve done chocolate cake in a cup and it is super moist and delicious. I will check out the protein one here since you know I like to find fun ways to get my protein in!

That curried chicken salad looks so yummy and reminds me of my childhood! My mom used to roast a chicken for dinner. Then the next day we would pick the bones and make a curried chicken salad. Soooo good in a pita yumm! 🙂
