Fruit Compote



  • 1 cup fresh or frozen fruit (I like cherries or blueberries)
  • 1 packet stevia
  • 1/8 tsp guar gum
  • splash of water


  • Cook fruit and stevia together on stove-top over low heat and smash with a potato masher.
  • After fruit is heated through, stir in water and guar gum.
  • Allow to cool and thicken.
  • Eat on pancakes with yogurt. :)
