Raw Lemon-Miso Salad




  • 4 to 5 handfuls of raw greens (I like spinach)
  • 2 – 3 summer squash, spiralized or chopped into thin strips
  • 1/2 avocado
  • 1 heaping spoonful of unpasteurized miso paste
  • 1 – 2 cloves raw minced garlic (optional)
  • 1 – 2 TBSP fresh lemon juice
  • 1/2 Stevia packet
  • Salt & Pepper to taste


  • Place everything in a large bowl and massage with hands until creamy.
  • Stir in favorite raw veggies (chopped mushrooms, tomatoes, bell pepper, carrots, jicama, etc.).

Hi Karla,
It is really good – one of my favorite salads to make in the warmer months. This is the miso I always buy: https://www.great-eastern-sun.com/stuff/miso-master-organic-kosher-brown-rice-miso-. I’ve always liked it and therefore never tried many other brands.

Interesting. So you put whatever the wet thing is on your hands and then massage the kale with that? I think your hands would get moisturized as well. 🙂

Hangry, I just throw it all in a bowl and go to town. It wilts the greens. So good!
