Raw Lemon-Miso Salad
- 4 to 5 handfuls of raw greens (I like spinach)
- 2 – 3 summer squash, spiralized or chopped into thin strips
- 1/2 avocado
- 1 heaping spoonful of unpasteurized miso paste
- 1 – 2 cloves raw minced garlic (optional)
- 1 – 2 TBSP fresh lemon juice
- 1/2 Stevia packet
- Salt & Pepper to taste
- Place everything in a large bowl and massage with hands until creamy.
- Stir in favorite raw veggies (chopped mushrooms, tomatoes, bell pepper, carrots, jicama, etc.).
