Raw Lemon-Miso Salad

Many thanks to Trilby Drew for inspiring the wonderful flavors in this recipe.

Ingredients:

  • 4 to 5 handfuls of raw greens (I like spinach)
  • 2 – 3 summer squash, spiralized or chopped into thin strips
  • 1/2 avocado
  • 1 heaping spoonful of unpasteurized miso paste
  • 1 – 2 cloves raw minced garlic (optional)
  • 1 – 2 TBSP fresh lemon juice
  • 1/2 Stevia packet
  • Salt & Pepper to taste

Directions:

  • Place everything in a large bowl and massage with hands until creamy.
  • Stir in favorite raw veggies (chopped mushrooms, tomatoes, bell pepper, carrots, jicama, etc.).
  • Enjoy!

Interesting. So you put whatever the wet thing is on your hands and then massage the kale with that? I think your hands would get moisturized as well. :)

Hangry, I just throw it all in a bowl and go to town. It wilts the greens. So good!
