Raw Pesto Pasta
- 2 – 3 handfuls of raw greens (I prefer spinach)
- 2 zucchini squash, spiralized or chopped into thin strips
- 1/2 avocado
- 1/2 cup minced basil
- 1 – 2 cloves raw minced garlic (optional)
- Juice of 1/2 lemon
- 1/2 Stevia packet
- Salt & Pepper to taste
- Place everything in a large bowl and massage with hands until creamy.
- Stir in favorite raw veggies (chopped fresh or sun dried tomatoes, bell pepper, carrots, etc.).
