Raw Pesto Pasta

Ingredients:

  • 2 – 3 handfuls of raw greens (I prefer spinach)
  • 2 zucchini squash, spiralized or chopped into thin strips
  • 1/2 avocado
  • 1/2 cup minced basil
  • 1 – 2 cloves raw minced garlic (optional)
  • Juice of 1/2 lemon
  • 1/2 Stevia packet
  • Salt & Pepper to taste

Directions:

  • Place everything in a large bowl and massage with hands until creamy.
  • Stir in favorite raw veggies (chopped fresh or sun dried tomatoes, bell pepper, carrots, etc.).
